Now we have diet cheesecakes in the oven on our menu, which will not leave both children and their parents indifferent. We have already prepared traditional cottage cheese pancakes - we fried them in a frying pan in vegetable oil. And not so long ago there were cheesecakes with coconut flakes - also very tasty, filling and fragrant, but again fried in oil.
But we will bake these cottage cheese pancakes in the oven! With all this, there are no fats (both vegetable and animal) in this dish! But there are nuts, a little wheat flour and a small amount of sweet sand. And by adding beaten egg whites, the finished curd cheesecakes turn out to be very fluffy, tender and simply melt in your mouth.

Making a dish step by step:
The recipe for cottage cheese pancakes in the oven includes such products as: cottage cheese (the fat content does not matter - I use 3%), peeled walnuts, chicken eggs, sweet sand and wheat flour. If you wish, you can also add a pinch of vanillin or a teaspoon of vanilla sugar for flavor.
Immediately turn on the oven to heat up (180 degrees), because the preparation will take about 15-20 minutes. You can prepare the dough for cottage cheese pancakes with help. food processor or immersion blender. The main thing is to achieve uniformity and smoothness. You can even knead the dough with a spoon, but then the cottage cheese will have to be rubbed through a fine sieve several times. Place cottage cheese (preferably homemade, of course) into the bowl of a food processor, add sweet sand (vanillin or vanilla sugar if you want) and beat everything until smooth using the Iron Knife attachment.
Then add 3 egg yolks (we’ll put the whites in the refrigerator for now) and 4 tablespoons (without a slide) of wheat flour, which I recommend sifting. Again we punch everything until smooth - about 1-2 minutes.

Now we need to add airiness and lightness to the dough. To do this, we will beat chilled egg whites. First at low mixer speed, and then faster and faster, gradually increasing to the limit. As a result, after 7-8 minutes a fluffy white foam comes out, which holds its shape perfectly. This is called whipping until stiff peaks form.
Add the curd base directly to the whipped whites (although you can do the opposite - it will turn out either way).
Gently mix everything with a spoon or spatula. We do this in the same way as for biscuit dough - in other words, folding from bottom to top, from the center to the edge through the bottom of the bowl.
Now we will put the dough for dietary cheesecakes into molds. Silicone molds for cupcakes or muffins are perfect for this. If you are not convinced of the quality of your own molds, I advise you to lubricate them with refined vegetable oil. If you are sure that nothing will stick, do not lubricate (I have tested ones - high quality). In burgundy molds, baked goods come out with a hole in the center (as in the main photo) - 6 pieces. Fill with dough almost to the brim.
But the orange one is just round washers. Makes 5 cheesecakes.
Bake everything in a previously preheated oven for 20-25 minutes at 180 degrees.
These curd cheesecakes will puff up perfectly in the oven, but after that they will settle slightly - this is normal.
