How do biscuits differ from, say, shortbread cookies? They are similar in some ways (both are dry and crumbly), but the difference, naturally, is in the composition of this ordinary and delicious homemade pastry. The recipe for biscuit cookies does not contain enough fat, they are not so sweet, they are denser, they are considered dietary products (which I cannot agree with) and they are stored even longer than shortbread cookies.

Now I propose to prepare ordinary biscuits at home. In my opinion, it tastes better than store-bought, and you are also 100% convinced that it contains such baked goods. Nowadays, virtually all cookies of this kind are made with the addition of palm oil or margarine, which are rightly considered harmful industrial fats.

You can replace the milk with water, eliminate the vanillin, and reduce the amount of sweet sand. Then this will be an option for the youngest children. From the indicated quantity of goods I get quite a lot of homemade biscuits - 55 pieces (4x4 cm) with a total weight of 220 grams. I wrote 11 servings (5 cookies per serving). If you make them larger, you will literally get about 30 of them. These biscuits are stored for quite a long time in an airtight package and do not lose their crispy properties. Very tasty with milk, coffee or tea.

The biscuit cookie recipe includes the following ingredients: wheat flour (I have the highest grade, but you can partially or completely replace it with first, second grade or even whole grain flour), milk, chicken egg, sweet sand, corn starch (use potato starch as a candidate), refined vegetable (in my case sunflower) oil, baking powder, salt and vanillin.

You can immediately turn on the oven to heat up (180 degrees), because the biscuit cookie dough is made very quickly. In a separate bowl, combine wheat flour, starch, salt and baking powder. Stir and better sift the flour mixture through a sieve.

In another bowl, combine a chicken egg, milk, vegetable oil, sugar and a pinch of vanillin (you can omit it or replace it with a teaspoon of vanilla sugar).

Shake everything with a fork or spoon so that the ingredients are partially or completely mixed. You can even beat it with a mixer or whisk, but this is not necessary.

Now add dry flour to the watery consistency, preferably in parts.

Add the dry mixture evenly and knead the biscuit dough. The dough should be quite soft, pliable and not stick to your hands. If it is still sticky, add a little more flour.

Now you need to roll out the dough with a rolling pin, very thinly - no more than 3 mm. I dusted the table with a little wheat flour and the dough rolled out perfectly.

Biscuit cookies can be shaped in any way. I used a cookie cutter, combined the remaining dough, rolled it out again and cut out the cookies. You can simply cut it with a knife into pieces of any shape.

We transfer our future biscuits to a baking sheet covered with baking paper. Using a fork, make several punctures at a time so that the cookies do not swell during baking.

Prepare biscuits in a preheated oven for 10 minutes, maximum 15 at 180 degrees. When little has browned, take it out immediately so it doesn’t burn.

Remove the finished cookies from the parchment, cool completely and store in a bag or airtight container.
