Next, you should drain this water from it. At this point, the oil of poppy seeds, which goes rancid during storage (this may later affect the taste of the inside), will rise to the surface of the grains and can simply be drained from them.
Then the poppy seeds are again poured with hot water and heated over the fire for 5 minutes, stirring.
Then the poppy seeds are whipped with a blender. A very important point! So that the inside is not watery and is airy, sugar or sweet powder should be added to the blender when the poppy seeds are already whipped. If you beat sugar and poppy seeds together in a blender bowl, the inside will be very watery.
You can add various additional ingredients to the poppy insides to vary its taste, for example, pieces of dried fruit, raisins, nuts and other ingredients.

I absolutely have a weakness for products made from poppy seeds and cocoa, so this cake combines both of my helplessnesses into a single whole :)

As it turns out, almost all people do not know at all what and how to do with poppy seeds (and the perversions that I have encountered on the Internet are something; it’s worth the thought of pouring ground poppy seeds with water, letting them brew, draining the water and using the remaining cake in filling 8-0).
I steam the poppy seeds in the following way. First, use an ordinary electronic coffee grinder to grind the poppy seeds.
After this, add a small amount of bubbling water (of course!), stir, compact and cover with a saucer - let the poppy seeds steam. A little boiling water is needed, just to soak the entire poppy mass.
While the poppy seeds are steaming, let's get to the rest of the ingredients. Carefully divide the eggs into yolks and whites (try to ensure that the yolk does not get into the white under any circumstances - otherwise you will beat it into a fluffy foam later).
Grind the yolks with sugar.
Add sour cream and stir. The dough comes out liquid, but this is not a problem - we’ll thicken it :)
Add flour and mix again. It will turn out quite thick, but it’s not terrible either - let’s thin it out :)
Add steamed poppy seeds.
Grease the pan with oil and turn on the oven to preheat to 200 degrees. This needs to be created at the moment, so that later you don’t waste time and valuable air from the dough :) (there won’t be any photos from this step either - we didn’t have enough hands)
Beat the whites into a strong foam and mix with the dough. Add 1 teaspoon of soda to the dough, previously extinguished with a small amount of wine (50 g will be enough), mix, pour into the mold.
Bake for 40 minutes here and there. Readiness is checked using the following method - we poke the pie in several places with a match or a toothpick - it must remain dry, without traces of dough.
The resulting pie is one hundred percent ready to eat, and is usually eaten in this form :). But, if the soul asks not just for a holiday, but for “a continuation of the banquet,” then you can additionally engage in decoration.
For the cream we will need:
1/3 tbsp. sugar, 70 gr. butter, 1 yolk, 1/3 tbsp. milk, 2 table. spoons of cocoa, vanilla, 2 tablespoons. spoons of cognac.
Grind the yolk with sugar. Add cocoa powder and grind (so that there are no lumps).
Add softened butter, stir; add milk.
Heat the resulting mixture in a water bath; stirring constantly, bring until thickened (for me this process took about 10 minutes, and still, the cream did not thicken very much). At the end add cognac and vanilla.
The result is a cream like this. While it is hot, it is watery and thickens as it cools.
Now take this device (reminiscent of a paratrooper’s string saw. If there is no string, you can use an ordinary knife with a long blade).
..and cut the pie lengthwise
Spread the halves, fold them together, coat the cake on top and sides, and leave for several hours (or better until the morning) so that the cream saturates the cake.
Recipe: Poppy Pie – Open Pie with Poppy Innards
In extreme times, I often make pies for my own family. So yesterday I wanted to create a cheese pie that is already familiar to you, but I didn’t calculate the dough and I still had about 500-600 grams left. So as not to waste the dough, I decided to experiment with a sweet poppy seed cake (we just bought a huge package of poppy seeds the other day).
Let me remind you that I make the dough according to this recipe. The interior does not take very long to prepare, so you can start making it when the dough is almost ready.
First you need to prepare the poppy seeds. I pour it into a saucepan, fill it with water (the quantity is not important - we will salt it later anyway) and put it on medium heat. When the poppy seed boils, reduce the heat and simmer for about 5 minutes. Then I drain the water and leave the poppy seed to cool.
In the meantime, while the poppy is cooling, I’ll take care of the second component of our interior. It will be something like custard.
I combine sugar with eggs and add vanilla sugar. At the same step, you can add starch to make the inside thicker (I added it).
I painstakingly beat the egg.
I pour milk into a saucepan and put butter in it. I put the saucepan on the fire and wait until the butter is completely melted and the milk is close to boiling.
When the milk boils carefully, pour it into the egg mixture in a narrow stream (with constant stirring so that the egg does not curl). Unfortunately, I only have two hands, so I couldn’t photograph the process itself.
Pour the resulting milk-egg mixture back into the pan and place on low heat. We constantly stir our future cream and heat until the cream becomes thicker (you don’t have to thicken it too much - when the cream cools, it will thicken slightly).
I'll make a note here. You can also create the cream in a water bath - then there is even less chance that it will curdle or burn, but this process will also take longer. If the cream curdles, you will have to make it again.
When our cream is ready, pour poppy seeds into it (while the cream is still hot - this way the poppy seeds will “open” better).
Stir the poppy seeds into the cream and leave to cool. To speed up the process, you can put it in the refrigerator. It should cool down to approximately body temperature.
When the cream has almost cooled down, we begin to form the pie itself.
First, divide the entire dough into two parts - a large piece (approximately 2/3 of the entire dough) will be the base, and a small piece (approximately 1/3 of the entire dough) will be the top.
Roll out a large piece into a circle shape. Not too thick - the dough will still rise.
Transfer the dough to a baking tray lined with baking paper. If the dough is very tender, you can roll it out directly on the paper.
Take our filling and place it on the dough, leveling it over the surface. There should be about 1.5 centimeters of dough left on the edges. The inside came out quite thick, so it was in no hurry to drain from the cake.
Now let's start forming the sides. Carefully lift the loose dough and, using careful “tucks,” form a “braid.”
Now let's start decorating the top part of the pie. Our pie is open, but I don’t feel like creating it completely without decorations. Therefore, I will make a “net” from the dough.
To do this, I roll out the remaining piece of dough into an oblong flat cake and, using a pastry spatula (or a knife, only then roll out on a board so as not to destroy the table), cut out long strips about a centimeter wide.
Place the strips on the pie, tearing off any excess from the edges and pinching the edges of the strips to the pie. I did not create a very frequent grid. Be sure to grease the dough with vegetable oil using a brush. It’s great if the cake stays warm like this for about 15 minutes – it will still rise a little.
While the cake is still rising, turn on the oven and heat it to 180 degrees.
Place our pie in a preheated oven for 20 minutes.
This is the pie I came up with with poppy seed insides. The dough came out very tender, and the inside was fragrant, moderately sweet and savory.
