Now we are preparing tender and very juicy chicken cutlets, which contain cottage cheese. The result is a nourishing, fragrant and very tasty second course, which goes well with almost any side dish. Serve these delicious and golden-brown chicken cutlets with mashed potatoes or just boiled potatoes, rice, pasta, and cereals.
Due to the fact that this second dish includes chicken breast, it won’t take much time to make the cutlets. Thanks to the addition of cottage cheese of any fat content to the minced meat, this meat dish will pleasantly surprise you with its juiciness and tenderness. You can bread chicken cutlets not only in breadcrumbs, but also in flour - it’s just a matter of taste.

The recipe for chicken cutlets that we will prepare now includes the following ingredients: chicken fillet (in my case chicken breast), cottage cheese, chicken egg, onions, fresh garlic, dill (or other herbs to taste), breadcrumbs (I make my own at home). production), salt, ground dark pepper and refined vegetable oil (I use sunflower) for frying.
For me personally, the most convenient way to create minced chicken is not with a meat grinder, but in a food processor (the attachment is an iron knife). Later, you can simply combine all the necessary ingredients in a container and beat them until smooth. If you don't have a food processor, pass the chicken fillet through a meat grinder.
We peel a medium onion and a clove of fresh garlic, then grate it into a paste on a small grater. We chop the freshest greens (in my case dill) finely and finely with a knife.
Now we need to carefully mix the minced chicken, chopped onion, garlic and herbs. In addition, add cottage cheese, chicken eggs, salt and ground dark pepper. You can knead the minced meat for chicken cutlets by hand, but the food processor can handle it in a matter of seconds.
The result is relatively homogeneous minced meat for chicken cutlets. By the way, if you love and often cook chicken fillet cutlets, you probably understand that the minced meat comes out sticky and you need to form the cutlets with your hands moistened with cool water.
Pour breadcrumbs into a flat dish or plate and roll them into the cutlets prepared in advance. I got 7 pieces of medium size. Choose the shape yourself - you can create round, triangular or oblong (like mine).
Pour vegetable oil into the frying pan and heat it well. Place the cutlets in hot oil and fry over medium heat until the bottom side is browned.
Then we turn the cutlets over and finish cooking the second side, covering the pan with a lid.

1. To make minced cutlets with cottage cheese, it is convenient to use a blender with a bowl. Send the freshest grainy cottage cheese into it.
2. Beat a fresh chicken egg into a bowl. You can replace them with quail ones in the amount of 4-5 pieces.
3. Cut the peeled onion into 3-4 parts and place in a bowl.
4. Close the blender tightly with the lid and grind the ingredients in it at high speed for 2 minutes.
5. Place the homogeneous curd mass with egg and onion into a bowl with sirloin (or the fattest minced chicken).
6. Salt the minced meat to taste and add spices - a mixture of spices for cutlets, ground dark pepper, and ground coriander are perfect.
7. Mix the minced meat with a large spoon until it becomes completely homogeneous.
8. Fry the cutlets in hot refined oil over low heat for 4 minutes. By the way, it is better to sculpt them with wet hands.
9. Using a spatula, turn the cutlets over to the other side and fry for another 3 minutes. The frying pan can be covered with a lid.
The cutlets are very juicy when fried, so it’s best to serve them right away - with vegetable tenderloin, salad, or a side dish.

I would like to share a fascinating option for making chicken cutlets. In addition to the chicken fillet, there is cottage cheese, which adds a certain tenderness to the dish, but is not actually felt. In any case, none of the tasters identified this hidden ingredient. The higher the fat content of the cottage cheese, the juicier the cutlets will be.
In addition to their good taste, the cutlets are dietary, especially if they are not fried, but steamed (as I do for myself). My little children and my hungry husband eagerly eat them!
