Hello, dear readers of the World of Housewives blog! Although belated, I would like to congratulate all Defenders of the Fatherland on the holiday!

I already wrote about gifts for guys on February 23rd earlier, here, but, as is clear, not just gifts... you also need to throw in something for sweets. And for dessert now there will be tangerine cake!

The recipe for tangerine cake came to me from a friend from a former job, it has been stored in my recipes for a very long time, but somehow I didn’t get around to trying it.

When I started thinking about how to amuse my husband on February 23rd, I decided on a tangerine cake. Firstly, it’s new, not yet tried, and secondly, the tangerine season has not yet ended, which means you need to try and create a specific cake with tangerines!

Tangerine cake – “orange mood”

Ingredients

For the cakes

  • Sugar – 1.5 cups or 300 grams
  • Eggs – 2 pieces
  • Butter – 200 grams (softened)
  • Flour – 1 and ¾ cups
  • Tangerines – 3 pieces with peel
  • Walnuts – 0.5 cups chopped
  • Soda – ¾ teaspoon (quench in citric acid)

For cream

  • Butter – 150 grams (softened)
  • Condensed milk – 0.5 cans, approximately 200 grams
  • Tangerines – 2-3 pieces with peel

For decoration

Grated chocolate and tangerine slices

Shortcakes for tangerine cake

Wash the tangerines well with a hard brush and pass them through a meat grinder along with the skin. I immediately mixed both portions of tangerines for the cakes and for the cream, just in different dishes.

Beat one and a half cups of sugar with 2 eggs with a mixer. Add softened butter and mix with a spoon.

Add tangerines, chopped nuts and soda, quenched with lemon juice, to the resulting mass.

Add flour evenly and mix with a spoon. The dough comes out quite thick, but not so thick that you can work with your hands.

Next, the dough must be divided into two equal parts to make two shortcakes. I took similar bowls for this.

I recommend using a detachable baking pan so as not to break the cakes later when removing them.

If you don’t have a springform pan, but have a good eye, you can bake on a baking sheet, trying to give the cakes a round shape.

I only have one springform pan, so the process took a little longer, but the cakes came out even and similar.

So, grease the mold or baking sheet with butter and sprinkle with breadcrumbs. Pour out the dough and smooth it out.

We bake in a not very hot oven, I did this: 20 minutes - 180 degrees, 5 minutes - 150 degrees and another 5 minutes - 100 degrees. We check readiness the old fashioned way with a wooden toothpick.

The shortbreads were perfectly baked, came out crispy, and the crust around the edges was pleasantly crispy.

Cream for tangerine cake

While the shortcakes are baking, prepare the cream.

Mix softened butter with condensed milk and add tangerines minced through a meat grinder. Also with skin! This gives the best taste and smell!

And grate approximately 30 grams of chocolate on a large grater. I had bitter chocolate. Perhaps some people don’t like it very much, but in a cake with tangerines, this is the best option, for my taste.

Assembling tangerine cake

When the first cake is ready, carefully run a knife along the walls and bottom of the cake, separating it from the mold. Turn it over and put it on paper and let it come to its senses.

Place the cooled shortbread on a plate and generously coat with cream. This amount of cream should be enough for two shortcakes.

We do the same with the second cake. The main thing is to let it cool so that the buttercream does not drip.

Sprinkle the cream-coated cake with grated chocolate and decorate with tangerine slices.

Next, the cake needs to be covered with a lid (I use a huge bowl for this) and put in the refrigerator overnight (that is, in the dark) .

Tangerine cake has a very pleasant, not very sweet taste; tangerine peel and nuts mix well with bittersweet chocolate. Overall, I really hope you enjoy it as much as we do! Help yourself!

Liqueur or cognac – 50 ml.

Step-by-step recipe with photos

I suggest making a very tasty cake with tangerines. This cake is perfect for the upcoming Valentine's Day. It perfectly combines sweet shortcakes and the sourness of tangerines. For this cake, I used sour cream, prepared yesterday, and overnight (that is, in the dark), the cake was perfectly soaked and became very tender and melting in the mouth.

For the cake we will need flour, cocoa powder, sugar, eggs, baking powder, sweet powder, sour cream, vanillin and tangerines. The idea to decorate the cake with coconut shavings came to me later, when the cake was actually assembled.

For the sponge cake, beat the eggs until they double in volume and continue beating, add sugar.

Pour the egg-sugar mixture into a bowl and gradually add sifted flour with baking powder and cocoa.

Mix by folding until the mixture becomes homogeneous.

Cover the bottom of the springform pan with parchment and secure the sides. Pour the dough into the mold. Tap the pan on the table several times or rotate the pan clockwise until the dough is evenly distributed.

Bake the crust in a preheated oven for 30 minutes at 180 degrees. Then cool by turning the mold upside down and cut into 2 parts.

Peel tangerines from membranes and remove seeds, if any.

Place one part of the shortbread on a dish, soak in syrup mixed with liqueur. Taste to taste, if it is very sweet, you can dilute it a little with boiled water. Spread the soaked shortcake with sour cream and add tangerine slices.

Grease the top with cream again.

Then cover with the second cake layer, brush the top and edges of the cake with sour cream. Decorate the top with tangerine slices.

Sprinkle coconut on top and around the edges of the cake.
