Mannik with cherries on kefir
Mannik (semolina pie) mixes well with berries. Cherries, currants and raspberries enhance the rustic taste of the pie, making it brighter and richer. Both the freshest and frozen berries are suitable for production, which means you can pamper yourself with dessert all year round.
Would you like to add some juiciness to your pie? Put cherries not only in the filling, but also on top - pour thick cherry sauce over the manna, it will turn out even tastier and more aromatic!
Ingredients
- drink – 1 tbsp.
- semolina – 1 tbsp.
- wheat flour – 1 tbsp.
- chicken eggs – 3 pcs.
- butter – 50 g
- baking powder – 1 tsp.
- sugar – 4 tbsp. l.
- vanilla sugar – 1 tsp.
- salt – 1 chip.
For the insides and sauce:
- fresh or frozen cherries – 300 g
- sugar – 100 g or to taste
- corn starch - 1 tbsp. l.
- water – 3 tbsp. l.
Manufacturing
I pour the semolina into a bowl and pour in kefir (1 tbsp = 200 ml, all products, including the drink, should be at room temperature). Mix well with a whisk until smooth. I leave it for 30 minutes so that the semolina swells, becomes airy and soft.
In the meantime, I prepare the cherries. I wash the fresh ones and remove the seeds. I give the frozen one time to thaw and put it in a saucepan. I add 100 g of sugar. To make the freshest berries release their juice faster, I add 2-3 tablespoons of water. Frozen cherries will release quite a bit of water. I put the saucepan on the fire and boil for 3-5 minutes from the moment of boiling, until the cherries become soft and release all their own juice. I leave it to cool.
I'm making dough. To do this, break the eggs into a deep bowl or food processor bowl, add salt, sweet sand and vanilla sugar. Beat with a mixer for 2-3 minutes until a fluffy foam forms.
I add the semolina-kefir mixture, also melted and cooled butter, and mix with a spatula. The semolina must spread moderately, while at the same time maintaining the airiness of the dough.
At the very end I add sifted baking powder and wheat flour. If you want the manna to come out fluffy and loose, then add 1 cup of flour; if you like the most wet and heavy cake - 0.5 cups of flour. Again, mix gently until smooth. The dough comes out very soft and bubbly.
I grease the mold (diameter 20 cm) with vegetable oil and sprinkle with semolina. I pour the finished dough into it. On top I spread some of the cherries, strained through a strainer, in an even layer. I “sink” the berries a little so that they sink deeper into the dough.
I send it to a preheated oven and bake for 40-45 minutes at 180 degrees. I check for doneness with a toothpick; if it’s dry, you can remove the pie from the oven. I cool it in the mold.
In principle, at this step you can already finish making it - carefully remove the manna from the mold and sprinkle it with powder. But in order to enhance the presence of cherries and fully enjoy their taste, I suggest making a sauce from the remaining berries. To do this, I strain out about 3-4 tablespoons of cherry syrup and dilute cornstarch in it.
I bring the remaining cherry juice and berries to a boil again and pour the diluted starch into them in a narrow stream, stirring with a spoon. I bring it to a boil and immediately remove it from the heat.
I serve manna with cherry sauce warm or cool, with a cup of fragrant tea. Bon appetit!

Mannik is a pie based on semolina. This is a very tasty and hassle-free pastry, which is perfect for home tea drinking.
There are quite a lot of recipes for making manna, and each one is good in its own way. It can be prepared with kefir, sour cream, milk and even water, with various flavorings: fruits, berries, nuts, candied fruits, chocolate, etc.
Now I would like to share the usual recipe for making manna with cherries on kefir. Cherries add a slight sourness to the pie and highlight its sweet taste.
I make this kind of pie quite often; in winter I use frozen berries. The result always amuses me, I recommend you try it too.
Prepare the required set of ingredients for making manna with cherries.
Pour semolina into a bowl and pour kefir at room temperature. Mix everything well and leave for 30 minutes, during this period of time the cereal should take on water, swell and become airy.
Separately, in a bowl or the bowl of a food processor, combine the eggs with sugar.
Beat with a mixer until a fluffy mass forms.
Then combine the swollen semolina and beaten eggs, add melted and cooled butter.
Add sifted flour with baking powder and mix everything carefully.
The dough mixture should turn out like thick sour cream.
Sort the cherries and wash with cool water. Remove seeds from berries.
Grease a baking pan with butter and pour half of the dough into it (if you use a silicone pan, you don’t have to grease it).
Place berries sparingly on top of the dough.
Then pour in the remaining dough.
Place the pan with the dough in a preheated oven and bake at 180 degrees for approximately 45-50 minutes. Check the readiness of the pie with a wooden skewer.
Cool the finished manna slightly, and then remove it from the mold and place it on a wire rack so that the bottom does not get wet.
Serve manna with cherries and kefir on the table cooled with a cup of fragrant tea or milk.
Mannik comes out very tasty and affectionate. I recommend trying it.
Mannik with cherry
Option 1: Traditional recipe for manna with cherries
You can sing songs of praise to semolina pastries endlessly, and not only because they are truly delicious. No less important is the compatibility of manna with flavoring fillers, and they simply cannot be counted. We will now offer you several different cherry pies with semolina.
Ingredients:
- a glass of kefir;
- three testicles;
- semolina and flour - 1 glass each;
- butter, “Regular” butter – 50 grams;
- spoon of ripper;
- 100 grams of sugar;
- vanilla powder – 1 tsp.
For cherry sauce and filling:
- potato starch;
- 300 grams of cherry berries (frozen or new);
- sugar, refined – 100 gr.
Step-by-step recipe for manna with cherries
The drink and the semolina with which we will combine it should be at normal temperature. Warm the product from the refrigerator by placing it in a large bowl of heated water. There is no need to heat it above room temperature, don't do it. Pour kefir over the cereal and leave for up to half an hour.
We sort out the cherries; frozen berries obviously need to be thawed in advance. Remove the seeds, if any, and place the pulp in a small frying pan. Add two or three tablespoons of water and sprinkle with sugar. Place over low heat and heat until the juice releases, which we drain one hundred percent and reserve for the sauce.
Beat the eggs, salt and both types of sugar with a mixer into a fluffy foam. Add melted and one hundred percent cooled butter, followed by the semolina-kefir mixture, mix thoroughly with a spoon, no need to beat.
Place a sieve directly on the bowl of dough and pour flour and baking powder into it. Gently shaking, sift and completely knead the dough.
Forms with a diameter of more than 20-3 cm are not recommended for mannas. Take any, much smaller one, rub the inside with oil and pour the dough into it. Arrange the cherries so that they are at a short distance. Place in a hot oven and expect the pie to be ready in three quarters of an hour.
Dissolve one starch in three tablespoons of cherry juice, heat the rest of the juice to a boil. Stirring continuously, slowly pour the starch thickener into the hot juice. Without letting it boil, warm it slightly and set aside to cool, serve with the sliced pie.
Option 2: Frisky recipe for manna with cherries
Choosing cherries by variety is a luxury that only residents of rural areas will allow themselves. Most often, frozen berries go to mannas and there is no time for species here. Take those that, when thawed, do not release much juice and, most importantly, remain at least vaguely similar to cherries, and do not fall apart into small pieces.
Ingredients:
- cherries, fresh - two hundred grams;
- a spoonful of factory ripper;
- large, fresh eggs - 2 pieces;
- a glass of sour cream and sugar;
- a pack of “Farmer” butter;
- half a glass of flour and two glasses of semolina.
How to quickly cook manna with cherries
Set aside the opened stick of butter, covering it with a bowl so that it thaws one hundred percent. Remove the pits from the cherries, let the frozen ones thaw, and drain the juice. Drop the eggs into the sugar and beat, add butter, sour cream and flour, carefully mix the mass with a mixer.
Pour semolina and baking powder into the mixture, mix so that the outside of the dough looks completely homogeneous. Leave at room temperature for up to an hour, this is necessary so that the cereal has time to swell sufficiently.
Carefully rub a 23-centimeter baking dish, preferably a collapsible one, with oil. Lay out and level the dough, symmetrically deepen the cherries into it, right on top. You need to do this by already preheating the oven and not allowing the dough to be unnecessarily soaked in cherry juice.
Oven heating is exactly 200 degrees, baking time is about an hour, check the readiness of the pie just in case by piercing a dry stick.
Option 3: Curd manna with chocolate covered cherries
The fat content in cottage cheese, according to the description, must not exceed 2 percent. If you don’t have a specific product available, you can use any product, up to 10 percent, it is much more important that it does not contain vegetable fats and is completely natural. The two components of manna, cherry berries and chocolate, evoke the idea of “intoxicated cherries.” As annoying as it may sound, here they are not only not necessary, but can even ruin the entire dessert. You won’t need a flavoring that smells like cognac or liqueur; a pie with such an additive will quickly become unpleasant.
Ingredients:
- three hundred grams of low-calorie cottage cheese;
- a full glass of sugar;
- one percent drink – 100 ml;
- 400 grams of frozen cherries;
- two testicles;
- a spoon of ready-made ripper;
- a pinch of vanillin;
- chocolate, dark - one hundred gram bar;
- 150 grams of small semolina.
How to cook
Defrost the cherries, you can even use a microwave (microwave radiation, ultra-high frequency radiation - electromagnetic radiation, including the decimeter, centimeter and millimeter range of radio waves) oven. Set aside a dozen berries for design, drain the water from others and place them on disposable paper towels to dry slightly.
After breaking the eggs, carefully separate them, pouring the yolks into a bowl with sloping walls. Pour the drink into it, add vanillin, cottage cheese and snow-white sugar. Stir and add semolina, bring the mixture until smooth.
Grate or chop the chocolate coarsely, add 3/4 of the chips to the dough, along with the main part of the cherry. Beat and carefully fold the egg whites into the dough. Melt the remaining chocolate by slowly heating it or using any method suitable for you, dip the cherries in it and place it on a saucer, this will be the decoration of the pie.
After moistening the baking dish chosen for baking with oil, place the dough in it and place in a preheated oven for 50 minutes. Maintain the temperature within 180 degrees during the entire process.
Cool the finished manna slightly without removing it from the mold, then turn it over and carefully shake out the cake. Decorate with icing cherries, powder or sugar crystals.
Option 4: Chocolate manna with cherries
In the end, we left the cake with natural chocolate, but this one is prepared with the addition of cocoa powder, which immediately acts as a dye, a source of taste and smell. Be sure to take a drink for manna that is fresh and watery; a thick one will not suit us, even if it is of the best quality.
Ingredients:
- 2% drink – 0.5 liters;
- two glasses of small semolina;
- 10 grams of vanillin;
- half a kilo of cherries;
- ripper, ready - one spoon;
- two selected eggs;
- two full spoons of dry starch and homemade sweet powder;
- sugar – one and a half glasses;
- cocoa powder, natural - three spoons.
Step by step recipe
Just in case, sift the semolina, pour in kefir and, after mixing, leave the cereal to swell. There is no need to heat anything or place it specially in a warm space; within an hour the semolina should be sufficiently saturated with kefir.
Pour sugar and vanilla into a bowl, add eggs, beat by hand or with a mixer until the volume increases noticeably. Remove the pits from the cherries and sprinkle with a mixture of powder and starch.
Add cocoa and baking powder to the semolina, stir, then carefully add the egg mixture.
Line the pan with a sheet of cooking paper cut to size and rub the walls thickly with oil. Pour the dough into it and arrange the cherry berries sparingly.
The temperature in the oven for baking manna must be exactly 180 degrees, and the time is usually enough for forty minutes. Test the cake using the traditional “dry match” method, slightly cool the manna right in the mold, then remove and decorate using the remaining powder.
Option 5: An unusual recipe for manna with cherries and coconut filling
Just as the pie is unusual, so is it delicious. Pay attention to the quality of the coconut filler; it should not be overdried or “improved” with aromatic essences. An affectionate manna with a bad addition will not turn out the best.
Ingredients:
- 3 percent milk, pasteurized – one glass;
- 150 grams of high-grade flour and the same amount of dry, fresh semolina;
- a glass of coconut flakes;
- three large, new eggs, plus two more for meringue;
- three hundred grams of snow-white sugar;
- about 30 grams of chocolate;
- a packet of factory-made baking powder;
- a glass of cherry berries.
How to cook
Sift the flour, mixing with the ripper; a very fine sieve is useful for this. Separately for the dough, beat eggs with sugar, pour in milk, add shavings and semolina. Stir, adding flour in portions.
Knead the dough, cover the pan with foil and pour it into it. Thaw the cherries, if they were frozen, in a colander, collecting the juice. If you are lucky enough to have the manna with the freshest berries, take out the seeds and crush about 5 pieces with a garlic press into a cup. Filter the juice with several layers of gauze. Spread the whole cherries sparingly over the dough and place the manna in the oven for 40 minutes. It should already be warmed up, keep the temperature at 180 degrees.
Add cherry juice to sugar and add the whites of 2 eggs. Next, two water baths will come in handy for you. On one we melt chocolate to decorate the pie. On the other, most voluminous one, place a bowl with sugar and egg whites. Heating slowly, whip up a stiff foam, add cherry juice half a spoonful at a time, just for coloring.
Once the manna has cooled slightly, remove it from the mold and pour chocolate over it. Using a cooking bag, decorate with cream.
