It is very convenient to give carrot muffins in a cardboard mold to children at school, take them on the road, or to work. Vibrant orange cupcakes are also good as a sweet present, just pack them in a beautiful box.

Ingredients

  • carrots – 1 pc. (130 g)
  • egg – 1 pc.
  • vegetable oil – 60 ml
  • sugar – 100 g (less possible)
  • flour – 110 g
  • baking powder – ½ tsp.
  • soda – ¼ tsp.
  • ground cinnamon – ¼ tsp.
  • salt – 1 chip.
  • flax or sesame seeds – 1 tsp. (optional)
  • sweet powder – 1 tbsp. l.

Manufacturing

Select a small grater and grate the carrots on it. If a lot of juice has formed, it is better to drain off the excess, but do not squeeze out the carrots.

Beat in one egg and pour in vegetable oil. Mix thoroughly to obtain a homogeneous mass.

Add sweet sand to the carrots and mix well again.

Add the dry ingredients to some of the sifted flour: cinnamon, salt, flax seeds, baking powder and soda. Mix and add to carrot mixture.

Sifting the flour, knead the muffin dough.

We get the middle mixture into a mass that flows off the spoon.

Fill the molds 2/3 full with dough. Molds can be silicone, paper or iron. In my opinion, paper ones are the most convenient. They do not need to be washed after production, they are comfortable to store baked goods, transport, and most importantly, pick them up.

We send our preparations to an oven preheated (to a temperature of 180 degrees). Bake the products for 20-25 minutes. At the same time, make sure that the tops do not burn.

We check readiness with a long wooden skewer.

And finally, to make the baked goods even more attractive, sprinkle any cupcake with sweet powder through a strainer.

We serve delicious, melt-in-your-mouth carrot muffins with tea, coffee, milk, cocoa, or anything!

Baked goods are not low in calories. But these 340 kilocalories contain a fairly large proportion of dried fruits and nuts, and these are “healthy” calories. For those who are on a diet, such a snack is also suitable.

At first glance, due to the huge number of ingredients, it seems that preparing healthy carrot muffins is very time-consuming and difficult. But this is absolutely not true. They take just 35 minutes to make and bake in the oven for 25 minutes. An hour after you start, the muffins will be ready!

Ingredients

  • carrots 300 g
  • eggs 2 pcs.
  • brown sugar 100 g
  • lemon zest 1 lemon
  • vegetable oil 70 g
  • whole grain wheat flour 120 g
  • walnuts 50 g
  • raisins 30 g
  • dried apricots 30 g
  • prunes 30 g
  • baking powder 1 teaspoon
  • soda 1/2 teaspoon
  • cinnamon 1 teaspoon
  • nutmeg 1/2 teaspoon
  • ground ginger 1/2 teaspoon
  • coconut flakes 2 tbsp. spoons
  • salt 1 pinch

I used refined sunflower oil without aroma or taste.

Instead of walnuts, you can use exotic pecans (if your budget allows); other types of nuts are not completely suitable for these muffins.

You can also use candied kumquat (as in Easter cake), dried cranberries or cherries as an additive. This is all entirely appropriate.

Cinnamon, nutmeg and ground ginger play a very interesting special role in this confectionery play for us, so I don’t recommend skipping them.

Coconut flakes are added more quickly for beauty than for taste, because there is very little of it to seriously affect the taste.

From this amount of ingredients I get 6 muffins in cardboard molds with dimensions: height 5 cm, bottom diameter 6 cm, top diameter 7 cm. Weight 720 g.

Manufacturing

We prepare all the necessary ingredients. Great for washing raisins, prunes and dried apricots. I recommend soaking dried fruits in hot water for a while. This will not only soften them, but will also remove almost one hundred percent sulfur dioxide, which is usually used as a preservative in dried fruits; it dissolves in water. We wash off the preservative except for dust and small debris. After this, dry the prunes, raisins and dried apricots with cardboard towels.

The eggs should not be cool: either we take them out in advance or warm them in hot water.

Nuts in baked goods almost always make them more advantageous in terms of taste and texture. You can put nuts in desserts raw, but if you lightly heat them (fry them) in a frying pan, the nutty taste is transformed and intensified, and the nuts themselves become brittle and crunchy. Well, heat treatment won’t interfere with nuts that are sold already peeled, whether they’ve been to a lot of places. This applies not only to walnuts. So, pour 50 g of walnuts into a dry frying pan without oil and put it on the stove at medium power. Roast the nuts, stirring constantly to ensure even roasting. When the nuts begin to turn brown, remove from the stove. The whole thing takes about 5 minutes.

Then cut the nuts into medium-sized pieces. It’s not worth making them very small; in baking it’s great when the nuts, as they say, “can be felt by the tooth.”

We remove the zest from the lemon: carefully rub the lemon on a grater, touching only the upper yellow peel and do not grab the snow-white part of the lemon peel.

Mix the lemon zest with brown sugar (100 g) and rub the mixture with a spoon so that the sugar extracts a lot of the essential oil from the zest. Let the sugar and zest stand for 10 minutes. A hint of lemon in baked goods never hurts.

Cut prunes and dried apricots into pieces of random sizes.

Peel the carrots and grate them on a small grater. To obtain short shavings, hold the carrots perpendicular to the surface of the grater and make short movements. Squeeze the juice from the resulting grated carrots into a separate container. This is how we remove excess liquid from the dough. The juice may be useful to us in the future.

Beat the eggs into a mixing bowl, add sugar with zest and a pinch of salt. Beat with a mixer for several minutes until a fluffy mass forms.

Add 70 g of vegetable oil and mix until a homogeneous mass is obtained, into which we put the grated carrots and mix well.

In a bowl, mix the dry ingredients: 120 g whole wheat flour, baking powder (1 teaspoon), cinnamon (1 teaspoon), baking soda (1/2 teaspoon), nutmeg (1/2 teaspoon) and ground ginger (1/2 teaspoon). Add nuts, prunes, dried apricots and raisins. Mix again. It's almost ready, don't worry.

And finally, mix the dry part of the dough and the wet part in a bowl. The dough comes out quite “wet”. If for some reason your dough comes out dry (for example, because the eggs are small or you overdid it when squeezing the juice out of the carrots), then add a little carrot juice until you get a thick, wet dough.

Fill the baking molds 3/4 full with dough, sprinkle coconut flakes on top and place in an oven preheated to 200°C for 25 minutes.

Healthy carrot muffins are ready!
The coconut flakes are slightly baked, but they still make the muffins look more interesting. They taste best when 100% cooled, which usually takes about 30 minutes. Bon appetit!

  • Two hundred 50 grams of carrots, grated;
  • Two testicles;
  • One glass of flour;
  • 100 ml of ordinary vegetable oil;
  • Half a glass of sugar;
  • Small spoon of baking powder;
  • Half a teaspoon of soda;
  • The same small spoon of vanilla sugar and the same amount of cinnamon;
  • Half a teaspoon of dried ginger;
  • A couple of pinches of nutmeg.

To make lemon glaze: eight small spoons of ground sugar and a couple of tablespoons of lemon juice.

The basic rule for making high-quality muffins is to mix the dry and wet ingredients separately, and then combine them.

Manufacturing method:

  1. In one bowl, mix sweet sand (you can use regular, snow-white, brown or vanilla), flour and the rest of the dry ingredients, including spices. We also send grated carrots here;
  2. Break the eggs into a second bowl and mix them with vegetable oil;
  3. Pour the egg mixture into the flour mixture and stir vigorously until smooth;

  • Two testicles;

  • Two hundred grams of butter (margarine can be used);
  • One glass of sugar;
  • Half a teaspoon of baking soda or baking powder;

Manufacturing method:

  1. Break the eggs into a bowl and add sugar to them, beat with a mixer;
  2. Heat the butter until watery and cool. Add to watery mixture. Beat again with a mixer;

  • A small spoon of baking powder and the same amount of cinnamon;
  • A little salt and sweet powder for the finished cupcakes.

According to the kefir cake recipe, in the same way as in the first version, dry and watery ingredients are mixed separately.

Manufacturing method:

  1. To bake with kefir, you will need a slightly higher temperature - two hundred degrees.
  2. Production time – 20 5 minutes. Experienced housewives simply determine the degree of readiness using a toothpick.

If you also don’t have flax seed flour in your arsenal, nothing terrible. Most muffins do not suffer from a lack of eggs and still turn out crumbly and tender. Especially if you cook them with kefir.
