Banana and oatmeal cookies: recipe

What we will need for cookies:

  • oat flakes – 200 g;
  • banana – 1 pc.;
  • honey (optional) – 1 tbsp;
  • dried fruits (raisins, dried cranberries or cherries) – 70-80 g;
  • vegetable oil – 2 tbsp;
  • baking powder – 0.5 tsp;
  • salt - a pinch;
  • nutmeg, cinnamon – 0.2 tsp;
  • sesame – 1 tbsp; flax seed – 1 tbsp.

Number of servings – 12-14 pcs.

How to make cookies from oatmeal and banana

  1. First, wash and soak the dried fruits in boiling water. Any small seedless dried fruit such as raisins, dried cranberries or cherries are suitable for these cookies. Once they soften, drain the water and squeeze the dried fruits by hand.
  2. Peel a ripe banana and mash it with a fork. It is better if the banana is overripe, with soft and sweet pulp.
  3. Add vegetable oil to the banana. Mix everything vigorously until smooth.
  4. If desired, add sesame and flax seeds - one tablespoon of each.
  5. Add oatmeal. The smaller the flakes, the better the dough will set, and the finished baked goods will not be as brittle.
  6. Add baking powder and a little salt. Instead of baking powder, you can use slaked soda in a small amount.
  7. If the banana turns out to be not very sweet, then add a little honey to the dough.
  8. Then - spices to taste: a little cinnamon and nutmeg.
  9. Add dried fruits at the end. Mix the dough thoroughly; it does not have to be very crumbly. In this case, you should add a little more banana.
  10. With hands dipped in water, form small balls from the dough and place them on a baking sheet lined with parchment or a silicone mat. The paper must be thick, otherwise the cookies may stick during baking.
  11. Use your palm or spoon to press the cookies and trim the edges. Bake in an oven preheated to 170 degrees for about 20-25 minutes until golden brown.

  • oatmeal - 1.5 tbsp;
  • bananas - 1 pc.;
  • honey - 1.5 tbsp;
  • walnuts - 40 g;

How to Make Banana Oatmeal Cookies

  1. Peel the bananas and break them into pieces. Place them in a bowl and mash the banana into a smooth puree. You can take bananas even with dark spots, they are sweet and you won’t need sugar.
  2. We twist the oatmeal through a meat grinder or grind it with a blender: we just grind it, and do not bring it to the state of flour. Place the cereal in a bowl with banana puree.
  3. We take honey with a spoon and put it there. If the honey is very thick, then it should be slightly warmed so that it becomes watery, but not hot.
  4. Break the walnuts and remove the kernels. Using a sharp knife, chop them finely. If you are preparing a huge portion, it is easier to grind through a meat grinder.
  5. Next add baking powder and cinnamon. Cinnamon should not be replaced with anything else.
  6. Knead soft dough. Leave it for 15 minutes. During this period of time, the oatmeal will swell slightly and soften.
  7. Divide the dough into approximately equal pieces. Roll each into a ball the size of a walnut and flatten slightly. Place the preparations on a baking sheet or baking dish. Ours is a glass form, greased with oil.
  8. Bake banana cookies at 190 degrees for just 25 minutes. Baking time may vary depending on the oven - gas, electronic. We focus on external appearance.

  • oat flakes - 200 g;

  4. Add flax seeds, sesame seeds, and oatmeal to the bowl. Some recipes advise drying flax seeds in a hot frying pan without vegetable oil. Because the seeds are small, they dry out very quickly. Our test contains flax seed without preparatory treatment.
  5. Pour in a packet of baking powder.
  6. Use a spoon to knead the soft dough - it comes out tender and velvety. Leave it for 15 minutes.
  7. The dough has “united”, you can create blanks. Use a teaspoon to scoop out the dough, shape it into a ball, and place it in a baking dish. Press a small bun with a spoon, giving it the shape of a flat cake. The thinner and smaller in diameter the blanks are, the more crumbly the cookies will be. Huge cookies are crispy on the outside and soft on the inside.
  8. Bake in a hot oven at 190 degrees. Just 20 minutes - and the delicacy is ready. While the oatcakes are baking and the smell fills the house, let us remind you: to keep the baked goods crispy, you need to keep them in a sealed container or box.

Let's start making oatmeal and banana cookies. Yes, it really can consist of only 2 ingredients :) Let’s get started! We turn on the oven at 175-180 degrees, it depends on your oven, I won’t tire of repeating that they are all different, therefore, if your oven is steaming for wear and tear, set it to 175, and if it is completely adequate for itself, set it to 180.

We peel two very ripe bananas; their skins should already be covered with dark spots. This determines how sweet the diet oatmeal cookies will be. If you realize that the sweetness is still not enough for you, add another tablespoon of honey next time. Break the bananas into pieces and place in a bowl. Mash them with a fork or using a blender.

Add the main ingredient – ​​oatmeal. Choose oats that take a long time to make and need to be cooked, then the diet oatmeal cookies will have the most texture and health benefits. Mix the mixture well.

Set aside while we work on the nuts; the flakes will swell slightly. Let me remind you that oatmeal cookies can be made without them, but they still taste better with nuts. I use walnuts because, in my opinion, they mix best with Hercules and bananas. Chop the nuts very finely.

Add the walnuts to the prepared mixture and mix again. At this point, you can add cinnamon or vanilla, or other flavors as you wish. In my moderate opinion, banana cookies from Hercules are best complemented with cinnamon, which is what I added.

Take a baking sheet and cover it with parchment paper or a silicone mat. You can bake on the baking sheet itself, but you will need to spray it with oil. Take a spoon and spread out the “dough” into flattened rounds. I advise you to make oatmeal cookies with nuts as narrow as possible, then they will have a pleasant crunch.

Place the pan in the oven for 15-25 minutes until golden brown. Again, I repeat, all ovens are different, so watch the production! By the way, here's another life hack: if you want to get the brownest oatmeal cookies, add 1/2 spoon of coconut oil to the dough. Or at least some other one. But coconut will give a wonderful smell!

After the allotted time, oatmeal cookies in the oven begin to smell fragrant throughout the whole house! We take out the finished fragrant delicacy and let it cool, having previously “unstuck” each cookie from the paper.
