Dough:

  • 300 g flour
  • 200 g butter
  • 100 g sugar
  • 1 PC. testicle
  • ¼ tsp. salt
  • 1 tsp baking powder
  • 600 g rhubarb
  • 200 g sour cream
  • 50 g sugar
  • ½ tsp. cinnamon

SHORT DOUGH

First prepare the dough.
Add in flour, baking powder and salt.
Mix everything and sift.
Rub cool butter into flour.
Add sugar and grind everything into small crumbs.
Beat in the egg and knead the dough.
Separate a third of the dough and put it in the refrigerator.
Use the remaining dough to form the bottom of the pie and the sides.

FILLING

Peel the rhubarb and cut the rhubarb crosswise into slices (3-5 mm).
Add sugar, cinnamon to sour cream and mix everything.

Rhubarb PIE

Spread the rhubarb on the base.
Sprinkle moderately with sour cream, sugar and cinnamon.
Take out the cooled part of the dough and quickly grate it on top using a large grater.
Place the pie in the oven at 180°C for approximately 30-40 minutes.
When it cools down, remove from the mold.

We offer a simple recipe for a very tasty rhubarb shortbread cake with butter crumbs. Making it will not take you much time; very soon a lush and fragrant cake will be on the table, which can become a good celebratory treat or an occasion for a comfortable tea party at home.

We suggest baking shortbread pie with rhubarb under butter crumbs in the oven from shortcrust pastry with butter and egg yolks with the addition of sour cream and baking powder.

For the dough into a mold with a diameter of 24 cm:
– flour – 2 cups
– butter – 150 g
– egg yolks – 3 pcs.
– sweet powder – ½ cup
– baking powder – 2 teaspoons
– sour cream – 1 tbsp. spoon

For the inside:
– rhubarb petioles – 400 g
– vanilla sugar – 2 bags
– ground cinnamon – 2 teaspoons

For crumbs:
– butter – 2.5 tbsp.
spoons – flour – ½ cup
– sugar – ½ cup

Additionally:
– butter for lubricating the mold.

Rhubarb shortbread with butter crumbs

1. Sift the flour into a deep bowl, add cool diced butter and rub with your hands until it becomes a thick crumb.

2. Pour sweet powder and baking powder into the crumbs, break the egg yolks, add sour cream and quickly knead the dough.

3. Wrap the dough ball in cling film or put it in a plastic bag and place it in the refrigerator for 20-30 minutes.

4. Meanwhile, prepare the pan by greasing it with butter and turn on the oven to preheat to 180 degrees. Cut the rhubarb into cubes, removing the skin from the stalks first if it is very rough.

5. Roll out the chilled dough on a floured table and place it in the prepared pan, spreading it over the bottom and sides. Place chopped rhubarb on the dough and sprinkle with vanilla sugar and cinnamon.

6. Grind the flour with pieces of cool butter, adding sugar, until large crumbs, and sprinkle it on top of the pie filling.

7. Place the pan in the oven, previously preheated to 180 degrees, and bake the pie for about 45 minutes, until the dough is golden brown on the sides.

8. Transfer the finished shortbread pie with rhubarb under butter crumbs from the mold to a dish and serve with tea or coffee when it has cooled slightly.

Ingredients

Shortcrust pastry for rhubarb pie:

  • 300 g flour
  • 200 g margarine or butter
  • 70-80 grams of sweet powder
  • a pinch of salt

Sour cream filling for pie:

  • 150 g sour cream 15-20%
  • 2 testicles
  • 100 g sugar
  • 10 g vanilla sugar

Recipe for making a dish at home

  1. In a bowl, mix flour with sweet powder and salt. Grate the butter on top and grind all the ingredients into crumbs with your hands. Place the buttery crumbs in a baking dish in an even layer, form low sides and lightly (!) press the entire dough with your hand (it should remain in the form of crumbs).
  2. Peel the rhubarb and cut the stems into cubes with a side of approximately 1.5 cm. Place the chopped rhubarb on top of the dough, sprinkle with sugar and ground cinnamon (optional).
  3. Preheat the oven to 180/200C, place the pan with shortcrust pastry and rhubarb in there for 5-6 minutes. Meanwhile, beat the eggs with a fork, add sugar and shake until it is almost completely dissolved. Pour sour cream into the egg cream, add vanilla sugar and stir until smooth.
  4. Remove the pan from the oven, pour sour cream over the dough with rhubarb and place in a preheated oven for 30-40 minutes. Remove the finished pie from the oven and cover with a towel or lid, leave to cool completely.
  5. Carefully remove the cooled pie from the mold and transfer to a plate. You can serve it to the table. Enjoy your tea!

Helpful Tips:

If you leave shortbread pie with rhubarb overnight (that is, in the dark) in the refrigerator, the next morning it will be soaked and taste better.
