Pie with raw potatoes is my favorite dish, my grandmother prepared it for me, and for the last 25 years I have been preparing it for us myself. In principle, it’s easy to create, but it may not work the first time, because the cake is large in size and difficult to turn over, so I advise you to start with a frying pan with a small diameter. Over all these years, I have tried baking it with other dough, without yeast, with kefir, for example, but I still find it tastier with yeast dough. You can take your own dough that you are used to working with.
I also added various additives to the filling, pepper, dill, etc., for me the most delicious composition is: potatoes, onions, salt. You can also bake the pie in the oven (then you don’t need to twist it), I did this only once in my life, the pie in the oven comes out drier than in a frying pan, but as they say, this is not an acquired taste.
We will need such products
For the dough, mix milk, egg, salt, yeast, vegetable oil and flour and knead the dough. I use a bread maker for this; in half an hour it kneads the dough very well.
The dough just needs to be kneaded and can be used straight away, we don’t need it to rise. The dough does not have to be very soft, it is better to add a little more flour. When working with yeast dough, I usually pour a little vegetable oil on the table to make pies, but in this case it is better to sprinkle the table with flour, otherwise the pie will be difficult to take off the table.
For the inside, peel the potatoes and cut them into small cubes, approximately the same size as the onion. If you cut potatoes into slices, then they may not be baked; it is better to cut them into cubes as small as possible, although almost everything depends on the type of potato; take varieties that boil quickly.

Roll out the dough into a circle approximately 30 cm in diameter.
Place the filling in a heap (if liquid has formed during this period of time, then without it)
And make a big pie. Pinch the edges.
Pour a little vegetable oil into a frying pan (mine is 24 cm across), place the pie seam side down and flatten it over the entire frying pan.
Fry on one side for 25-30 minutes over low heat, covering with a high lid, because the dough rises and may stick.
Turn the pie over and fry the same amount on the other side. Flipping requires a little skill; to do this, lift the pie with a spatula, support the raw side with your hand, turn it over and place it in the pan. You can grease your palm a little with vegetable oil to prevent the dough from sticking, I don’t do this. Close the lid.
During this period of time, the potatoes should have time to cook, and the dough should not burn.
Cut the finished pie into 4 pieces
and put a little butter or margarine (optional) inside each piece.
Very tasty with cool milk. It is better to serve the pie right away while the crust is crispy and the potatoes are hot.

I’ll write right away that the pie is not for beginners...
What is needed:
- 3-3.5 cups sifted flour, plus for cutting
- 2 hours of yeast.
dry spoons, or 40 g of new pressed ones - 1.5 cups of warm milk
- 1.5 tbsp.
l sugar - 1 tsp salt
- 1 egg
- 1 tbsp vegetable oil
- 30 g fat sour cream or l.

- A form with thick walls and a bottom - this is either a glass form or a metal frying pan
Inside:
- 600 g of peeled potatoes
- Two onions (greenish if desired)
- Salt
- Peppercorns
- Butter for the filling 20-30 g (a little vegetable can be used)
Let's get started:
We dilute the dry yeast in warm milk with sugar, let it sit until dissolved for about 10 minutes.
In the sifted flour, make a small mound and pour in the egg, sour cream, and butter.
Add salt to milk with yeast.
Dissolve and pour into flour. Mix the dough. It must lag well behind your hands and be elastic. Roll it into a bun and place it in a warm space, under a towel, to proof.
We peel the potatoes, cut them into thin slices, use a vegetable peeler, cut the onion into half rings, put everything in a bowl, add salt, mix... Leave for 20 minutes with the lid on.
Potatoes will provide excess water. Drain it, when filling the pie, squeeze it out thoroughly... grease the mold with oil, divide the dough into two pieces, top and bottom.
One more. Roll out the bottom layer so that the sides come out higher than the mold.
Lay out the filling, sprinkle with pepper, green onions and add pieces of butter as desired... roll out the 2nd layer. Cover the top with a second layer of dough; if there is a lot of dough on the pinch, trim off the excess...pinch the edges.
Decorate as desired... Use a fork or knife to make holes in the back layer of the pie...
Leave it to rise for 20 minutes under a towel on the stove. As it suits, brush with a beaten yolk, a teaspoon of milk, and a teaspoon of milk. (Cover the top of the pie with foil, the walls of the mold should be as tall as possible, otherwise the foil will stick) If you covered it with foil, bake for 30 minutes, then remove the foil and finish baking... I didn’t cover it... Place the pie in a previously preheated oven to 200 degrees. Reduce the temperature to 170 degrees.
My pie quickly browned and I covered it with damp snow-white paper.
Bake the cake for a long time.
To ensure that the pie is baked and not burnt, watch the top... We check the pie with a wooden skewer during the baking process... Raw potatoes immediately feel... a little tough... let's finish baking.
Wet the paper from time to time and close the top... If the bottom of the pies in the oven gets burnt, be sure to place a bowl of water down!
We take out the finished pie, quickly grease it with oil, cover it with foil, wrap it in a towel, and wait for it to cool completely.
Ordinary recipes for fragrant potato pies
A fairly common, satisfying and economical dish is a pie with potatoes in the oven. Potatoes may not be the only ingredient in the interior. - Divide the resulting base into two parts and leave for a couple of minutes. While we prepare the filling;
- Peel the potatoes and cut into narrow strips, chop the onion into half rings. In a bowl, mix both components, add salt, pepper, and sprinkle with vegetable oil;

- Cut the onion into small cubes, pass the garlic through a press or just finely chop it. Sauté them in heated butter until soft. It is important that the onions do not burn. Otherwise, the finished dish will have a bitter taste;
- In a separate cup, mix the cream with the eggs. Leave one yolk for greasing the pie. When the mass becomes homogeneous, add grated cheese and chopped herbs to it;
- Add salt and spices to the entrails base. Grate the potatoes on a large grater or chop them into small cubes and add them to the entrails;
- Divide the defrosted dough into 2 parts. Place one on a baking sheet lined with parchment. We spread the filling, which we cover with a second layer of dough. Carefully pinch the edges. Brush the top with beaten yolk;
- Bake the cake for 50 minutes at 200 degrees. Serve the baked goods hot!
The usual recipe for pie with potatoes in the oven from lean dough
This recipe is not bad for those who are fasting. It contains no products of animal origin. Therefore, both adherents of a healthy lifestyle and vegetarians will like it. It is prepared very quickly from ordinary ingredients that can be found in everyone’s refrigerator.
The difficulty in making potato pies is that if you put raw potatoes in the filling, they may not have time to be ready. With all this, the dough will already burn. Therefore, if you do not have experience in making such baked goods, then it is better to make pies from boiled potatoes. In this case, you will be sure that the dough is baked and the inside is ready! We use a 200 ml glass as a measuring cup.
Ingredients:
- Flour – 1.5 cups;
- Water – ½ cup;
- Vegetable oil – 2-3 tablespoons;
- Salt - a pinch;
- Potatoes – 4-5 pieces depending on size;

In this case, the dough must be as dense as possible so that it can withstand the greater weight of the inside. Usually, the base is prepared with yeast, cheese or cottage cheese. You can take 125 grams of soft curd cheese, mix with 3 tablespoons of milk, 4 tablespoons of vegetable oil, a pinch of salt, ½ teaspoon of baking powder, a chicken egg and 200-300 grams of flour. We make soft and elastic dough without using yeast.

Raw potato pie
Now I offer you the newest potato pie recipe. There is a minimum amount of dough in this recipe, only to bind the ingredients; the inside of potatoes, mushrooms and spices predominates. Unlike other recipes, this pie is made from raw potatoes.
The most important thing in this recipe is to chop the potatoes finely. The oven will do the rest for you!
Although I had a little doubt about whether the potatoes would have time to cook, since they were still raw, everything went fine.
The raw potato pie turned out very tasty! A good candidate for pizza!
- Raw potatoes 500 g.
- Onion 1 small
- Chanterelles or any other mushrooms (you can do without them) 100 g.
- Garlic 1 tooth.
- Salt, pepper, dried dill, parsley to taste
- Vegetable oil 50 ml. + for frying mushrooms
- Egg 1 pc.
- Sour cream 150 g.
- Flour ½ tbsp.
- Baking powder on the tip of a spoon
- Peel the potatoes, cut into small cubes no larger than 5x5mm.
- Finely chop the onion and add to the potatoes.
- Finely chop the mushrooms and boil the forest mushrooms for 5 minutes from the moment they boil in salted water.
- Lightly fry the mushrooms in vegetable oil.
- Beat the egg with a mixer with vegetable oil, add sour cream, salt, pepper and flour mixed with baking powder.
- Place potatoes, onions and mushrooms into the purchased dough, add spices to taste and garlic passed through a press.
- Stir everything well and place in a mold lined with baking paper. I have a mold measuring 20x20 cm.
- Bake the raw potato pie in an oven preheated to 180 degrees for approximately 50-60 minutes until the potatoes are browned and ready.
- The potato pie is ready, cool it slightly and serve. Bon appetit!
