Bagels

Bagels made from curd dough

This recipe is very simple, and the bagels turn out very tasty, soft, tender, and fragrant. You can use whatever your heart desires as the interior. My recipe presents two options for the inside: with sugar and with cheese. Cottage cheese dough is also attractive because it is easy to work with; you can prepare it in the evening, and in the morning prepare fragrant, fresh pastries for breakfast. Products made from this dough can even be frozen, and later thawed and baked. In general, if you are interested, try it! Even a novice cook can create these bagels!

Butter bagels with entrails

I would like to offer a recipe for rich bagels. I have nut and poppy interior, but you can use anything. The dough is made using the sponge method. Products made from this dough are much tastier and remain soft and fresh for a long time. You will spend an extra 20 minutes, but the result will amuse you. The dough is soft and airy.

Christmas coconut bagels

These crescent-shaped cookies are usually baked for Christmas. Add nut flour, often almond flour. The creator, Maria, from Germany, even allows baking with regular flour. I decided to add coconut, it stands out unobtrusively and adds a crumbly texture to the liver.

Coconut nut bagels

Wonderful cookies. This is all from the same series, as I have determined for myself, of “gift baked goods”, suitable as a present for the occasion. Easy to make, very homey, “comfortable”.

Cottage cheese bagels

Friends, cottage cheese bagels are the taste of our youth. The recipe is very simple and delicious.

Yeast curd bagels

You can use cottage cheese to make not only cheesecakes and casseroles, but also a variety of delicious pastries. For example, bagels. Soft and airy, with a fragrant crispy crust, bagels are quite good for evening tea.

Bagels . Bagels are baked goods with crescent-shaped insides. It is precisely because of its shape that this bun got its name - with its twist it resembles horns.

The inside of bagels can be very different: cinnamon, raisins, jam, condensed milk, cottage cheese, nuts, jam, marmalade, etc.

The dough can also be anything: yeast, shortbread, curd, puff pastry.

Bagels come in different shapes and sizes, but the smaller they are, the better they taste. At home, bagels are usually made in a shape very similar to croissants. To do this, the dough is rolled out into a circle, and then cut into elongated triangles with a knife. The inside is placed on the wide edge, and then the “triangle” is rolled up from the wide edge to the narrow one. The resulting tube can be slightly bent to give it a crescent shape.

From jam, preference should be given to thick jam or preserves; it is better to take apple or apricot jam. Under the influence of high temperatures, the jam becomes watery. This must be taken into account when securing the edges of the bagel. Otherwise, the jam will leak onto the baking sheet and burn.

Cottage cheese can be used as a filling, or it can be added directly to the dough.

If marmalade or fruit is chosen for the inside, then it is best to bake bagels with yeast dough. They turn out light and fluffy.

Bagels should be baked on a baking sheet lined with parchment paper. The oven must be preheated to 180 °C and only then place the buns there. Bake bagels for approximately 20-30 minutes. Readiness is indicated by the even golden color of the baked goods. It is not recommended to immediately remove the bagels from the baking sheet after production. It is necessary to give them a little time to cool.

Making bagels at home is easy. There are a lot of recipes.

How to bake puff pastry bagels at home using a step-by-step recipe with photos

Such bagels are not unique to our table. They are sold in virtually any store. But homemade baked goods are much tastier and healthier than store-bought ones. I am happy when my children enjoy eating my bagels. I think this is the greatest happiness of any mother - to see how they gobble up your baked goods with appetite.

Puff pastry bagels with entrails

Ingredients

Butter 500 g
Water 0.5 l
Flour 4.5 stacks
Vinegar 3/4 tsp.
Salt 0.5 tsp.
Jam taste
Sugar taste

The flour cup has a capacity of 250 ml.

How to choose ingredients

  • In such recipes, margarine is mainly used, because it is much cheaper than butter. I am not a fan of such savings - modern margarine consists of inedible ingredients. Therefore, if you are cooking for children, buy good butter. It consists of cream and has a short shelf life. If you see a yellowish coating on the surface of the oil, be sure to cut it off. These are harmful carcinogens that were formed as a result of thermal action. In other words, the oil was warm for some time.
  • For puff pastries, use premium flour. Also pay attention to its packaging. It must be made from materials that allow air to pass through, otherwise the flour will have a damp, musty smell. Shelf life is also important for flour. An expired product does not spoil very obviously, but lumps may appear in it and pests may appear. Also, very fresh flour is not very suitable for baking. If it was produced less than a month ago, do not buy it. This product should infuse for about 2 months. Then you will get the desired result in baking.
  • Choose jam according to your own taste, no matter what fruit or berries it is made from. But it should be quite thick so that the inside does not leak out during baking.

Step by step recipe

  1. Pour 500 ml of water into a bowl.
  2. Add 0.5 tsp. salt and 3/4 tsp. vinegar. Stir.
  3. Now add 4 cups of sifted flour and knead the dough.
  4. Sprinkle 0.5 cups of flour onto your work surface and place the dough on it. Knead the dough until it stops sticking to your hands. The dough should absorb this 0.5 cup of flour and turn out quite soft.
  5. Cover the dough with a bowl and leave for some time.

Knead it from time to time to make it more elastic.
  6. Knead the dough into a log, press it down a little and cut it in 4 places. It is shaped like a trefoil leaf.
  7. Pull the edges and roll them out with a rolling pin. Then roll out the middle. You will get an “envelope” for butter.
  8. Place 500 g of butter in the center of the “envelope”. Distribute it sparingly throughout the center of the dough.
  9. Carefully fold the edges of the dough to form a square. The butter must be one hundred percent covered with dough. Otherwise, during rolling, some of the oil will be squeezed out.
  10. Knead the dough with your hands until it forms a rectangle. Now roll it out with a rolling pin.
  11. Fold the dough into quarters and place it in the refrigerator for 30 minutes.
  12. After half an hour, take out the dough and carefully roll it out to the original size.
  13. Fold the dough again, folding it into 4 folds. Place it in the refrigerator for 20 minutes.
  14. Roll out again, fold in 4 times and put in the refrigerator for 10 minutes.
  15. Roll out the dough quite thinly, about 2-3 mm wide. Now you can cook from it.
  16. Cut the rolled out dough into small triangles.
  17. Place a spoonful of jam on the wide part of the triangle.

Roll it up, starting from the wide part.
  18. Dip the bagel in sugar and place on a baking sheet.

It can be covered with parchment paper or greased with oil.
  19. Bake at 220 degrees until golden brown.

Video recipe

I recommend watching this video recipe. These puff pastry bagels can be made with jam or marmalade.

Adviсe

  • To save time, you can buy puff pastry at the store.
  • Salt is added to the dough for elasticity and elasticity, not for taste. Therefore, do not ignore it during production.
  • Vinegar is also needed for proper texture.
  • Use cool water, but not ice water. Warm water is not suitable for this test.
  • The fattier the oil, the fluffier the dough will be.
  • You need to roll out the dough very carefully.
  • You only need to cut this dough with a sharp knife, otherwise it will crumple.
  • The temperature for baking such dough must be at least 220 degrees. At low temperatures, the oil will leak out and the bagels will turn out dry.
  • Puff pastry bagels can be made with jam. In this case, do not forget about the golden rule; the jam must be thick enough.
  • Sugar for sprinkling bagels can be mixed with vanilla or cinnamon.
  • For flavor, you can add a little lemon zest to the filling. It mixes very well with apricot or orange jam.
  • You can put a raisin or a piece of dried apricots in the middle of any bagel.

How to decorate and what to serve with

Bagels can be sprinkled with cocoa powder.
Sweet sand remains in its original form after baking. In other words, it can crunch. Not many people like this, but sugar is needed for sweetness, because we used unleavened dough. In this case, you don't have to dip the bagels in sugar. And after baking, while they are still hot, sprinkle with sweet powder. It has a delicate texture and just the right amount of sweetness. Such baked goods will be wonderful and no less tasty than with regular sugar. Bagels are served as a dessert with tea, cocoa, milk or coffee. It can be served not only with hot drinks. Compote, juice or fruit drink are also suitable. This is especially true for children's parties.

Recipe options

It is very difficult to live without sweet pastries. I think that almost all housewives will agree with me. I would like to recommend a few common recipes.

  • Bagels made from yeast dough are very fluffy and tasty.
  • Shortbread dough bagels are light and crispy.
  • The dough can be prepared with different dairy products. One option is a recipe for kefir bagels.
  • Curd bagels have a very tender taste.
