A stunning salad and also significant, considering that the coming year is the Year of the Horse. Therefore, I will definitely cook it, maybe instead of chicken I will use turkey or even duck meat. The only thing that raised doubts was whether I would get a horse's head like in the picture. ). But, if I already have a ready-made stencil at hand, then I consider my fears in vain. These days, everyone is starting to think about what to prepare for the New Year 2014, the year of the horse. They put aside or bookmark the recipes they like so that they can prepare delicious festive dishes at the right time. the “Horse” salad for the New Year - tasty, unique and extremely beautiful, a true decoration for the table. Therefore, I want to share my experience with you and tell you how to prepare and decorate the “Horse” salad simply and quickly. Any housewife can handle such production, and the result will outshine all expectations.
Ingredients:
- 2-3 potatoes
- 1 chicken leg
- 350 gr. champignons (raw)
- 1-2 cloves of garlic
- 3-4 carrots
- green onion
- 1 head of regular onion
- 1 blue onion
- 100 gr. hard cheese
- 2 testicles
- several dark olives
- 40-50 gr. smoked cheese "Kosichka"
- sunflower oil
- salt
- mayonnaise
- dark ground pepper
Manufacturing:
- Carefully wash the potatoes and carrots, fill them with cool water and boil them “in their uniforms” until tender. Drain the water, cool, clean.
- Boil the chicken leg in salted water until tender, cool, remove the skin, separate the meat from the bones and cut into small pieces, as for the Sunflower salad.
- We clean the champignons, wash them, cut them into medium pieces and fry them in sunflower oil, add the peeled and chopped onions after 10 minutes, add salt, mix, and fry until tender.
- Boil the eggs hard (7-10 minutes), cool and peel.
- Peel the garlic, grate it on a small grater or squeeze it through a press, add it to the mayonnaise. If the mayonnaise is very thick, you can dilute it a little with cool boiled water and stir.
- We place the flat dish on which we will lay out the “Horse” salad, upside down, to a sheet of paper or tracing paper. Using a pencil, trace the outline of the dish and cut out the resulting circle. On this circle we draw the face of the future horse and carefully cut it out. Place the scraps of paper with a hole inside in the shape of a horse's head on a plate, moisten it with water so that the paper holds well and does not move to the side. Now not only will it be easy to prepare a salad in the shape of a horse, but the dish will remain unstained while it is being laid out.
- Three potatoes on a large grater, as for Mimosa salad. Place it on the dish as the first layer, filling the cut hole. Lightly salt, sprinkle with ground black pepper, grease with mayonnaise mixed with garlic (this can be easily done with a silicone brush).
- Place chicken meat cut into small pieces on top. Pepper and grease with mayonnaise.
- Place fried champignons with onions. Lubricate with mayonnaise again.
- Grate eggs and cheese on a large grater. Mix. Lay out the next layer.
- We cut out the ears for the horse by cutting a piece of carrot at an angle and then cutting it in half. Grate the remaining carrots on a large grater. Lubricate the salad with mayonnaise on all sides. Cover the top and sides of the salad with a layer of grated carrots. We leave a few carrots, we will need them when decorating the salad. Carefully remove the paper, holding the edge of the salad with the flat side of a knife or a culinary spatula. We attach “ears”, they will help us navigate where to create the harness and eyes.
- We divide the “Pigtail” cheese into separate strips, and then into thin fibers.
- Decorate the “Horse” salad. We clean and wash the green and blue onions. Cut the blue onion into rings. We choose 2 suitable size rings for the horse's bridle. We make a bridle from green onions, carefully insert one end of the onion under the salad, and press the other end with a ring of blue onions. When all the details of the bridle are laid out, fill the centers of the onion rings with the remaining grated carrots and compact them.
- We make the eyes, eyelashes, nostrils and mouth of the horse from dark olives.
- We remove one of the horse's ears, lay out the bangs and mane from the cheese broken into fibers. We lay the ear back, pressing the bangs and mane.
- The “Horse” salad can be served immediately after preparation, or you can let it sit in the refrigerator for several hours so that it soaks in better and becomes even tastier.

Homemade mayonnaise, also apply a little on the cucumber layer, and on the potato layer so that the salad does not come out dry. In general, see for yourself how much you need to add or subtract. I will write my product layout below. If it is expensive to eat salted salmon, then you can exchange it for any other fish or canned salmon, for example, pink salmon. Dedicate a little time and effort to this dish, and you will get an extremely tasty salad for the new year.
Ingredients for “Horse Salad”:
- Salmon (lightly salted) - 300 g
- Potatoes (boiled in their jackets) - 600 g

Recipe for “Horse Salad”:
For decoration:
Dark olives 2-3 pcs.
Cucumber 60 g.
Cherry tomatoes 4 pcs.
Cut the salmon into small pieces.
Chop the onion. Peel the cucumber and cut into small cubes. Place salmon on a plate and form a horse's head.
Place a moderate layer of onion, create a mesh of mayonnaise.
Place a layer of cucumber.
Grate the carrots on a small grater and place in an even layer, creating a mesh of mayonnaise.
Grate the potatoes on a large grater, shape the horse's head, create ears, a hole for the nostril and a recess for the mouth.
Coat the potatoes with mayonnaise so that they do not drip.
Grate the whites on a small grater and apply to the head and ears.
Grate the yolk on a small grater and lay out the mane, slightly shade the middle of the ear and nostril.
Create an eye from half an olive.
We make the outline of the eye and mouth from thinly sliced olives. Place cucumber slices and cherry tomato halves on the sides of the dish.
Leave the salad in the refrigerator for 2 hours to soak.

Ceremonial salad “Horse” for the year of the tree horse
The coming of the New Year is getting closer and closer. According to the eastern calendar, 2014 is the Year of the Blue Horse. Since I really like salads aimed at a specific theme, I couldn’t pass it up and decided to make a delicious puff salad in the shape of a horse.
In my family, the Year of the Horse is special because my mother, brother and daughter were all born in the Year of the Horse. This salad is a small rehearsal before the New Year's feast. Based on the composition of the salad, I can safely say that it is not just tasty, but extremely tasty.

How to prepare “Horse Salad” step by step with photos at home
To make the salad, we need the following products: chicken fillet, large carrots, onions, eggs, fresh champignons, canned peas and corn, smoked prunes, mayonnaise, sunflower oil and parsley.
Boil the chicken fillet, cool and cut into cubes. Place on a plate in the shape of a future horse. We will grease all subsequent layers with a thin layer of mayonnaise.
Cut one onion into cubes, marinate it in apple cider vinegar, squeeze and place on top of the chicken.
Place chopped prunes in the next layer. I always use smoked for salads, but dried is also suitable. Set aside a couple of pieces for design.
Mix peas and corn in one container, place a layer on top of the prunes.
Fry finely chopped mushrooms and the remaining onion in sunflower oil. Let cool and place corn and peas on top.
Boil the eggs, divide them separately into whites and yolks. Grate the yolks and place on top of the onion-mushroom layer.
Grate the boiled carrots on a small grater and place the top layer. Press down the salad with your hands.
Let's start decorating the horse. We form a face from protein, nostrils and eyes from prunes. We make horse mane and bangs from smoked suluguni-pigtail cheese. Salad ready. Give it a couple of hours to soak and you can serve. Bon appetit!

I didn’t show it in a separate step, because I cooked everything in the evening and cooked it in the morning. The work was meticulous, I barely had time to create it in order to remove it before the darkness. I even had to remove it on a catchy tone, there wasn’t a lot of light. I wrote the production time as 2 hours, in principle it is, but in reality I spent 4, so as the shooting space is at the other end of the apartment, the process is as follows: I laid out a layer. I took the plate to the balcony, brought it, laid out the next one, went again and so on all the layers. And removing the food is absolutely something until you bring everything there, later it turned out I forgot something, at the moment I’m already trying to lay out everything according to the list 😄 So don't judge me harshly ☺
Regarding cheese, we have a lot of it everywhere, it’s in the photo, if you untie it, it looks like this. If you divide it into fibers, then you can create all sorts of things from it.

Olya, I understand that in almost all European countries (in Germany for sure) there are Turkish markets. So, take the Tel Peynir cheese there. This is Suluguni. “Tel” translated from Turkish and Azerbaijani means fiber, hair, “peynir” means cheese. Tel peynir is sold braided and tastes salty.
