I just took it from the refrigerator, cut it with a knife in a bowl, mixed it with cottage cheese, a little flour, and then kneaded it on the table and slowly added flour. I constantly add flour by eye and bring it to the mixture, but it doesn’t turn out to be more than 2 glasses, well, maybe 2.5. But the baking time doesn’t agree. Firstly, my oven allows you to set the temperature to 160 or 180 (from the closest ones), I took 180, baked for 15 minutes, looked - they were so pale, and added another 7 minutes. It turned out surprisingly tasty)). Next time I think I’ll add vanillin or cinnamon, I’ll experiment))

Ingredients:
- 200 g cottage cheese 5% fat;
- 100 g butter;
- 200-250 g flour;
- 1/2 tsp vanillin;
- 1 tsp baking powder;
- 1 tbsp sweet powder;
- 100 g sugar (for sprinkling).
Manufacturing:
1. Add sweet powder and softened butter to a bowl with cottage cheese and grind it all to a homogeneous mixture using a food processor.
2. In a separate bowl, mix flour, baking powder and vanilla. Then add this mixture evenly in parts to the kneaded curd mass. You should get a soft, homogeneous dough.
In the dough, huge pieces of cottage cheese are unacceptable, but small pieces are completely acceptable.
3. Sprinkle the work surface with flour and lay out the dough. Knead it with your hands and roll it into a layer 5 mm wide. Using a glass, cut out circles approximately 7 cm in diameter.
4. Dip any circle into sugar on both sides, then fold it in half - you get a semicircle that needs to be folded into a quarter of a circle. You will get a triangle. Place the products in the oven, preheated to 180 degrees and bake for 20-25 minutes.

- 300 g flour;

1. Grind the cottage cheese well with yogurt and sugar into a homogeneous mass. Add the egg and mix again.
2. Add sifted flour evenly and finally baking powder. Knead the dough until it becomes elastic and homogeneous.
3. The dough has been kneaded and now we are starting to shape our products. Roll out the dough into a layer 6 mm wide and cut out circles using a glass. Any circle must be rolled in sugar, then folded in half with the sweet side inward. Roll the purchased semicircle in sugar again and fold it in half again - you get a triangle, which also needs to be rolled in sugar.
4. Place the products, sugar-free side down, on a baking sheet lined with parchment. Bake for 20 minutes at 190 degrees until the crust is browned.

Remove the butter from the refrigerator in advance so that it is very soft.
Place the cottage cheese in a deep bowl, mash it a little, especially if it is grainy. Add oil product. Stir until the mixture becomes homogeneous.
Add flour and baking powder. Do not add all the flour at once, as depending on the moisture content of the cottage cheese, it may take a little less. Continue stirring the contents. Use a spoon at first.
Then, when it becomes difficult to mix with a spoon, start working with your hands. Knead the dough, roll it into a ball. Hide the lump in a bag and place it on the refrigerator shelf for 40 minutes.
Roll the chilled dough into a thick sausage. Divide into three parts.
Roll each part into a flat cake approximately 3 mm wide. Cut the circles using any method.
Make triangles. To do this, pour sugar on a plate. Take a circle of dough in your hands. Dip one side into the sweetness.
Dip the folded piece into the sweet crystals again and fold it again.

- Add vanillin and soda. Then add flour in two additions. Stir vigorously to create a mixture. If you need to add flour, add little so as not to clog the dough.
- Cover the finished dough with a towel and leave it alone for 30-40 minutes.
- Roll out into a layer (thickness 3-4 mm), using any device, cut out circles. Determine the size yourself, almost everyone loves small cookies, but the standard is round cookies the diameter of a glass.
- Place sweet sand on a saucer. If you like cinnamon, you can add it to the sweetness. From time to time I add coconut flakes, it makes the cottage cheese cookies taste unusual.
- Dip the rounds in sugar, roll the sweetness inward. Dip into the grains again, and again wrap into a triangle. The sweetener should also be on the outside of the cookies.
- Place the triangles on a baking sheet, lined with buttered baking paper.
- Bake at 180°C for 20 minutes until the cookies are golden brown.

- Sift most of the flour, combine with baking powder and vanilla. Add to the butter-curd consistency and knead the dough by hand.
