Chicken Meatball Soup Recipes
Chicken Meatball Soup Recipes
Chicken meatball soup is a healthy and tasty dish that is suitable for the whole family. It will take up space in the heart of both an adult due to its usefulness, richness and satiety, and a child, because it is very appetizing. It can be called both ordinary and nutritious. In terms of the content of the necessary parts, it has no equal.
The soup, which came to us from Europe, became widespread in Russia during the reign of Peter the Great. The main component - meatballs - comes from Italy, meaning “small balls of meat”. Some translate this word as “fry,” although “small balls of meat” describe the meatballs themselves much better.
When making meatballs, minced meat (in our case chicken), spices, herbs and bread soaked in milk or water are used. There are a huge number of options for preparing the dish. The article will provide several recipes.
Traditional recipe with minced chicken
Traditional step-by-step recipe with the addition of sweet peppers. Making this soup takes half an hour, and the taste is wonderful.
To create this dish we will need:
- Medium carrots - 1 pc.
- Egg - 1 pc.
- Sweet pepper - 1 pc.
- Potatoes - 5 pcs.
- Minced chicken – 200 g
- Onion - 1 pc.
- Salt, pepper to taste
- Greenery
- Semolina - 1 tbsp. spoon
- Meat broth (optional)
Cooking:
IMPORTANT ! You should pour water over the potatoes so that the starch comes out.
- To make your work easier, you need to prepare the vegetables first. Finely chop the sweet peppers and onions, cut the potatoes into small pieces, and grate the carrots (large). Part of the onion will be used for sautéing, and part will be used for minced meat.
- Place part of the onion in a hot frying pan and sauté in vegetable oil. Add carrots and bell peppers, fry until light golden brown and turn off the pan.
- Let's take minced meat. Add chopped onion, egg, salt and pepper to taste (and other spices), and herbs. It is important to keep in mind that it is the meatballs that give the dish all the “charm”, so the spices should be perfectly felt. Add semolina and leave the minced meat for 20 minutes so that the semolina swells and makes the minced meat tender.
- While the minced meat is standing, heat the broth. After 20 minutes, take a bowl of minced meat, wet your hands in cool water (if you don’t want to get your hands dirty, use a teaspoon dipped in cool water) and start rolling the balls.
- After the broth boils, throw the meat balls into the pan. After 12 minutes, throw in the potatoes, and a little later - carrots with onions and sweet peppers.
- The soup is ready. Serve with sour cream and herbs. With a crispy piece of baguette, the dish will become a real hit on your home menu.
IMPORTANT ! Let the dish brew under the lid, so it will become most fragrant.
With dumplings
This recipe can no longer be called easy, because dumplings will be used in its preparation. But the result will amaze you with its taste and smell.
To prepare the dish we will need:
- Meat broth
- Potatoes - 5 pcs.
- Carrots - 1 pc.
- Onions - 2 pcs.
- Spices to taste
- Minced chicken – 200 g
- Egg - 2 pcs.
- Bread - half a loaf
- Greenery
- Flour - 100 g
Let's start making:
- First of all, take minced chicken, cut 1 onion into it, add an egg, spices to taste. Soak the bread in water until mushy, add to the minced meat. Mix all the ingredients and place the container with minced meat in the refrigerator for 15 minutes.
- Preparing the dough for dumplings. Beat the egg with salt and add flour, knead the stiff dough.
- Let's start cutting vegetables. Cut the potatoes into small cubes, grate the carrots, and chop the onion finely.
- Heat a frying pan, pour vegetable oil and add onions and carrots. They should acquire a golden color, after which we remove the pan from the heat.
- Heat the broth and add potatoes. Immediately after adding the potatoes, we begin adding minced meat balls to the pan. This needs to be done quickly, because the cooking time for meatballs and potatoes is approximately the same.
- After 5 minutes, add the dumplings. To do this, wet a teaspoon in cool water, take the dough and form a dumpling. Put it in a saucepan.
- Then add the sautéed vegetables. Salt and pepper.
- Your dish is ready in 6 minutes! Now you can give a portion to anyone and wait for them to ask for more.
IMPORTANT ! We advise you not to skimp on spices, because the soup should turn out fragrant and have a special taste thanks to the taste of the meatballs.
With tomatoes
We prepare this soup in the same way with chicken meatballs, but now we add tomatoes. This combination of flavors and excellent presentation will make it a real work of art.
For production we will need:
- Potatoes - 5 pcs.
- Onion - 1 pc.
- Tomatoes - 4 pcs.
- Garlic - 3 cloves
- Egg - 1 pc.
- Minced chicken - 200 g
- Greenery
- Spices to taste
- Bread - 1/3 loaf
- Milk 100 g
Cooking:
- We prepare meatballs according to the scheme already familiar to us. Chop the onion into the minced meat, add bread soaked in milk, herbs, a sufficient amount of spices and an egg. It is necessary to stir the acquired product well for a uniform taste.
- Cut the potatoes into small cubes.
- Let the meat broth boil and throw the potatoes into the bowl.
- We wet our hands in cool water and start rolling balls. Add them to the soup.
- Pour boiling water over the tomatoes and peel off their skins. Finely chop or grind with a blender, add finely chopped garlic and herbs. Pour the resulting mixture into the potatoes and meatballs and cook for another 20 minutes.
- Pour the soup into bowls, garnish with herbs and serve a fragrant baguette. Then your dish will amaze not only the appetite, but also the eye.

Soup with meatballs is such a common and ordinary dish for our cooking. Almost every housewife has prepared such a soup in her own kitchen at least once; each has her own tricks and secrets for making this dish. The dish is far from overseas, and it can be prepared in completely different ways. The soup can be made with the most or least calories, depending on who you like. The main process of making this dish is, of course, minced meat. The meat for making meatballs must be fresh; it is better to add onions, spices and liquid to the minced meat - boiled chilled water or milk, preferably cool. You can use any kind of meat, from chicken to beef. But minced white meat has its undeniable advantages: it’s quick to make, the meatballs are more tender, and it’s also a good option for those on a diet, because chicken or turkey breast has less calories than reddish meat. If you want to create a dish that is as low in calories as possible, instead of noodles or pasta, add buckwheat, rice or egg groats. Now I will show you how to make your own meatball soup, which is simple and quick to prepare and even tastier to taste.
Step by step recipe
Let's prepare all the ingredients to make our warming soup. We prepare the minced meat as follows: grind the chicken fillet in a blender or meat grinder along with one onion. Add water or milk, mix the minced meat well. Pepper and salt the minced meat to taste, add herbs. In this case, dill works well. Leave the minced meat in the refrigerator for at least an hour
While our minced meat is infusing in the refrigerator, we peel the potatoes and carrots, then chop them into large cubes. The carrots can be cut or grated, whichever you prefer. Pour the vegetables with water or broth and place on low heat until the vegetables are half cooked.
With wet hands, form small meatballs from the chilled minced meat. We wet our hands with cool, cool water so that the minced meat does not stick to our hands and the meatballs get an excellent shape. When the water with our vegetables has already boiled, carefully throw the meatballs into the broth. Mix thoroughly so that the meat balls do not stick to the bottom of the vessel and stick together. If you want to create a soup with the most calories, fry the meatballs in butter until golden brown, and then add to the soup.
After half an hour, add vermicelli or any other small pasta to the soup, stir thoroughly and cook the dish until cooked.
Chop the onion into small cubes and finely chop the greens. Remove the soup from the heat, add oregano or other spices to taste, add the onions and herbs and cover with a lid. Leave the dish for about 10 minutes. If you want to create the most tender dish, first fry the onion in butter. In this way, the soup will acquire a creamy smell and delicate taste.
Serve the finished soup hot to the table. Excellent mixed with freshly baked garlic buns or buttered loaves. Bon appetit!
