Frozen cherry pie; 8 recipes for delicious cooking at home

Frozen cherry pie - 8 delicious recipes to make at home

When the cool season comes, enjoying your favorite berry desserts is not as often as you would like. The way out of the situation is summer freezing of the main ingredients. This is the only way to entertain your family and friends with ordinary treats, even in the most severe frosts, for example, making a pie with frozen cherries.

Delicious kefir dessert in a slow cooker

Usually desserts such as pies dry out very quickly and become tasteless. Naturally, juicy berries and such a versatile ingredient as a drink will help improve the situation.

  • 400 g frozen cherries;
  • 200 ml kefir;
  • 150 g granulated sugar;
  • 2 testicles;
  • 3 tbsp. flour;
  • 1 tsp. slaked soda;
  • 3 tbsp. l. vegetable oil;
  • 50 g cow butter (to grease the mold);
  • ½ tsp. vanillin.
  1. Fluff two chicken eggs with a mixer. Add sugar and continue the function until the ingredient dissolves.
  2. Pour in the high-fat drink (heated) and slaked soda, mix.
  3. Next we add vanillin and vegetable oil.
  4. Sift the flour directly into the bowl, then knead the dough. It should not be very thick.
  5. Grease the multicooker container with softened butter and add half of the kefir base. Spread frozen berries over the top sparingly. Pour in the remaining dough, smoothing the edges with a spoon or knife.
  6. Turn on the device in the “Baking” mode. Cook the dish for 80 minutes.
  7. From the outside, the treat will seem a little pale, but this is the highlight of making all the baked goods in a slow cooker.
  8. After the pie has cooled, remove it from the bowl, transfer it to a dish, sprinkle with sweet powder and serve with hot tea.

Advice! To prevent the cherries from burning when baking the pie, do not place them very close to the edges of the bowl.

Pie with frozen cherries and cottage cheese

To create familiar pastries that are more healthy and satisfying is not a problem - add a little cottage cheese to the usual list of ingredients. Believe me, the result of culinary achievements will be so tasty that even the youngest members of the family will appreciate it.

Products needed for the test:

  • 300 g flour;
  • 150 g granulated sugar;
  • 150 g butter;
  • 1 testicle;
  • ½ tsp. salt.
  • 100 g granulated sugar;
  • 200 g cottage cheese;
  • 400 g frozen berries;
  • 1 testicle;
  • 100 g sour cream.
  1. The inside of frozen cherries comes out very watery, which naturally affects the condition of the dough. To avoid this aspect, you need to defrost the berries, throw them in a colander so that they drain, and then squeeze them a little with your hands. If even after such manipulations there is a lot of juice left in the cherry, you will have to roll it in starch before using it.
  2. All ingredients for the dough must be refrigerated.
  3. Mix the sifted flour with salt.
  4. Grind the egg with sugar.
  5. Melt the butter in the microwave.
  6. Mix all the ingredients together, bringing the result to homogeneity.
  7. Roll the dough into a ball, wrap it in film and put it in the refrigerator for several hours.
  8. To make the inside, grind the cottage cheese through a fine sieve or twist it through a meat grinder a couple of times.
  9. Beat the egg with a whisk with sweet sand.
  10. Combine cottage cheese with egg mixture and sour cream. Mix thoroughly.
  11. Divide the dough in a ratio of 1:2. We roll out a huge portion around the perimeter of the mold so that the edges of the cake cover the sides.
  12. We first fill the prepared base with the curd inside, and distribute the frozen berries on top.
  13. Cover the pie with another layer of dough, rolled out from the smallest piece.
  14. Connect the edges with your fingers and bake in a preheated oven for 30 minutes.

After the treat has cooled, decorate it at your own discretion - with chocolate glaze, sweet powder, or leave it as is.

Quick puff pastry

Sometimes there just isn't enough time to create delicious baked goods. Use ready-made puff pastry for cherry desserts, then the process of making desserts will become virtually invisible.

How to choose the right products

  • I use the freshest compressed yeast . It is very important that they are of high quality, otherwise the dough may not rise. The color of the yeast should be uniform, pinkish-cream, beige or grayish. When purchasing, be sure to look at the release date and shelf life.
  • Pressed yeast can be replaced with dry yeast in an amount of 3:1 - instead of 30 g of new yeast, you need to take 10 g of dry yeast.
  • Use only the highest grade flour . Be sure to sift it. Thanks to this, the dough will rise better and no impurities will get into it.
  • You can take milk of any fat content . It must be heated to a temperature of 35-40 degrees. You can replace some of the milk with plain yogurt or kefir.

Preparing the dough

  1. Mix 50 g of yeast and 50 g of sugar in a bowl.
  2. Add 250 ml of milk at a temperature of 35-40 degrees.
  3. Add 300 g of flour until the dough mixture resembles thick sour cream.
  4. Stir and place in a warm space to ferment. You can cover with a towel or cling film.
  5. The finished dough should increase in volume and begin to settle.

Preparing the dough

  1. Add other room temperature products to the dough, not counting butter - 250 ml of milk, 200 g of sugar, a bag of vanilla sugar, 2 eggs, 0.5 teaspoon of salt.
  2. Pour in the remaining kilogram of flour evenly. We leave it a little in the dust.
  3. At the end of the kneading, add 100 g of butter, previously melted and cooled.
  4. Knead the dough well. It should be soft, but quite elastic and not stick to your hands.
  5. Cover the dough and place it in a warm space to ferment. Fermentation time depends on the temperature and the amount of yeast in the dough. On average, this process takes about 1-1.5 hours.
  6. You will see the end of the fermentation process by the following signs: the dough becomes 2-3 times larger in volume, its surface is smooth, convex, and when pressed the dimple slowly levels out.

Preparing frozen cherry filling for the pie

Mix 1 spoon of starch with 50 grams of sugar and roll 600 grams of cherries in the given consistency. This is necessary so that the inside is not too moist.

Forming a pie

  1. Roll out a small piece of dough and cut out a circle 10-12 cm in diameter.
  2. Place the cherries on it, not reaching the edge by about 1 centimeter.
  3. Cover the top with the same circle of dough. We pinch the edges well.
  4. Place the circle in the middle of a baking sheet lined with parchment. This will be the middle of our pie.
  5. Now we are making small elongated pies. They will be rays of sunshine.
  6. There should be 16 pies. Place them around the center of the pie.
  7. You can weave a flagellum from the remains of the dough and decorate the middle with it.
  8. Place the formed cake to proof in a warm space for 20 minutes. Brush it with lightly beaten egg.
  9. Set to bake at 180 degrees for about 40-50 minutes, depending on the size of the pie.

Yeast dough pie with frozen cherries is an excellent option for afternoon or evening tea. Before serving, it must be completely cooled and sprinkled with sweet powder.

A detailed recipe for an open cherry pie, which we will prepare without yeast. The basis of this delicious homemade pastry will be tender and crumbly shortbread dough, and the amount of juicy and thick berry inside will pleasantly surprise you. Have you tried shortbread cherry pie yet? Quickly to the kitchen!

Shortcrust pastry for the pie can be created either by hand or using a food processor. Both fresh and frozen cherries are suitable for the inside - I indicate the unblemished weight without the pit. Corn starch, of course, can be replaced with potato starch, but in the first case the inside will turn out transparent and without the corresponding starchy taste.

Ingredients:

Shortbread dough:

Cherry inside:

Making a dish step by step:

To make cherry pie, we need the following ingredients: cherries, sweet sand and sweet powder, wheat flour, butter, corn starch and egg yolks.

I prepare the cherry pie shortcrust pastry in a food processor (iron blade attachment). Read this detailed recipe to learn how to create this without electrical help. So, first, about an hour before making shortcrust pastry, we need to take the butter (110 grams) out of the refrigerator and put it on the kitchen table so that it becomes very soft. It happens that you don’t have enough time or you didn’t plan to prepare the shortbread dough, then you can keep it in the microwave for a little while on the Defrost mode - about 20 seconds. Add 100 grams of sweet powder and two egg yolks to the soft butter.

Punch everything until smooth. You should end up with a smooth and warm creamy mass. You will also have the same yellowish color of the dough if you use homemade chicken eggs.

Now, be sure to sift the wheat flour (250 grams) and add it to the fat base.

Using pulsating movements, we ensure that the shortbread dough resembles large buttery crumbs. There is no need to achieve homogeneity!

Take a baking dish (you can use not only a round one - mine is 24 centimeters in diameter, but also a square or rectangular one). Transfer the shortbread dough.

Make the bottom and sides, carefully spreading the dough with your hands.

The next day, prick the dough a little with a fork so that it does not swell or become deformed during the baking process. Now you need to put a weight on top so that the shortbread dough does not rise during baking. For this I use lentils, but you can use any legumes or special balls. Place baking paper on the dough, lay beans on top evenly and place in a hot oven for 15 minutes at 180 degrees.

While the cherry pie base is baking, prepare the filling. Wash and dry the cherries.

We remove the seeds using any convenient method.

Transfer the berries to a saucepan - there should be a total of 700 grams of cherries (weight without pits). If you use frozen berries, simply leave them to thaw directly in the pan.

Add 120 grams of sweet sand and 45 grams of corn starch to the cherries. If you use potato, 30-32 grams will be enough.

Mix berries with sugar and starch.

Place over medium heat and, stirring constantly, simmer until the cherry juice thickens. Once the cherries are in the jelly, remove the future pie filling from the heat.

During this period of time, the base for our cherry pie set. Remove the weight and put the pan in the oven for another 15 minutes so that the bottom is also baked.

This is what shortcrust pastry looks like after baking - it is already one hundred percent ready. We do not turn off the oven, maintaining the temperature at 180 degrees.

Carefully transfer the still hot cherry filling into the pan with shortbread dough and level it with a spoon or spatula.

Bake in a hot oven for about 10 more minutes at 180 degrees. I remember that I cook in a gas oven on the lower mode without convection.

Shortbread cherry pie is not bad even when hot, but it’s better to let it cool until warm. This is what the cut of the pie looks like 15 minutes after the oven - the inside is warm, it pours slowly and lazily. Unusually delicious with a scoop of homemade Ice Cream!

And then I cut the cake after it had cooled completely and even let it sit in the refrigerator for about an hour. A perfect cut comes out, while the shortbread dough remains crumbly, tender and sweet, and the thick cherry inside pleasantly sets off its sweetness with the corresponding sourness.

Polinochka, thank you so much for this delicious order - this kind of pie is vital at any time of the year. Cook for your health and bon appetit, friends!
