Basically, the same products are used for puddings as for casseroles: cottage cheese, semolina, rice, eggs, crackers, sour cream, milk. They are prepared with a variety of ingredients, but raisins are the most popular. But you can create a pudding with other products, such as various berries, fruits, spices, cocoa, chocolate, juice, rum, cognac, fruit essence, candied fruits, pumpkin, beets, spinach, nuts, bananas and other fillings. In addition, they are prepared not only sweet, but also with fish, meat and various vegetables.
But in order not to turn the pudding into an ordinary casserole, you need to know some ordinary rules:
- To make the product more luxurious, the whites are separated from the yolks. Any product is whipped separately. Then alternately combine with the rest of the ingredients. The whipped protein is introduced into the mixture at the end; it is added carefully so as not to kill the bubbles.
- For baking, special molds with a hole in the middle are used. Then the pudding will bake perfectly. Small cake pans are also used.
- Place the pudding in the oven at one second preheated, otherwise it will instantly be covered with a golden brown crust, but the inside will remain unbaked and raw. Such a product quickly falls off when removed from the oven.
- First, the oven is heated to 180°C, the pudding is placed in it, and then heating is continued to 200–220°C.
- Remove the baked goods from the oven after cooling.
- For elasticity, semolina, flour, stale bread, and boiled rice can be added to the dough.

Ingredients:
- Cottage cheese – 300 g
- Chicken egg - 2 pcs.
- Sugar - 0.5 tbsp.
- Butter - 50 g.
- Semolina - 2 tbsp.
- Raisins - a couple of handfuls
Step-by-step production:
- Pour half a glass of boiling water over the semolina and set aside until it swells.
- Separate the yolks from the whites.
- Add sugar to the yolks and beat well until a homogeneous lemon-colored mass is formed.
- Grind the cottage cheese through a fine sieve.
- Combine the cottage cheese with the beaten yolks and stir thoroughly with a whisk.
- Add softened butter to the curd mass. To soften it, you can use a microwave oven, setting the power to minimum, or put it on a saucer and place it in a warm place for 30 minutes.

- Snow-white crackers - 10 g
- Egg - 1/2 pcs.
Step-by-step production:
- Grind the cottage cheese through a meat grinder with a small mesh.
- Pour sugar, snow-white ground crackers and egg yolk into the curd mass. Mix the ingredients thoroughly.
- Dilute the dough with milk and mix well.
- Using a mixer, beat the egg whites into a thick, snow-white, airy foam and add to the curd mass. Mix them in from top to bottom.

So that making the pudding does not take much time, it is better to prepare the raisins in the evening. It must be filled with hot water for 7-10 minutes, then washed and dried.
Pour semolina into a bowl, add hot water and stir. Make cottage cheese. Place the cottage cheese in a bowl, mash well with a fork, add half the sugar and vanilla sugar. Separate the yolks from the whites and add them to the cottage cheese. Quickly remove the whites to a cold space.
Grind the cottage cheese with the yolks, add melted butter and mix.
