  • 1 tbsp. cocoa powder
  • 1 tsp soda

Recipe for making a dish at home

  1. Beat the eggs into a bowl and leave for 5 minutes at room temperature. Meanwhile, sift the flour and cocoa powder through a sieve and stir. Preheat the oven to 180/200C, grease a baking dish with a piece of butter.
  2. Start beating the eggs with a mixer and beat until foam forms. Then, without ceasing to beat, add sugar in a narrow stream. Beat the egg mixture until fluffy, another 2-3 minutes. Pour the drink in a narrow stream and whisk until smooth.
  3. Add the dry mixture and knead into a homogeneous dough. Quench the soda with a few drops of vinegar (i.e. not completely) and immediately add it to the dough. Mix well once and pour into the prepared form.

  5. After this, take out the mold and immediately carefully cut off the top (about 1 cm wide, leaving 1 cm on the sides). Then, leaving approximately 1-2 cm of pulp from the crust, remove all the pulp from the middle of the sponge cake. Leave everything to cool for half an hour.
  6. Meanwhile, prepare the cream and filling for kefir cakes. Remove the butter from the refrigerator and leave it warm for 15 minutes until it becomes soft. Then beat it with a mixer until fluffy for 1-2 minutes.
  7. Without ceasing to beat the butter, pour in a thin stream of condensed milk. Combine the ingredients for the cream for about 2-3 minutes until you achieve a homogeneous mixture. Pour in alcohol and stir. Add the pulp (crush it into crumbs beforehand) and beat thoroughly with a mixer.
  8. Place the resulting mass of pulp and condensed milk into a “box” made from a kefir biscuit crust. Cover everything with the previously cut lid and press lightly. Break the chocolate into small pieces and place in a small bowl and place in a water bath.
  9. Heat the chocolate, stirring occasionally, until completely dissolved. Remove the container from the water bath and leave to cool for a few minutes. Lightly coat the surface of the cake with melted chocolate and leave the cakes to cool for a couple of minutes.
  10. Place the sponge cake with the insides and glaze in the refrigerator. Kefir cakes should sit in the refrigerator for about 4-8 hours. The longer the cakes sit in the refrigerator, the better they will soak.
