  • salmon fillet (750-800 g)
  • chopped herbs (parsley, chives, rosemary and thyme)

For the pastry:

  • 270 g flour
  • 20 g new yeast
  • 100 ml warm milk
  • 3 egg yolks
  • 1 testicle
  • 20 g sugar
  • 10 g salt
  • 95 g soft butter
  • flour for work
  • a mixture of 1 egg and 2 tablespoons of warm milk

For fish cream:

  • 150 g salmon (cut from the main piece)
  • salt

  • pinch of chili powder
  • 150 g cool cream

How to make a tender salmon pie from butter dough

  1. To prepare our fish pie, you first need to knead the dough. It is better to prepare the dough in advance - early in the morning or in the evening. Mix 20 g of flour and yeast with warm milk, cover the mixture with a clean towel and leave in a warm place until cracks appear on the surface.
  2. Now take a deep bowl and put the remaining flour in it, form a depression in the center and carefully pour the mixture of milk, dough and yeast into it. Add egg yolks, egg, sugar, salt and butter.
  3. Add the remaining milk and knead the dough. Cover the dough again with a clean towel and leave to rise in a warm space until the dough has doubled in size. Then we put the dough in the refrigerator overnight (that is, in the dark) , and the next day we knead it well with our hands again.
  4. Now let's work on the inside for our fish pie. Cut 150 g of salmon for the cream, cut them into cubes and place in the freezer for 5-10 minutes.
