Manufacturing:

  1. Wash and dry a piece of pork
  2. Cut it across the grain into portions about 1 centimeter wide, but do not cut to the edge.
  3. Prepare a marinade of mustard, salt, soy sauce, spices and garlic pressed through a press. Stir all this thoroughly.
  4. Coat the meat well with the marinade and leave for 1-2 hours.

  1. Take a whole piece of meat.

  10. Take a heatproof pan. Cover it with foil, folded in half so that the edges remain. They are needed to wrap stuffed pork.
  11. Place pieces of butter on the foil.
  12. Add half a serving of chopped potatoes.
  13. Pour meat broth over it. Thanks to this trick, the potatoes will bake perfectly, become crumbly and not dry out. The juice released from the meat is not enough for these purposes.
  14. Place the meat “book” on top of the potato layer.
  15. Place tomatoes and pieces of cheese into the slits made in the meat.
  16. Cover the sides of the pork fillet with the remaining potatoes.
  17. Sprinkle everything with dried herbs.
  18. Pack the accordion tightly in food foil. Advice! You can use toothpicks to pinch off the edges of the foil.
  19. Turn the oven on to 200°.
  20. When it reaches the desired temperature, place the mold in it.
  21. Bake the dish for 1.5 hours.
  22. Take it out, very carefully open the foil, check the readiness of the potatoes.
  23. To get a crispy crust on the meat, put it back in the oven, but do not cover the top with foil.
  24. Keep the dish in the oven for another quarter of an hour.

I am glad to welcome you, dear readers! It’s been a long time since Maslenitsa died down, but Easter is already appearing on the horizon. I have one excellent recipe in store just for such a solemn event. Meat “Accordion” baked in the oven. Everyone who has ever tried it will agree with me that pork prepared in this way is simply indescribably delicious!

I'm sure any of you are dreaming of figuring out how to prepare this fabulous treat? Otherwise, our meeting at this moment would not have taken place. Well, if so, then we carefully read the recipe and study the photo. First I cut the meat into thin slices. And if you turn on your imagination, you can easily see that it will become somewhat reminiscent of the bellows of an accordion. Hence the unusual title.

Then I’ll prepare a special marinade. I will coat pork slices with this sauce, but I will not keep the meat in it for a long time. Further reading the recipe, you will find out why. I think it’s also clear what to do with tomatoes and cheese. I stuff them into the carbonate, arranged like an accordion, and bake it in the oven, wrapped in foil.

  • Pork - 1 kg.
  • Tomato - 1 pc.
  • Cheese - 100 gr.
  • 1 tbsp. l. soy sauce.
  • 1 tbsp. l. mustard.
  • 1 tbsp. l. lemon juice.
  • 2 cloves of garlic.

I cut the meat pulp into pieces about 1.5 cm wide, but pay attention to the cut, I do not do it all the way.

Now I’ll prepare the marinade in which the meat will be baked. More precisely, I’ll even mix the sauce. I don't appreciate the long and painful marinating process. And when you can make everything even easier and faster by “entrusting” the job to the oven and setting everything up in a special way, I constantly choose this method.

  1. I measure soy sauce into a bowl.
  2. I add mustard to it. I recommend creating it yourself. Mustard prepared at home is much more aromatic and savory. And you can see the recipe here.
  3. I add lemon juice.
  4. Using a hand press, I squeeze the garlic into the mustard mass.
  5. I mix the ingredients.

Meat preparation

  1. After that, I lubricate the slices with the prepared mixture of spices and seasonings.
  2. I try to carefully coat the cuts from the inside.
  3. I make a narrow cut of tomato and cheese. It was not in vain that I asked earlier about the condition of your kitchen tools. Only with the help of perfectly sharpened knives can a suitable result be achieved. And it’s not for me to explain to you the significance of this moment.   4. I place the meat accordion on several layers of foil. It's time to depict the keys on my delicious accordion. I place slices of cheese and tomato in the places where I just smeared the mustard mixture.
  5. When the stuffing stage is complete, I wrap the pork tightly.
  6. I put the baking sheet with it in the oven and set the temperature on the switch to no more than 180 degrees. The process of roasting meat will take about 120 minutes. But don’t forget, we saved several hours by not marinating.
