Well, the muffin recipe itself is perfect. In my understanding, Lenten baking does not have to take a lot of effort and time - during this period, all excess resources must be directed into yourself, into prayer, into trying to become cleaner, better, kinder. In this regard, these muffins are simply perfect: all you have to do is measure out the necessary ingredients (three minutes), mix them (a minute) and put them in molds (two more). Brew tea while the cupcakes are heating up in the oven, and after half an hour you can treat and treat yourself - in my opinion, it’s impossible to think of anything simpler.

The composition of products for lean muffins is completely economical. I would say, anti-crisis - what could be more affordable than a couple of glasses of flour, sugar and at least some juice? Do you have apple? Unsurpassed, muffins made with apple juice come out very fragrant, with a slight sourness. Apricot available? Magically, the baked goods will subtly “give off” dried apricots. Pineapple syrup? Oh, I recommend reducing the amount of sugar a little, this liquid is quite sweet on its own. Cherry juice? Okay, it assigns the corresponding black color to the test. Orange? Oh, what a smell spreads through the kitchen! All in all, an incredibly economical option for home baking.

I'll tell you a secret, once instead of juice I took compote - it turned out just as amazing and tasty. I suppose that you can try it with strongly brewed tea, but I haven’t tried it yet, I still have plans for it - maybe you’ll risk it?

And the last one - for those who desperately look for the taste of soda in all recipes. Yes, there may be one (I don’t feel it), but a friend has said more than once that the issue can be solved quite simply: you shouldn’t eat muffins that have just been taken out of the oven. Wait until it cools down and the foreign smell will evaporate, leaving you with the smell of homemade baking, warm family evenings and tender youth.

Ingredients for lean muffins:
– 2 cups flour;
- 1 cup of sugar;
– 1 glass of juice;
– 6 tbsp.
l. vegetable oil; – 1 tsp.
soda; – 1 tbsp.
l. lemon juice (vinegar); – berries, raisins, nuts and any other additives to your taste.


First, sift the flour. Frankly speaking, I almost never do this, I just measure out the required amount - and that’s it, but they constantly and everywhere write that you need to sift, so I write the same way. And I even sifted it this time - oh, what a beautiful slide it turned out to be! Maybe this is exactly why it’s worth getting a sieve? I don’t understand the stories about air enrichment - with the upcoming mixing of goods, all the air will still go away. Lumps? Where do the lumps come from in modern flour? This was vital in the days of our grandmothers, when various consistencies from everything that was in factories were sold under the guise of flour. In general, I don’t understand why, but the first step in the recipe for lean muffins is to sift the flour.

Add sugar. If you have sweet powder on hand (and if you don’t mind the expense), take the powder; it will completely dissolve in the cool juice; some of the sugar may remain grains. In general, this has never bothered me, so I take economical sugar and don’t pay attention to anything else.


Oil. At one point I... I forgot to add butter to this dough. And guess what, the muffins came out! Moreover, the error did not particularly affect the taste. Naturally, it’s better with butter (softer, more tender), but without it it’s completely fine.


A glass of juice. Do we remember which one? This time I took homemade apple juice - and, naturally, it turned out indescribably fragrant, after all, homemade juices differ in this regard from industrial ones.


Soda. Pour it into one space, pour lemon juice (vinegar) on top of it. You can replace it with baking powder, but I very obviously “hear” its flavor in baked goods, so I make do with my grandmother’s remedy. I advise you to create as you are used to.


Mix. Mixer? Come on, a few regular movements with a spoon - and that’s it, you’re done. Don’t even think about taking out the whisks; you’ll also have to wash them later! Everything is even simpler - in general, exactly as it should be in the case of lean muffins.


We take out the muffin tins.
I have an old special baking sheet that looks scary in the photo, but it has helped me out so many times that I simply don’t have the moral right to betray it because it’s unphotogenic, so forgive me for its somewhat unkempt appearance, it’s spotless, just old. If you don’t have such a comrade in arms, ordinary portioned molds will do.
Iron, silicone - in general, what you are used to. Ordinary tin molds need to be well greased with oil, and then sprinkled with flour. I absolutely do not like this process; I use special cardboard inserts that can be purchased at any hypermarket.


Divide the dough into 2/3 of the molds. More precisely, we divide them equally into 12 muffins - this is exactly the amount that comes out of this dough.


I forgot to say about additives. I have a perverted taste, I like “untainted” muffins. The maximum is a small amount of berries, and not in the dough (I don’t like it when they “flow” and add extra “wetness”), but on top of it - in the oven they have time to dry out a little, become drier and more pleasant. If you prefer a different option, add the “filling” after the main dough ingredients are mixed. Additionally, you can decorate the top of the muffins by sprinkling them with the same “goodies” that you hid inside the dough. It turns out very tasty with chocolate chips (in general, how can chocolate not be tasty?), It turns out great with lightly roasted nuts (it’s better to chop them slightly into the smallest pieces). Berries, dried fruits, candied fruits, poppy seeds, coke shavings - by and large, the abundance of additives is limited only by your imagination. Well, and personal taste preferences.
