Fruit pie with sour milk
- fruit to taste
- sour milk, you can drink - 1 glass
- sugar - 1 glass
- flour - 2-3 cups
- eggs - 2-3 pcs
- soda - 1 tsp.
Beat the sugar and eggs with a broom or in a blender. Add sour milk to this mixture and stir until smooth. Now pour in the flour in a narrow stream, stirring immediately. Quench the soda with vinegar (you don’t have to extinguish it) and add. The dough needs to be kneaded for 5 - 10 minutes.
Bring the dough to a mixture of thick sour cream. Peel and cut your fruit. Choose fruits according to your own taste - it can be apples, pears, kiwis, bananas - anything! Everything will turn out very tasty early! Pour the dough into the mold.
And then put the fruit on the dough (here you can show your creativity, if you wish). Now all that remains is to put the pie in the oven, which you previously forgot to preheat to 180 degrees. This is an ideal mode for a good and smooth rise of dough. Bake for 30 – 35 minutes. Check readiness with a toothpick or match. Bon appetit!
Chocolate pie with sour milk
- Wheat flour - 2 cups (200 ml cup)
- Sour milk - 1 glass
- Cocoa - 2 tbsp. spoons (heaped)
- Egg - 1 pc.
- Sugar - 0.5 cups
- Baking powder - 1.5 teaspoons
- Vanilla sugar - 1 teaspoon
- Salt - 1 pinch
- Vegetable oil - 3 tbsp. spoons
- Walnuts - 4-5 pcs. (optional)
- Dried apricots - 5-6 pcs. (optional)
As usual, turn on the oven. In order to preheat it to 180 degrees. Chop nuts and dried apricots. It is possible to do without these ingredients, or use other dried fruits, but with these it turns out especially tasty. In the first bowl you should add the required amount of dry ingredients.
And into the second - pour sour milk, sunflower oil and add an egg there. Don’t be lazy to separate bulk and watery products - this is very important. Mix ingredients in 2 bowls. It’s great if you use a blender to stir the watery mass. Now mix the contents of 2 bowls until smooth (again, a blender will help).
The dough should be a little thicker than sour cream. Add dried apricots and nuts to the dough. Stir everything again with a broom. Line a baking pan with parchment paper and place our dough there. Let it “come to its senses” for 5 minutes at room temperature, and then safely put it in a preheated oven. Bake for 35 - 40 minutes. Check the readiness of the pie using a toothpick. This is an obvious but most reliable method. The cooled pie can be sprinkled with sweet powder or poured with melted chocolate. Ready!
Sour milk pie with berries
- granulated sugar - 1 cup
- vanilla sugar - 1-2 teaspoons
- eggs - 2 pieces
- sour milk - 1 glass
- baking powder or baking soda - 1 teaspoon
- premium wheat flour - 2 cups
- any fresh berries - 1 cup
- vegetable oil without aroma for greasing the mold - 1 teaspoon
The pie will be baked in the oven, so turn it on in advance and heat it to 200 degrees. Before. As you begin to knead the dough, rinse the berries if necessary. Remove the pit from them. If you use raspberries, do not wash them - they will fall apart. The antibacterial characteristics of this berry provide us with complete safety. Beat sugar, vanilla sugar and eggs with a mixer for 2 minutes.
Pour sour milk into the resulting mass, add baking powder or soda. Mix all this well with a broom or a special spatula. Then add flour sifted through a sieve to the mixture. Stir everything again. Make sure there are no lumps left. Stirring with a broom, bring the dough to a mixture of thick sour cream. All that remains is to pour the berries into the dough and mix. The mold needs to be greased with a thin layer of oil, then pour the dough into it.
It is better to give preference to a shape with the smallest diameter - this way the cake will bake better (20 cm is suitable as a standard). Now place the pan with the dough in a hot oven, and to prevent the bottom of the pie from burning, place an iron cup with water on the bottom of the oven. The berry pie will take 35-45 minutes to prepare. The pie is ready when it has risen perfectly and the top is perfectly browned. Try to monitor the process through the glass without opening the oven door, because the temperature difference may cause the baked goods to not rise.
Having taken out the finished baked goods, let it cool for 7-10 minutes, and then serve. A rosy pie with berries made with sour milk will brighten up any family tea party! If desired, you can add sweet powder or chocolate icing to the top of the cake. In the summer, prepare this pie with seasonal fresh berries, and in the winter - with frozen, canned, or jam. In any case, it will turn out delicious, fragrant, and therefore comfortable at home!

Berry pie with sour milk
What else to cook at this time of year if not berry pie? Especially if you open the refrigerator, and there’s also a carton of forgotten milk. Sour? All the better!
I won’t begin to praise the advantages of berry baking and berry pies, namely, they are already obvious. Let me just remind you that the age of new berries is short, and you should hurry. Naturally, hypermarkets are at hand all year round, and today snowdrops grow even in December, and raspberries burst into flames in September, but the berries do not have the same smell and natural ripeness as in their own season.
So, take any seasonal berries for the recipe - strawberries, raspberries, currants, blueberries, gooseberries, etc. Take them separately or mix them in all combinations.
Another ingredient in the pie is sour milk. This choice has its merits. Firstly, the goodness should not go to waste: every now and then there is a certain amount of it on the farm - they purchased stale milk or did not have time to use it. It seems that you can’t even raise your hand to pour it, and the convenient housewife always has (or should have!) a couple of recipes for this option.
The most popular recipes from sour milk are cottage cheese and pastries, and if we talk about baking, then the best ones are pancakes, pancakes, pies or homemade pies with berries.
But pancakes with pies can be baked in winter, and at the moment we are in berry season. And besides, making a berry pie is easier and quicker than any other small pastry, and it contains fewer calories because no butter is used. In general, we choose berry pie - ordinary and excellent, like any faithful homemade pastry.
Ingredients
- granulated sugar 1 cup
- vanilla sugar 1-2 teaspoons
- 2 eggs
- sour milk 1 cup
- baking powder or baking soda 1 teaspoon
- premium wheat flour 2 cups
- any fresh berries 1 cup
- vegetable oil without aroma for greasing the mold 1 teaspoon
Manufacturing
The pie will be baked in the oven, so turn it on in advance and heat it to 200 degrees.
Prepare the berries: wash, dry, if the berries have seeds, remove the seeds. And let me give you some advice: don’t wash the raspberries! Don’t wash it, and that’s it, especially if you bought it from grandmothers at the market, and even more so if you collected it yourself.
Place sugar, vanilla sugar and eggs in a cup.
beat with a mixer at high speed for 2-3 minutes.
Pour milk into the whipped mixture, add baking powder or soda, mix well with a spoon or spatula.
Add flour to the mixture, sifting it through a sieve.
Stir the dough carefully with a spoon so that there are no lumps left. This is the creamy mixture you should get.
All that remains is to pour the berries into the dough and mix.
Grease the mold with a thin layer of oil and place the dough into it. It is clear that the smaller the shape you use, the higher the cake will turn out. I have a mold with a diameter of 20 cm.
Place the pan with the dough in a hot oven, and to prevent the bottom of the pie from burning, place an iron cup of water on the bottom of the oven. The berry pie will take 35-45 minutes to prepare.
The pie is ready when it has risen perfectly and the top is perfectly browned. But it’s better to supervise the process without opening the oven, but simply watching through the glass, otherwise the cake will “fall” due to the temperature difference.
Let the berry pie cool for 7-10 minutes, remove from the pan and serve.
A ruddy pie with berries made with sour milk will decorate any family tea party; it doesn’t hurt that it’s simple, because real homemade cakes are very charming! If desired, the top of the cake can be supplemented with sweet or chocolate glaze. And if in the summer there are no problems with fresh berries, then in the winter using this recipe you can prepare a pie with finely chopped apples or any frozen or canned berries and fruits.
