2. Onions are an important component of cutlets. It has a great effect on taste and juiciness. Grate the onion on a large grater or finely chop it. It will be suitable both raw and fried. But because our recipe also contains carrots, it would be better to fry them specifically. Also chop the carrots, combine them with onions and fry a little in vegetable oil. Add vegetables to the minced meat and stir.

3. Chop the garlic using any convenient method, and also finely chop the freshest herbs. Add a sufficient amount of herbs, pepper and other spices to the minced meat.

4. Before frying the cutlets, you need to heat the frying pan well. Form cutlets and coat them in breadcrumbs or flour. Fry the cutlets on both sides over high heat, then cover the frying pan with a lid and reduce the heat. If you use only minced chicken for cutlets, the dish usually turns out to be very stale. And all because there is minimal fat in chicken fillet. How I would like our cutlets to be lean, and at the same time soft, juicy and fluffy. It turns out that this can completely happen. After I discovered this secret, I cook chicken cutlets only according to the following recipe.

  • minced chicken - four hundred grams;
  • two pieces of snow-white bread;
  • two hundred grams of cabbage;
  • chicken eggs - two pcs.;
  • garlic - a couple of cloves;
  • three tbsp. spoons of sparkling mineral water;
  • pepper, salt, spices - to taste.

Cooking

I alternately grind raw cabbage through a meat grinder with small pieces of bread.

I note that I don’t soak the bread itself beforehand; it absorbs cabbage juice from the meat grinder.

I combine all the ingredients and mix the minced cutlets well. I make cutlets out of it and fry them in a frying pan on both sides over low heat. Thanks to cabbage and mineral water, the dish turns out lush and juicy. And the smell calls everyone at home to the kitchen.
