Step-by-step production

Step 1:

How to bake a pie with cabbage? Prepare the ingredients for the dough. Pay special attention to the quality of the yeast. Take the highest grade flour. Sift it through a fine sieve in advance to saturate it with oxygen. Remove the butter from the refrigerator in advance and bring it to room temperature.

Step 2:

First, dissolve the yeast in warm water in a separate bowl. Let the dough rise for about 15 minutes. You can cook using the straight method by selecting active yeast, which is added directly to the flour in powder form.

Step 3:

Place the softened butter in a bowl and mix with the sifted flour and salt.

Step 4:

Add the yeast mixture to the flour and start kneading the dough using any method you are comfortable with: spoon, fork, mixer, hands. Focus on the thickness of the dough, not the amount of flour. It should be moderately cool and hold its shape well.

Step 5:

Roll the dough into a ball, cover with a towel and let rest for about half an hour.

Step 6:

Meanwhile, take care of the insides. Prepare the ingredients for it.

Step 7:

Squeeze the juice from the sauerkraut. Cut the bacon into small pieces. You can use straws.

Step 8:

Peel the onions and chop finely. Cut the leeks into pieces approximately 1cm long.

Step 9:

Heat a frying pan with butter and fry all the chopped onions for about 2 minutes.

Step 10:

Add squeezed sauerkraut to the onions. Pour in a small amount of water and simmer the resulting mass for about a quarter of an hour, stirring occasionally. Make the heat a little lower than medium. If it starts to burn, reduce to low.

Step 11:

Fry the bacon separately in a frying pan.

Step 12:

Beat raw chicken eggs into a bowl and mix with sour cream until smooth.

Step 13:

Grate hard cheese.

Step 14:

Combine cooled stewed sauerkraut with grated cheese, eggs and sour cream, and fried bacon. Stir.

Step 15:

Place the dough rolled out into a round layer into a prepared and greased form, leaving sides about 5 cm high. Cover the pan with a towel and leave the dough to rise for another quarter of an hour.

Step 16:

Then prick the dough with a fork in various places. Spread the finished filling sparingly over the dough and fill to the top. You can create the most beautiful and curly sides.

Step 17:

Bake the pie in an oven preheated to 200 degrees for at least 40 minutes. Depending on the time, use your oven. It may take you less or more time than me. Inspect the pie!

The finished pie with sauerkraut should be left to cool before eating.

A very tasty version of making a pie with sauerkraut - I highly recommend making it!
In its essence, a pie with sauerkraut reminds me of pizza prepared only in the Russian way. There is absolutely nothing complicated in the manufacturing recipe, but you will have to tinker a little.

Keep in mind that everyone's oven is different. Temperature and cooking time may vary from those indicated in the recipe. To ensure that any baked dish turns out successful, take advantage of useful information about the features of ovens!

The liquid in which the yeast is diluted must be pleasant to the touch, no higher than 40 degrees. Why is this important? In a warm environment, yeast activates perfectly, in a hot environment it will die, and in a cool environment it simply does not work. To avoid nasty surprises, check the yeast before combining with the rest of the ingredients. Pour some warm milk into a bowl and stir the yeast in it. Cover the bowl with a kitchen towel and place in a warm, draft-free space for 10-15 minutes. During this period of time, a foamy yeast cap should appear on the surface of the dough. Pie with sauerkraut in the oven: recipe with photos step by step

Ingredients for the dough:

  • milk – 200 ml;
  • vegetable oil – 2 tbsp;
  • salt – 1 tsp. (without slide);
  • sugar – 1 tsp. (without slide);
  • dry yeast – 1 tsp;
  • wheat flour – 400-450 g.

Ingredients for the inside:

  • sauerkraut – 700-800 g;
  • onions – 1-2 pcs.;
  • vegetable oil – 3 tbsp;
  • salt - to taste;
  • ground dark pepper - to taste.

Quantity: 6-8 servings.

Preparation time: 30 min.

Production time – 2 hours.

How to make a savory pie with sauerkraut

  1. Warm the milk to room temperature, and then mix it with sugar and dry yeast.
  2. After the yeast begins to foam, add vegetable oil to the milk and mix everything well.
  3. Sift the flour and salt separately, and then add in parts to the main mixture.
  4. When the mass becomes thicker, place it on a board sprinkled with flour and knead into a soft but not sticky dough.
  5. Place the finished dish in a deep bowl, cover the top with a clean towel and leave in a warm place for 80-100 minutes. During this period of time, the mass should rise well and increase 3-4 times.
  6. While it is rising, let's work on the filler. We peel the onions and cut them into small pieces, which we then fry in a frying pan with vegetable oil until golden brown. It’s better to immediately take the frying pan deeper - it should be comfortable to cook cabbage in.
  7. Add sauerkraut to the fried onions. Salt and pepper to taste. If the cabbage is sour, then rinse it in advance under cool water and squeeze out the excess liquid. Fry over low heat for about 40-45 minutes until the cabbage becomes soft. If it starts to burn, you can add a little boiled water to the pan.
  8. Visually divide the finished dough into three parts and pinch off 2/3. We roll this part into a rectangular layer about 7-8 mm wide. Place on a baking sheet greased with vegetable oil.
  9. Spread the cooled filling on top in an even layer, leaving space for sides on all sides.
  10. We also roll out the rest of the dough into a rectangular layer, only thinner. The upper part must be smaller in size than the lower part and cover only the filling without going over the sides. Using a glass, make a hole in the center. Thin strips can be cut from the edges of the layer for decoration. Place the sheet on top and seal the edges.
  11. We make braids or strands from the strips and decorate the cake as desired.
  12. Preheat the oven to 180 degrees and bake the sauerkraut pie for about 30-35 minutes. The cooking time in almost everything depends on the power of your oven; once the cake becomes golden brown, you can take it out.

  • drink - 500 ml;
  • chicken egg - 2 pcs.;
  • soda - 0.5 tsp;
  • vinegar - 1 tbsp. l.;
  • flour - about 300 g.
  • sauerkraut - 500 g;
  • turkey or chicken breast - 200 g;
  • onion - 1 pc.;
  • dried garlic - 1 tsp;
  • curry - 1 tsp;
  • salt - to taste;
  • dark pepper - to taste.

Quantity: 6 servings.

Preparation time: 30 min.

Production time: 50 min.

How to quickly and easily bake a pie with sauerkraut entrails

  1. Wash the turkey breast, dry it with a cardboard towel and cut into small pieces.
  2. Place the curry and dried garlic on a plate and stir in the spices.
  3. Add meat to spices, stir well. Leave the meat to marinate for 15-20 minutes.
  4. Cut the onion into quarter rings.
  5. Fry the onion in vegetable oil until lightly browned.
  6. Salt the meat, fry it until crusty in a small amount of vegetable oil.
  7. Simmer the cabbage over low heat until the water has completely evaporated.
  8. Add fried turkey and onion to the cabbage and pepper. Stir thoroughly and taste. If necessary, add more salt or pepper. The pie filling is ready.
  9. In a bowl, combine the drink, eggs, vegetable oil, salt and sugar. Thoroughly stir the ingredients with a whisk.
  10. Add sifted wheat flour a little at a time to the acquired consistency, stirring constantly. Add flour until the mixture resembles pancake batter. It took me 300 grams of flour. Add soda, slaked with vinegar, stir.
  11. Grease a baking dish with vegetable oil. My oven does not brown the baked goods on the bottom much, so I line the springform pan with parchment paper.
  12. Pour half of the batter into the bottom of the prepared pan.
  13. Carefully place the filling on top.
  14. Pour the remaining mixture over the cabbage and meat.
  15. Send the cake to bake in the oven, preheated to 180 degrees Celsius, for 40-50 minutes.

Remove the browned jellied pie from the oven and let it cool.
