I don’t consider rubbing it through a sieve for one common reason: it’s impossible to do this with the freshest berries. She has a very thick skin. Well, she herself doesn’t seem to be a cherry. If you’ve ever held it in your hands, you’ll understand.

The process involves separating the skin from the pulp. For what? After all, it contains the main part of pectins, phenolic compounds, and other active substances.

To soften the skin, you will have to blanch it - put it in boiling water or keep it over steam. This will destroy the ascorbic acid. At the end you will not get “cool jam”, but an incomprehensible tasty liquid. I am not a supporter of this approach. My choice is a meat grinder.

Cranberries have elastic pulp. “Grate” in this case means “mash”, “mix”, “crush the sugar crystals so that they dissolve in the juice.” But there is no way to “push the berries through a sieve with a spoon.” If you don't have a regular grinding device, use a wood pestle to do it.

A fascinating taste comes out when adding walnuts. It should be lightly fried. Pass through a meat grinder along with the berries. The mass will become thicker. It is convenient to spread it on toast or put it in the filling for shortbread tubes.

What should you focus your attention on?

Puréed cranberries are not recommended for those suffering from autoimmune diseases, obesity, and diabetes. Like raw berries, it is contraindicated for gastritis with high acidity and stomach ulcers.

A big minus is the presence of sweet sand, which acts as a preservative. Snow-white crystals interfere with the absorption of ascorbic acid, and there is little of it in cranberries. Excess consumption increases the risk of diabetes, leads to obesity, and inflammatory effects.

“Cool jam” does not undergo long-term processing, but it is not an analogue of a natural product. Half is a completely unnecessary ingredient. Doctors recommend consuming it in limited quantities.
