I don’t consider rubbing it through a sieve for one common reason: it’s impossible to do this with the freshest berries. She has a very thick skin. Well, she herself doesn’t seem to be a cherry. If you’ve ever held it in your hands, you’ll understand.
The process involves separating the skin from the pulp. For what? After all, it contains the main part of pectins, phenolic compounds, and other active substances.
