  • a pinch of black pepper, thyme, salt.

How to prepare baked pumpkin with mushrooms:

  1. Peel the pumpkins, cut off the base so that they stand firmly. Create a notch on top and remove the seeds.
  2. Grease the inside with soft butter. Salt and add spices.
  3. Soak white mushrooms in warm water for 15 minutes.
  4. Drain the water from the mushrooms into a separate container.
  5. Squeeze the mushrooms and chop with a knife.
  6. Grate Parmesan on a large grater.

Pumpkin baked in the oven with Mexican pork

There are a huge number of recipes for this popular dish of traditional Mexican cuisine. But what remains constant is what is prepared and served specifically in the pumpkin itself, from which the pulp is removed.

It will take about 2 hours to prepare the dish, but it is worth it. It's indescribably delicious!

Products for 6 servings:

  • Pumpkin (flat base) – about 2 kilograms
  • Pork (loin or sliced) – 1 kilogram
  • Reddish onion – 1 – 2 heads
  • Corn kernels, canned – 150 g
  • Olives – 100 gr
  • Sweet pepper – 1 piece
  • Basmati rice – 100 g
  • Balsamic vinegar – 2 tablespoons
  • Olive oil
  • Sugar – 2 teaspoons
  • Garlic, chili pepper, spices - to taste
  • Cut off the “cap” of the watermelon, take out the insides, and grease it with fat. Seal tightly in a baking bag. Place in the oven at 180° for half an hour.

  • Cut the meat into pieces and the onion into half rings. Stir, marinate for 30 minutes.

For the marinade, mix 2 tablespoons of vinegar, chopped garlic, salt, chili and other pork spices.

  • Fry the marinated meat until golden brown. Add corn, pumpkin pulp, bell pepper, diced.

  • Cut the olives into slices, wash the rice and also pour into the pan.

“Basmati” can be replaced with steamed or any long-grain rice.

  • Salt, add sugar, spices. Stir, pour in a glass of water. Simmer until the water has completely evaporated.

  • Carefully open the sleeve, place the filling, and cover the watermelon with a lid with a “tail”. Tie the sleeve and put it back in the oven.

Bake for 1 hour at 160°. Check the pumpkin for readiness - try to gently press it with your finger; if it’s soft, take it out.

Remove the baking sleeve and place the dish on a wide plate. Pour over the juice that formed during baking. Cut into portions and serve hot. Pork baked using this method will be a win-win option on a festive table.

Baked pumpkin dessert

The most common, but very tasty way to prepare a dessert from a healthy vegetable is to bake it with honey and cinnamon. The indescribable smell that fills the kitchen will whet the appetite even for those who are not pumpkin lovers.

How to cook:

  • Turn on the oven, set it to 200 degrees.
  • Grease pumpkin slices with oil and sprinkle with cinnamon to taste.
  • Place the vegetable on a baking sheet. Bake for 30 minutes until golden brown. Turn off the oven, after 8 minutes remove the baking sheet.
  • Let cool. Transfer to a plate, pour over honey, garnish with sweet powder and fresh mint leaves.
