  2. Peel the onion and chop as desired;

  4. Beat a chicken egg into the prepared minced meat, add semolina, salt and your favorite seasonings, stir everything thoroughly. Let the resulting mass stand for a quarter of an hour;

  • boiling water – 200 ml;

  • spices and salt at your discretion.

  1. Wash the offal thoroughly and remove the film from it.
    If it is difficult to remove, then pour boiling water over the liver. After which the film must simply retreat;
  2. Next, cut the product into large pieces and grind using a meat grinder.
  3. Also pass the peeled onion through a meat grinder and combine with minced meat;
  4. You need to add an egg to the resulting mass and stir. And then evenly add semolina and buckwheat flour, add salt and spices. Mix all ingredients until smooth;
  5. Cover the prepared minced meat with a lid and leave to stand on the table (it is not allowed to put it in the refrigerator) for 15 minutes. This will allow the semolina to swell;
  6. After a quarter of an hour, take a frying pan and heat it well, then pour in vegetable oil. Using a spoon, spoon the meat mixture onto the hot plate. The size of the cutlets must be identical to the size of the pancakes;
  7. Quickly fry the cutlets on both sides so that they do not spread. Transfer the fried “pancakes” to a saucepan with a thick bottom. Do the same manipulations with the remaining minced meat;
  8. Pour 100 ml of bubbling water into the pan with the cutlets and place the container on the fire. After the water boils, reduce the gas to minimum, cover the pan with a lid and simmer the dish for 10 minutes;
  9. When the time has passed, lift the lid and add another 100 ml of boiling water, simmer the cutlets for another 10 minutes and you can remove from the heat. Leave the dish in the pan for a quarter of an hour, then serve.

Liver is the main ingredient of the dish. It should be noted that the largest amount of necessary substances is contained specifically in beef offal. The liver of this animal contains a large supply of iron, as well as copper, calcium, zinc and other minerals. By consuming liver products, we strengthen the nervous system and increase immunity.

Ingredients

  • Beef liver 450 g
  • Onion 1 pc.
  • Carrot 1 pc.

Manufacturing

The liver should be carefully treated. It is imperative to remove the bile ducts (they are usually yellowish in color). These ducts contain all the harmful substances that the liver has not had time to process, and their entry into the dish, of course, is not necessary.

There are recipes where the liver is boiled before making minced meat from it. These cutlets will turn out dry. They definitely need to add an additional ingredient that will add juiciness to the dish. You can add lard or pork. Also, grated zucchini and potatoes will help make any liver cutlets juicy.

Tackle the vegetables first. Peel the onion and rinse. Cut into cubes and place in a frying pan with sunflower oil. Let it fry over low heat. Meanwhile, peel the carrots and rinse under water. Grate the vegetable on a large grater and add it to the frying pan with the onion. Let the vegetables fry until they become soft.

Rinse the liver and remove the snow-white film from it. Remove all bile ducts and veins. Cut the liver into pieces that can be conveniently placed in a blender or meat grinder.

Place the chopped offal in a blender and add the fried carrots and onions. If you like garlic, add it at this point. Using a kitchen machine, grind the ingredients until smooth. If you like liver, then make chopped cutlets. The taste and smell of the liver will be preserved much better.

Pour the minced liver into a bowl. Salt and pepper to taste. Beat 1 chicken egg and add semolina. Wash the dill, chop finely and also add to the minced meat. Mix all ingredients well. Cover with cling film and refrigerate for 30 minutes. This time is needed for the semolina to swell and increase in volume. Instead of semolina, you can add boiled rice or buckwheat. If you decide to add already boiled cereals to the minced meat, then you do not need to put it in the refrigerator, you can immediately start frying.

Place the frying pan on the fire and pour sunflower oil into it. When the oil is hot, take the minced liver with a spoon and place it in the frying pan.

Fry the cutlets on both sides until golden brown.
