  1. Remove the butter from the refrigerator in advance, cut into pieces and let stand until it softens slightly.
  2. Transfer to mixer bowl and beat on medium speed.
  3. When the mass becomes fluffy, add condensed milk. Bring until smooth. The layer does not have to be very thick, because the cake will not be soaked well and will turn out dry. If necessary, dilute with an additional portion of condensed milk.
  4. Place the first layer of base, dipping each cookie in milk.
  5. Cover with a layer of cream.
  6. Continue row after row until the cream runs out, which should be poured over the top and coated with the sides.

Prepare all the products listed in the recipe. Remove condensed milk from the refrigerator in advance. Break the shortbread cookies with your hands. The pieces needed are quite huge.

Pour gelatin into 150 ml of water. For this you can also use cream, milk or cherry juice formed after defrosting the berries. In the extreme case, the cake will turn out not snow-white, but pink. Allow the gelatin to swell for 20 minutes or according to the instructions on the package. In any case, the granules should absorb all the liquid.

Remove the pits from slightly thawed cherries and leave until completely defrosted, and then squeeze out the liquid with your hands.

Beat cool cream with a mixer until thickened and increased in volume by 2-2.5 times.

Pour condensed milk into a comfortable spacious container. Add gelatin melted in a water bath. During the heating process, do not leave the stove, because gelatin is very easy to overheat, and then it will completely lose its characteristics. Pour in the melted gelatin in a thin stream, stirring constantly. If the mixture immediately begins to gel, you should put it in a water bath and warm it up a little.

Add cookies. Add a few tablespoons of whipped cream and stir. Then, in portions, add other whipped cream, using a spatula carefully and carefully. The result should be a very airy mixture.

Prepare a round bowl in advance by lining it with cling film. Add some of the mixture and sprinkle with cherries.

So, layer by layer, fill the entire form. Place in the refrigerator for 5-6 hours until completely set.

Naturally, I knew about cookie cakes and even remember how my mother and I made one of these desserts, but in my adult life they seemed to me somehow... frivolous, or what? And so, while making sweet sausage relatively recently, I thought, shouldn’t I try designing a cake? As it turns out, this is a very playful and common solution for drinking tea with on working days! Naturally, he still needed to stand in the cold and freeze, but this inactive time does not count. As a result, this selection of recipes with photos was born, according to which we prepared several options, united by one common basic set of goods: cookies, condensed milk, butter, which we offer you to look at now.

Ingredients:

But I would recommend breaking about 1/5 of the cookies into pieces with your hands, then the cake will not be completely homogeneous; in addition to the nuts, there will be these pieces in it and the texture will be more interesting. Pour the crumbs, pieces of cookies, chopped walnuts into a large bowl.
  3. In another container, beat the butter with condensed milk and cocoa with a mixer. We get a thick, homogeneous cream.
  4. Combine cream and cookies. Mix well.
  5. From the acquired mass on a flat plate, we make a slide with our hands, the shape of which will resemble an anthill.
  6. Grind the chocolate or crumble it again in a blender and sprinkle it on top of the cake.
  7. Place in the refrigerator for at least 2 hours. But it’s better at night (that is, in the dark) . During this period of time, the mass will set and harden to such an extent that it can be cut with a knife, but it will still remain soft.

What we need for the cake itself:

  • cookies – 300 g;
  • butter – 150 g;
  • boiled condensed milk – 200 g;

For the glaze (optional):

  • butter – 30 g;
  • milk – 3 tbsp;
  • sweet powder – 4 tbsp;
  • cocoa powder – 2 tbsp.

How to make a cake from cookies and condensed milk without baking in the oven

  1. Using a rolling pin, crush a large portion of the cookies into small crumbs. We break the rest with our hands or knead it with a rolling pin, but so that small pieces remain. To speed up the process, you can use a blender or meat grinder.
  2. We briefly place the butter in the microwave to make it softer, or take it out of the refrigerator in advance. Then add boiled condensed milk to it.
  3. Beat the mixture with a mixer until smooth.
  4. Combine cookies and a mixture of butter and condensed milk. Since we need the base for the dessert not to come out dry and crumbly, we will put some of the crushed cookies aside for now.
  5. Mix everything thoroughly. The base should turn out not watery, and at the same time not dry. If you squeeze the mixture into a fist, it will not crumble later. Stir in the remaining cookies if the base is just stirred with a spoon.
  6. To ensure that the cake simply moves away from the walls, place an unstained plastic bag in the container in which it will be cooled. We lay out the base directly on it. Compact and level the cake. To prevent it from absorbing foreign odors, we also cover it with a bag or cling film on top.
  7. We put our cake in the freezer for 80-120 minutes, or at night (that is, at night) in the refrigerator. When the cookies and cream have cooled and hardened, remove the film from above, carefully turn the cake over onto a flat plate and remove it from the bag.
  8. Heat the butter in a saucepan, then add the other ingredients for the glaze, and mix everything well. When the glaze becomes homogeneous, remove it from the stove and wait until it thickens slightly. Then we decorate our cake with it. Before serving, it is better to cool it slightly in the refrigerator, but if you don’t have time for this, you can do it this way.

What do we need:

  • shortbread cookies (“Jubilee” or “Baked Milk”) – 350-400 g;
  • bananas – 2-3 pcs.;
  • condensed milk – 250 g;
  • sour cream 20% - 250 g;
  • gelatin – 2 tsp;
  • water – 3 tbsp. l.

Method for making a cake without baking

  1. In order for the cake to come out with the correct mixture even without baking, i.e. did not fall apart when cutting, it is necessary to prepare gelatin for the cream in advance. In a bowl of cool water, dilute a few teaspoons of gelatin, then place the resulting mixture in a saucepan in a water bath. Bring the water in the pan to a boil, reduce the heat to low and, constantly stirring the gelatin with water, bring it to a watery state (it should completely dissolve in a cup of water).
  2. Meanwhile, pour a portion of condensed milk and sour cream into a deep container. Using a mixer, beat the ingredients until smooth.
  3. Next, pour in the prepared (slightly cooled) gelatin and mix thoroughly. Place the cream in the freezer for 20-30 minutes until it thickens slightly. Thanks to gelatin, it will be moderately thick, and you can assemble the cake even without a special mold.
  4. In a small form (I have a clay baking form) or on a tray (then the cookies must be laid out whole), place pieces of shortbread cookies so that they completely cover the bottom of the form.
  5. Peel the bananas and cut into thin slices.
  6. Apply a moderate layer of sour cream and condensed milk cream onto the cookies, and place pieces of bananas on top (half the serving).
  7. In the same way, we repeat the layers with cookies, cream and banana a couple of times. In total, I ended up with 2 layers of cream and bananas, because the mold in which the cake was made was quite deep and large in size.
  8. Grind the remaining cookies into crumbs (you can manually or use a blender) and sprinkle them over the top of the entire cake. We put the cake in the refrigerator for several hours so that the cookies are well soaked in the cream and the cake itself comes out soft.
  9. Cut the finished cake into portions, decorate according to your own taste (I, for example, used grated chocolate and frozen berries) and serve to your guests!

This dessert has a very creamy taste. It cooks quickly, but it takes time for the filling to set. Therefore, it must be created 2-3 hours before the feast. Or, while you are treating your guests to salads and hot dishes, the dessert will have time to brew. Choose dry cookies so that they simply crumble. Normal - sandy.

  • 300 g cookies;
  • 300 ml condensed milk;
  • 500 ml thick sour cream;
  • 100 g melted butter;
  • 100 ml water;
  • 10 g gelatin;
  • sugar to taste.
  1. Soak the gelatin in a deep bowl and leave to swell.
  2. At this time, take care of the base: crush the cookies with a rolling pin, blender or food processor. You need to get a small crumb.
  3. Pour oil into it and stir well.
  4. Cover a springform pan approximately 20-24 centimeters in diameter with cling film from the inside and lay out the resulting base, forming low sides and compacting it with your hands.
  5. Melt the already swollen gelatin over the fire, but do not bring to a boil.
  6. Prepare the cream: mix sour cream, condensed milk, sugar and gelatin. Add sugar at your discretion, condensed milk is already quite sweet.
  7. Pour the resulting mixture over the base, cover with cling film or foil and place in the refrigerator to set for 2 hours.
  8. Then remove the dessert from the mold and decorate with berries, fruits, and chocolate as desired.

Cake with condensed milk, bananas and sour cream

But the next dessert can be served immediately after preparation, but it is better to let it soak in the cream a little. Then the cake will be even more tender.

  • 700 g of dry cookies;
  • 350 ml thick sour cream;
  • ½ can of boiled condensed milk;
  • 100 g walnuts;
  • 2 ripe bananas.
  1. Mix sour cream with boiled condensed milk.
  2. Peel the bananas and cut into small circles.
  3. Chop the nuts with a rolling pin or in a mortar.
  4. Take a large dish or mold, and apply a light sour cream consistency to the bottom of it, according to the size of the future cake.
  5. Place cookies on top in an even layer in one row, coat them with cream.
  6. The next layer will be bananas.
  7. Grease the second cake with cream and place the side given to us on the bananas for the best bonding. Apply cream to the top too.
  8. Then continue adding layers until all the components are completed.
  9. Decorate the top cream layer with nuts.
  10. Place the finished dessert in the cold for soaking for 2-3 hours.

Cake with condensed milk, cottage cheese and sour cream

A very tasty, playful and tender cake. You can treat them right away, but, as in previous recipes, it is better to let them brew for 2-3 hours. For a more varied taste, you can layer it with chopped fruits or berries.

  • 200 g of dry cookies;
  • 250 ml thick natural yogurt;
  • 250 g cottage cheese;
  • 100 g condensed milk;
  • 100 g thick sour cream;
  • sugar to taste.
  1. Chop the cookies slightly, breaking them with your hands.
  2. Mix yogurt, 50 grams of condensed milk and cookies. Let it soak slightly.
  3. Mix sour cream with the remaining condensed milk, cottage cheese and sugar. If the cottage cheese has large grains, grind the mass with a blender.
  4. Wrap the inside of a springform pan with a diameter of 18-20 cm with cling film and lay out the first layer with cookies, then the curd mass, leaving a little for coating. 3rd layer - cookies.
  5. Grease the sides and top of the cake with the curd mixture, decorate with fruits, nuts or chocolate.
