Merchant-style meat, royal-style pork, French-style meat - what names have they come up with for this pseudo-Russian, pseudo-overseas dish! In fact, the dish is Russian and embodies culinary chic, as it was thought of back then. Meat with accompanying ingredients, under a coat of cheese and mayonnaise, baked in the oven, is obviously not designed for modern snobs, but, frankly, it is indeed very tasty!

There are dozens of recipes on how to deliciously cook meat in a merchant’s style. Pork is best suited for baking, although it would work great with beef or chicken if desired. You can also experiment with a selection of vegetables. Some people prefer potatoes, others prefer a merchant-style meat recipe with pickles, bell peppers or eggplants.

Now we will cook meat merchant-style in the oven using pork with mushrooms, tomatoes and cheese. The best choice for baking is carbonated pork loin, with a thin layer of fat on top. When prepared correctly, the cut comes out juicy and not very fatty. To make the pork soft, you should hammer it, and to make the taste more interesting and richer, I recommend marinating the meat with mustard and ground coriander in advance.

The only disadvantage of merchant-style meat is its high calorie content. But I suggest forgetting about diets and calories for a while, meat under a fur coat in the oven is worth it!

Ingredients

  • pork chop – 500 g
  • fresh champignons – 200 g
  • onions – 1 pc.
  • hard cheese – 200 g
  • tomatoes – 2-3 pcs.
  • mayonnaise – 2 tbsp. l. + 1 tbsp. l. in cheese
  • ground coriander – 0.5 tsp.
  • mustard – 0.5 tbsp. l.
  • garlic - 2 teeth.
  • salt and pepper - to taste
  • vegetable oil – 1-2 tbsp. l.

Manufacturing

I washed the pork, dried it and cut it into slices of medium thickness - approximately 1 cm. I lightly beat each piece with a hammer. To prevent juices from splashing, you can wrap the meat in cling film or cover it with a plastic bag.

I cut the resulting pork chops into oblong pieces - large, so that the taste of the meat would not be lost against the background of the other ingredients. Thanks to the tenderloin, the meat will cook faster and more evenly, and it will also be more convenient to divide the finished dish into portions.

Next, I took a heatproof baking dish. I squeezed the garlic into it through a press and mixed it with mayonnaise, mustard and ground coriander (instead of mayonnaise, you can use sour cream with added salt). Stir with a fork until smooth. Placed pieces of pork into the resulting sauce and stirred.

Set the pork aside to marinate for 30 minutes, covering with cling film.

While the meat was marinating, I fried the mushrooms and onions in a small amount of vegetable oil. First, I sautéed onions, cut into half rings, until soft and transparent.

Then I added mushrooms, cut into large slices, into the frying pan. Fry until golden brown, stirring, and at the end add salt and pepper to taste.

I cut the tomatoes into thin rings and placed them on top of the pork, adding a little salt. If desired, you can remove the skins from the tomatoes by scalding them with boiling water. In total, 2 medium-sized tomatoes or 7-8 cherry tomatoes will be useful.

Grind the cheese on a small grater. Approximately a third of the cheese was spread on top of the tomatoes in an even layer.

Placed mushrooms fried with onions on top.

Mixed the remaining cheese with a spoon of mayonnaise. And laid it out in an even layer on top of the mushrooms.

I sent the form to the oven, preheated to 180 degrees, for 45-50 minutes. Towards the end of cooking, I recommend looking into the oven and covering the dish with foil, if a beautiful golden crust has already formed on top, so that it burns.

Merchant-style meat with mushrooms and cheese comes out very juicy and soft, and smells delicious of mushrooms. The dish is best served hot, cut into portions and garnished with parsley. Bon appetit!

Merchant-style meat with mushrooms is incredibly tasty pork baked with tomatoes and champignons under a cheese and mayonnaise “cap”. Naturally, it is better to eat such meat hot or warm, because even when reheated the next day, it will no longer be as juicy and soft.

Most often I cook this kind of meat for the holidays, because you can safely bake a whole tray of meat without worrying that there will be something left for the next day - the guests will “sweep it” from the table. You can serve the meat with mashed potatoes or simply boiled young potatoes, seasoned with butter and fresh dill. What else makes this dish presentable is that you can bake a lot of “chops” right away, without spending a long time in the kitchen near the stove.

Let's prepare products for making merchant-style meat with mushrooms.

Rinse the pork chop and trim off excess fat. Cut a piece of meat into steaks 8-10 mm wide. Next, the steaks need to be beaten on both sides with a culinary hammer.

Wash the fresh champignons and cut into slices - it is better to take larger mushrooms. Wash the tomatoes and cut into fairly thin slices - 2-3 mm.

You can use any hard cheese. I take Dutch or Russian. The main thing is that it melts perfectly. Grate the cheese on a small grater.

Cover a baking sheet with foil and grease it with vegetable or butter. Place the chops over the entire surface, add salt and sprinkle with spices. I love the mixture of utskho-suneli and dry adjika - these are universal spices for meat, fish, and side dishes.

Place tomato slices on top of the chops. You can also add a pinch of salt.

Now sprinkle the tomatoes with grated cheese.

Now place slices of mushrooms on top of the cheese; you can salt them with a pinch of salt if desired.

Make a mayonnaise grid of any fat content on top of the mushroom layer. You can spread the mayonnaise with a silicone brush.

Sprinkle the pieces of meat with grated cheese - this is the final layer.

Place the baking sheet in an oven preheated to 180 degrees. You don’t have to worry about the first 20 minutes, but after this time it’s better to supervise the process - after all, all the ingredients will quickly reach readiness. When you see that the pork is already baked, you can remove the pan from the oven. Usually, after 30 minutes, the merchant-style meat with mushrooms is ready.

Serve in portions, with a side dish, fresh herbs, and vegetables.
