Ingredients

  • a piece of pumpkin weighing about 300 g
  • semolina 1 cup
  • egg 2 pcs.
  • sugar (in the dough) 1 cup + sugar for syrup 3 tbsp. l.
  • drink 1 glass
  • premium wheat flour 1 cup
  • butter 100 g (room temperature);
  • vanilla sugar 1 tsp.
  • baking powder for dough 2 tsp.
  • lemon 1 pc.
  • sweet powder for sprinkling 1-2 tbsp. l.
  • vegetable oil for greasing the mold 1 tbsp. l.

How to cook pumpkin manna

Before kneading the dough, semolina must be soaked in kefir so that it swells. Then pour the semolina into the drink, stir well and leave for at least half an hour.

Trim the skin from the pumpkin and remove the seeds.
Grate the pulp on a medium grater. Grate the lemon zest, then cut the lemon, squeeze out the juice and strain. Preheat the oven to 180-200 degrees.

Using a spoon, rub the butter with sugar and vanilla sugar, then break the eggs into the butter mass and stir again with a spoon.

Place the already swollen semolina with kefir into the bowl and stir again with a spoon until smooth.

Add pumpkin with lemon zest to the prepared mixture and stir.
All that remains is to add flour and baking powder and completely knead the dough.

It is better to choose a mold for manna with a small diameter, because in the oven it will not rise very much, and the cake will not be flat. I used a springform pan with a diameter of 20 cm.

Grease the mold with oil and place the dough into it.

Place the pan with the dough in a hot oven. Each oven has its own baking time, it can be 40 minutes or 55 minutes, so rely on yours.

A good way to avoid the manna from burning on the bottom is to place a metal or just a heat-resistant cup of water under the baking sheet. And readiness can be determined by the color of the crust and edges, which should be perfectly browned. But more often they use the “dry match” method.

Finally, it’s time to pour the pumpkin manna with syrup. To do this, add lemon juice to 100 ml with water, add 3 tbsp. l. sugar, place over medium heat, boil and cook for 5-7 minutes, stirring the sugar until the grains are completely dissolved.

Immediately pour the hot syrup over the hot manna while it is still in shape. The syrup will be instantly absorbed.

All that remains is to sprinkle the cake with sweet powder, sifting it through a sieve.

How to cook manna with pumpkin and pear

Combine semolina with sour cream in a deep container, stir and leave for 20 minutes until the mass swells.

Rinse the pears and pumpkin, cut into slices, removing the core from the pears first.

Place butter in a frying pan, add sugar (2 tablespoons), and turn on the heat. Caramelize the pears and pumpkin for 10 minutes. To add a spicy scent, add cinnamon and dry ginger powder.

When the semolina increases in size, use a blender and puree the mass.

Then add soda slaked with vinegar, a pinch of salt, vanilla and regular white sugar and wheat flour. Stir everything thoroughly with a silicone spatula.

Turn the oven on 180 degrees. Line a small baking pan with parchment paper. Place caramelized pears and pumpkin on the bottom, you can divide them into two parts and place one of them as a layer of the pie.

Place semolina dough on top of the sweet pieces and smooth it with a spatula. Bake the manna for an hour. Then give it a little time to cool, and only later transfer it to a dish.

Serve manna with pumpkin and pears with raspberries, grated with sugar, or with sour cream, previously mixed with sweet powder.

Let's prepare a tasty, juicy and fragrant manna with kefir in the oven. This recipe will be with pumpkin: you will get colorful and delicious homemade cakes. Pumpkin manna with a cup of tea or coffee is good company!

The pumpkin puree for the dough must be thick (bake the pulp in the oven and punch it with an immersion blender or rub it through a sieve), while the brightness of the finished manna depends on its color. Take the drink with medium fat content (I have 2.5%), and medium-sized chicken eggs (about 45 grams each).

When finished, pumpkin manna will be quite juicy and sweet. If you wish, you can reduce the amount of sweet sand, and instead of orange zest, flavor homemade baked goods, for example, with vanilla sugar.

To make juicy and fragrant pumpkin manna, we will need the following ingredients: pumpkin puree, semolina, drink, sweet sand, chicken eggs, orange zest, baking powder, a little vegetable oil (to lubricate the mold) and a pinch of salt (to balance the taste). All products should be at room temperature.

Pour 150 grams of semolina into a deep bowl. Add 300 grams of thick pumpkin puree and pour 180 ml of kefir.

Mix thoroughly and leave on the table for 30-40 minutes so that the semolina swells. In this way, you can soak the semolina in advance (for example, at night (that is, in the dark) ), but before baking you must let the mixture warm up.

Pour 150 grams of sweet sand into another bowl and add 1 tablespoon of orange zest. The zest is the topmost layer of citrus fruit, bright orange, without a snow-white layer. You can remove the zest using a special device or simply by rubbing it on a small grater.

We thoroughly grind the sugar with the zest, due to which the essential oils are released from the orange easier and better.

Then add 2 medium-sized chicken eggs.

Beat the eggs with fragrant orange sugar until the sweet crystals are completely dissolved and the size of the mass increases a couple of times. Well-beaten eggs are the key to a lush manna.
