My favorite option for making okroshka. It makes a refreshing summer soup in a hurry. And if it sits longer in the refrigerator, it becomes absolutely delicious.
It is better to use good quality sausage. I think this is already clear to everyone, especially if there are children in the family.
Well, after this soup you can enjoy zucchini pancakes. This will make a real summer lunch. After all, when else, if not in the summer, should you stock up on vitamins from vegetables and fruits!
- potatoes – 4-6 pcs.;
- eggs – 3 pcs.;
- boiled sausage;
- cucumbers – 2 pcs.;
- radish;
- dill, green onions;
- sparkling mineral water – 3 l;
- sour cream – 250 g;
- salt to taste.
- Boil eggs and jacket potatoes. Let them cool, peel and cut them into small pieces.
- We thoroughly wash all vegetables and herbs.
- Peel the cucumbers if they are bitter. Finely chop one cucumber, chop the second cucumber into three on a large grater.
- We also clean the radishes. We chop some with a knife, and some with a grater.
- Cut the boiled sausage into small cubes.
- Finely chop the greens.
- In a large saucepan, mix all the ingredients: potatoes, eggs, cucumbers, radishes and herbs.
- Fill everything with mineral water, add salt and sour cream. Mix everything well and serve!
Recipe for cool soup with mayonnaise and citric acid
Another good option for okroshka with mayonnaise. Citric acid adds the necessary sourness. You can replace it with the juice of the freshest lemon if you have it on hand.
The cooking principle remains the same simple and playful.
- mineral water – 1.5 l;
- mayonnaise – 2 tablespoons;
- sour cream – 2 tablespoons;
- citric acid - on the tip of a knife;
- boiled sausage – 200 g;
- eggs – 4 pcs.;
- potatoes – 4 pcs.;
- cucumber – 2 pcs.;
- radishes – 8 pcs.;
- green onions and dill;
- salt, pepper to taste.
- Boil potatoes and eggs, cool. Then we clean and chop with a knife.
- We also cut all the vegetables into cubes, having previously washed and peeled them. We chop the greens.
- Pour all the chopped ingredients into a large saucepan, stirring gently with a spoon.
- In a separate container, mix mayonnaise with sour cream, adding salt. Then add a little sparkling water here. Mix everything so that there are no lumps of mayonnaise.
- Pour the resulting mixture into the pan. Then add mineral water and stir the soup. And at the very end, add citric acid at the tip of a knife. Mix again. Let it brew a little in the refrigerator and treat yourself to a delicious summer stew!
Traditional okroshka with kefir and mineral water
When making okroshka with sparkling water, the drink most often used is. It is sour in itself, so there is no need to add lemon or vinegar, as in other recipes.
This recipe has gained a huge number of fans, so I advise you to try it too.
- drink – 1 l;
- sparkling mineral water – 1 l;
- sausage – 300 g;
- eggs – 4 pcs.;
- potatoes – 4 pcs.;
- cucumber – 4 pcs.;
- dill, green onions;
- salt.
- Boil the potatoes in their jackets, cool them and peel them. Cut into cubes.
- We also boil the eggs until tender, peel and cut two eggs into cubes. And grate the remaining two on a small grater.
It is better that all ingredients are cut into size 1.
- Cut the sausage into small pieces with a knife.
- Now it’s the turn of the cucumbers, two of which we chop, and two of which we grate on a small grater.
- Finely chop the onion and dill.
- We put all the prepared products in one huge container, add salt and mix everything well.
- Fill everything with kefir and cool mineral water, mix. You can serve it right away, but it’s better to let the okroshka steep in the refrigerator for an hour.

- mineral water – 2 l;
- sour cream – 250 g;
- mayonnaise – 1 tbsp;
- vinegar 9% – 1 teaspoon;
- potatoes – 4 pcs.;
- radishes – 300 g;
- sausage – 300 g;
- eggs – 3 pcs;
- cucumber – 3-4 pcs.;
- greenery;
- sugar – 1 teaspoon;
- salt to taste.
- Boil eggs and potatoes, peel and cut into cubes.
- Wash the radishes and cucumbers, cut half of them, grate half of them on a large grater.
- Chop the greens.
- Place everything in a saucepan and mix, pouring chilled mineral water.
- In a separate bowl, mix sour cream and mayonnaise. Pour the finished mixture into the soup. Add sugar, salt and vinegar. Taste it and add salt as needed. Mix and place in the refrigerator to infuse.
- That's all, the freshest soup is ready!
You see, okroshka is a fairly common dish that you can prepare to your own taste. For example, I don’t like potatoes and eggs, so I make them for myself separately from others in the family.
If you don't eat mayonnaise, then replace it with sour cream. If you don't like mustard, replace it with vinegar. In general, cook the way you like, because there is no serious recipe here. If you want it thinner, add more water; if you want it thicker, add less. The main thing is that you and your family like it.

Before you start making okroshka, you should boil the eggs and potatoes, cool and peel.
Eggs and potatoes can be boiled in the evening, put in the refrigerator and used for making during the day.
Cut the eggs into small cubes.
Do the same with potatoes.
Now it’s the sausage’s turn – it should be chopped into small cubes.
The freshest cucumber must be chopped.
I usually chop half a large cucumber into cubes and grate half. So the liquid in the okroshka has the most intense taste, and the sliced cucumbers crunch pleasantly while eating.
Finely chop the onion.
Mix all ingredients in a saucepan.
You will need a 3 liter saucepan.
Fill all ingredients with mineral water.
Add sour cream and salt, stir.
Okroshka is ready. It needs to be slightly cooled and served!
