Okroshka can be prepared with water, kvass, mineral water, whey, and sour okroshka with ayran. This recipe is for those who like okroshka made with water and vinegar.
Ingredients
- potatoes: 6 pcs.;
- eggs: 5 pcs.;
- boiled sausage: 400 g;
- fresh cucumber: 1 pc.;
- greens: bunch;
- sour cream: 2 tbsp;
- vinegar 9%: to taste.

Set the potatoes and eggs to boil in a saucepan.
Remove the eggs from the pan after they have boiled for about eight minutes.
Cook the potatoes for approximately 15 minutes until tender.
While the potatoes are cooking, finely chop the sausage.
Place all ingredients for okroshka into a saucepan or large bowl.
Finely chop the cucumber.
We peel the boiled eggs and also finely chop them. Transfer to a saucepan.
Finely chop the green onion.
Hard onions can be crushed with a masher, then they will become soft.
Peel the potatoes, cut them and add them to the rest of the ingredients. Add salt.
Mix all ingredients well in the pan.
Place okroshka in a deep plate. Add a spoonful of sour cream. Mix.
Add cool water and vinegar to taste. Mix.

Previously, we only recognized okroshka on kvass, but later we tried it on water. It’s just as tasty, and you don’t need to make kvass. A very good recipe and saves time.
I also make okroshka using water and vinegar. I just immediately dilute everything in a saucepan so that the vegetables are saturated with acid, and not as in your recipe, when water is poured into a plate and then vinegar.

Recipe for traditional okroshka on water
To make traditional okroshka, neither vegetable nor butter is used. The dish is low in calories.
- 4 potato tubers;
- 3 chicken eggs;
- 300 g boiled sausage;
- fresh cucumber;
- a bunch of fresh greens;
- sour cream;
- table vinegar;
- salt as desired.
The indicated amount of ingredients will yield approximately 3 servings.
- Boil the potatoes in their skins until fully cooked. Cool, peel, cut into cubes.
- Boil the eggs. To ensure they come out cool , you need to keep them in boiling water for at least 10 minutes. From time to time, chicken eggs are difficult to clean. Immediately after cooking, they must be placed in cool water, then the shell will come off easily . Grind.
- Wash and cut the cucumber. Do not remove the skin; it contains fiber necessary for the body.
- Wash the greens. For okroshka, the most successful combination would be basil, parsley, dill and green onions in equal amounts. You can use cilantro if you wish.
- Mix potatoes, eggs and cucumber. Add salt.

Summer “soup” prepared according to this recipe with sour cream is served cool. It is perfectly refreshing on a hot day and perfectly relieves hunger.
- Ham – 200-300 g;
- Sour cream – 1/3 cup;
- Green onions and dill - a bunch each;
- Three or four testicles;
- Vinegar - 3.5 tablespoons;
- Water – 1.6 liters;
- Potatoes and cucumbers – 3 pcs each;
- Salt - to taste;
- Wash and peel the potatoes, cut them into small cubes, put them in water with the addition of a large spoon of vinegar. Boil until tender, then add liquid;

- Fresh medium sized cucumber;
- Testicles – 4-5 pcs;
- Mayonnaise and salt - to taste;
- Water – 2.5 liters;
- A bunch of dill;
- Vinegar 9% - 1.5 tablespoons.
The recipe for okroshka in water looks like this:
- Boil the potatoes and peel them, cut them into small pieces and place them in a suitable-sized container;
- Peel the boiled chicken eggs, cut them and send them to the potatoes;
- We do the same with the sausage product;
- It is best to grate a cucumber; this will give the dish the most intense flavor;

Okroshechka with mayonnaise and water will appeal to those people who are not very worried about their own figure and do not count calories, because mayonnaise dressing is considered quite “heavy”.
- Lemon small;
- Hard-boiled eggs - 4 pieces;
- Three potatoes;
- Mayonnaise – 200 g;
- Any kind of boiled meat or sausage – 300 g;
- Dill and green onion - one large bunch each;
- Salt - to taste;
- Filtered water – 1.5 l;
- Cucumbers - three pieces.
Manufacturing process at home:
- Rinse the vegetables;
- Boil the potatoes “in chenilles” or bake them in foil in the oven, or in the microwave (Microwave radiation, ultra-high frequency radiation - electromagnetic radiation, including the decimeter, centimeter and millimeter range of radio waves) (respectively, without foil).
