An airy, fragrant, tender and crumbly pie with apricots can be baked both in a slow cooker and in the oven. This pie will amuse you with its ease of making. Instead of mayonnaise, you can use full-fat sour cream and replace fresh apricots with canned ones. All you need to do is let the syrup drain well and roll the apricots in starch. This recipe used a Philips HD 3039 multicooker.
To make apricot pie in a slow cooker, prepare the ingredients according to the list.
Beat eggs with sugar until fluffy foam.
Add softened butter and sunflower oil to the egg mixture. Then add mayonnaise and beat well.
Mix vanilla, baking powder and flour into the dough.
Grease the multicooker bowl with butter. Pour the dough into the bowl.
Wash the apricots, dry them with a napkin, cut them into slices and place them on the dough, pressing them lightly.
Bake the apricot pie in the multicooker in the “Baking” mode for 45 minutes. Let the pie sit in the closed multicooker for 10-15 minutes, then carefully remove it using the steaming tray.
Cool the pie and sprinkle with sweet powder.

Hello, dear readers of my blog! The apricot season lasts, and not baking a pie with apricots at this time means you will regret it later for another year =)
We are on vacation in hot Ukraine, and there are simply no apricots here! Colorful, fragrant apricots of various types fall from the tree at our feet, as if they were asking to be put on the table.
I didn’t pick up the broken fruits from the ground, but with my own hands I picked them straight from the branch, carefully putting them in a clean bucket.
And after that, the baby and I got carried away in the kitchen, and a beautiful pie with apricots was born in a slow cooker. Most of all, my daughter liked serving me apricots when we removed the pits: she did it with such speed that I barely had time =)
So, to make a wonderful fluffy apricot pie, I took the following products:
- Apricots – 400 g
- Sugar – 300 g
- Testicles – 4 pcs.
- Flour – 250-300 gr
- Baking powder for dough – 1 tsp
- Salt – 0.5 tsp/l
- Butter - grease the multicooker bowl
The bowl size of my multicooker is 4.5 liters.

Apricots should be carefully washed, divided into slices and pits removed.
Beat eggs with sugar and salt. The more fluently you beat the eggs, the better.
Add sifted flour, baking powder and knead a thin dough, approximately like sour cream in the mixture.
Grease the multicooker bowl with butter and lightly sprinkle with sugar. We spread the apricots.
Pour out some of the dough.
Place another apricot layer on the dough. You can also cut the apricots smaller and add them directly to the dough.
Pour out the second part of the dough.
Cook the pie in the “Baking” mode for approximately 60 minutes. Check the readiness of the dough.
In order to remove the apricot pie from the multicooker without loss, you need to insert the steaming container and turn the multicooker bowl over.
Decorate your superb cake to your own taste!

Ordinary recipes for pies with apricots in a slow cooker

Let's start.
The most common apricot pie
You can bake biscuits with fruit in a slow cooker; the manufacturing principle is the same as when baking in the oven. The only caveat is that you don’t need to take it out of the mold right away; it’s better to wait until it cools completely with the lid open.
Remove the seeds from about 700 grams of firm (but not greenish) apricots, cut into halves, and lightly dry on a towel. Beat seven eggs with a blender until stiff foam, evenly adding one and a half cups of sugar and a pinch of vanillin. At the end of whipping, add one and a half cups of flour and a teaspoon of baking powder for the dough, stir until smooth and pour into a greased multicooker bowl. Place apricot halves on top, cover with a lid, set the “baking” mode on the multicooker for an average of 65-80 minutes. When the dough begins to rise during baking, it will beautifully entwine the apricots, and the pie in the slow cooker will take on a beautiful appearance. Only after it has completely cooled should it be cut and decorated at your discretion: the most common option is sweet powder.
On kefir
Apricot pie in a slow cooker can be prepared from regular kefir dough, for which the following ingredients are useful:
- 300 g flour;
- 2-3 eggs (if huge - two, if small, then it’s better to take three);
- 1 glass of kefir (if possible, it is better to drink a drink made from homemade milk);
- 100 g butter;
- 120 grams of sweet sand;
- 10-12 large new apricots (in principle, the number of fruits in this pie is personal: you need to focus on your taste preferences);
- 0.5 teaspoons of soda (no need to extinguish it);
- vanillin optional.
Beat the eggs with sugar, melt the butter and pour into the eggs, mix. Add the drink and beat the mixture with a blender until the mixture is homogeneous, at the end add the flour and soda and mix so that there are no lumps. Pour the dough into the multicooker bowl, place the apricots cut into slices on top, bake the pie until done. On average this takes one hour.
After baking, we also do not rush to remove the cake from the mold - let it cool in it. Apricot pie prepared in a slow cooker is very tasty with hot cocoa and cappuccino, but it’s also very good with freshly brewed tea.
From shortcrust pastry
Let's look at a simple recipe for shortbread pie with apricots in a slow cooker, which entices with its taste properties. For production you will need:
- 3 testicles;
- flour – 250 gr;
- sweet sand - an incomplete glass;
- butter – 150 g;
- fresh apricots – 10 large pieces;
- 0.5 teaspoon of soda + a few drops of lemon juice;
- vanillin is added according to desire and taste preferences.
Wash the apricots, dry them with a cardboard towel, divide them into two halves and remove the pits. Place the fruits prepared in this way on the bottom of a multicooker, greased with oil, with the cut side up.
In a separate bowl, beat the melted butter with vanilla and sweet sand. Then add the eggs one at a time, evenly, mixing the mixture with a blender at low speed. Next, add flour and baking powder to the mixture, knead into a soft dough, being careful not to “clog” it with long kneading. Pour the finished dough into the slow cooker over the apricots and level the top with a spoon.
Set the “baking” mode and the timer to 60 minutes, plus another 15 minutes for the “heating” mode. When the pie is baked, throw it in the slow cooker with the lid open for another 15 minutes, and then take it out and cut it into portions.
Cheesecake
This recipe is also quite simple, despite the presence of cottage cheese. In a wide bowl, mix 100 g of melted butter, one egg and 50 g of sugar, beat lightly with a blender and add 0.5 teaspoon of baking powder and 200 g of flour. Knead the dough and send it to a cool place for 40 minutes.
In the meantime, prepare the filling, for which you need to lightly beat the following ingredients with a blender until smooth:
- 400 grams of the freshest cottage cheese with the highest percentage of fat content;
- 200 g sour cream;
- 110 grams of sweet sand;
- 40 grams of starch;
- slightly vanillin;
- two or three eggs.
Line the multicooker bowl with dough in a half-centimeter layer and, lightly pressing the dough with your fingers, create small sides, place the filling on top, on top of which lay the halves of new apricots. Bake in the slow cooker for 60 minutes and cut when cooled.
What is the difference between pies made from the oven and those baked in a slow cooker?
A pie with apricots, as with other fruits, is also virtually no different from pies from the oven, except that there is no fried golden crust - the edges of pies from a slow cooker are soft and tender. Otherwise, they are just as fragrant, airy and delicious. Therefore, if you have any doubts about baking such pies in a slow cooker or in the oven, we focus on the dough: you need crispy golden edges or soft lightness, like a soufflé.
