To make an eggplant and tomato salad for the winter, we will prepare the products we need, and they are quite insignificant.

Blanch the tomatoes and remove the skin.

We weigh 1 kg of tomatoes and blend them in a blender. If you wish, you can chop all the tomatoes, but I wanted some of the tomatoes to remain in pieces in the preparation. Pour the tomato juice into a saucepan and put on fire, cook for 15 minutes, skimming off the foam.

While the juice is boiling, cut the eggplants into slices about 0.5 cm wide and finely hot peppers. Cut the remaining 500 g of tomatoes into large pieces.

Add salt, sugar and sunflower oil to the tomato, drop the eggplants there. Cover the pan with a lid and cook for 20 minutes, then stir the vegetables. Continue to simmer under a closed lid over low heat for another 20 minutes. Add chopped garlic and vinegar to the pan, stir and cook for another 5 minutes.

We put the salad in sterilized jars with lids prepared in advance, roll them up and then turn them upside down. Cover with a warm blanket and leave for the day.
