During the first tasting, slivyanka is remembered for its unusual sweet and sour taste and pronounced plum smell. Although this liqueur is classified as a dessert drink, it can also be served before meals to improve appetite. I'll tell you how to create slivyanka at home. If there are enough fruits, I advise you to take a closer look at at least one of the proposed recipes.

Almost everyone confuses slivyanka and slivovitz, but in fact these are two different drinks that are only prepared from the same raw material. Slivovitz (rakia) is a strong alcohol (45-75 degrees), obtained by distilling fermented plum juice. After aging in oak barrels, the taste of slivovitz is close to cognac or Calvados. Slivyanka, in turn, is a sweet liqueur made from plums with a strength of 18-20%.

Slivyanka can be created from any variety of plums, but especially tasty liqueurs are obtained from the types of Hungarian, egg, Renclod, Mirabelle and Canadian plums. It is believed that the darker the fruit, the better the drink.

Slivyanka with vodka

Ingredients:

  • plum – 1 kg;
  • vodka – 0.5 l;
  • sugar – 300 g.

Manufacturing

1. Wash the ripe fruits well, remove seeds and cut into small pieces.

2. Place crushed plums in a jar.

3. Add vodka so that its layer completely covers the plums. Close the jar with a lid and shake the contents.

4. Place the jar in a cold, black space for 30 days.

5. Filter the purchased infusion through cheesecloth, carefully draining it from the sediment so as not to mash the fruits. We will still need them.

6. Add sugar to a jar with pieces of plums, shake, close the lid and place in a cold, black space for 7 days. It’s still enough for the sugar to turn into syrup.

7. Drain the syrup, squeeze out the remaining syrup through cheesecloth.

8. Mix the syrup with plum vodka tincture, close the jar and let it sit for 30 days.

9. Filter the finished plum through cotton wool to make the drink lighter. This step is optional because bleaching does not affect the flavor.

Alcohol plum recipe

Compound:

  • plum fruits – 2 kg;
  • alcohol 96% – 200 ml;
  • sugar – 450 g;
  • mint – 5 sprigs (optional).

Manufacturing

1. Thoroughly wash the plums, wipe dry, cut into 2 parts, remove the pits.

2. Grind the resulting pulp to a puree and leave for a couple of hours.

3. Strain the plum puree through a sieve to remove the skins.

4. Add alcohol, sugar and mint leaves (optional) to the pulp.

5. Close the jar with a lid, shake and leave for 2 months in a cool, black place.

6. Drain the plum from the sediment, filter through cotton wool and pour into bottles.

The drink is ready, it comes out stronger than those made according to the previous recipe. In a cold place, homemade plum can be stored for a couple of years.

Liqueur from ripe plums is a popular drink, but you are unlikely to find it in the store. I propose to make slivyanka at home, infused with vodka, and I will introduce you to several recipes for making it.

The savory drink contains virtually no alcohol and is considered a ladies' drink. It's easy to drink, slightly tipsy, leaving no nasty aftereffects.

How to create slivyanka at home

Slivyanka is a flexible concept. This definition includes wine, liqueur, liqueur and tincture of plums with or without vodka. Only the manufacturing design differs. In fact, I have collected all the recipes and will gladly share them.

Which plum is the tincture made from?

Any variety of plum that grows in abundance in your garden is suitable. But the most experienced craftsmen have long seen that the most delicious drink comes from the black plum. These are Hungarian, Renclod, Mirabelle, egg, Canadian plum and similar varieties.

How many degrees in the drink?

Since there is no other water in the liqueur other than vodka and plum juice, the strength depends on the juiciness of the plums.

Homemade liqueur is a typical aperitif, dessert, consumed in pleasant company. Don't confuse it with slivovitz, a harsh drink with a good dose of alcohol. The usual recipe for slivyanka with vodka

  • Vodka – 500 ml.
  • Plum - kilogram.
  • Sugar – 300 gr.
  1. Rinse the berries, dry them slightly, removing excess water, and remove the seeds. Divide large fruits into several parts, small ones into halves.
  2. Place in a 3 liter jar and pour in the vodka. Make sure that the alcoholic drink covers the plums. Stir.
  3. Hide the jar in a dark place and be patient for a month.
  4. After 30 days, carefully strain the plum preparation. Pour the clear vodka infusion into another container.
  5. Pour sweet sand into the jar with the remaining plum piles. Replace the lid and return to the darkness.
  6. After a week, carefully pour the sugar contents into the vodka infusion that was strained earlier.
  7. The maximum holding period is 30 days. During this period of time, the sediment will fall down. Filter it and pour it away. Pour the finished liqueur into a bottle.

Alcohol plum recipe

Homemade slivyanka can be made using alcohol. The taste will not change, but the pouring will be higher in strength than the previous recipe. It is important to understand how to properly dilute alcohol. If you want the plum to be stronger, do not dilute the alcohol.

Taking into account that the drink should not be strong, and the berries will add juice, I advise you to dilute the alcohol with water in half, then the drink will come out light. Here the choice is yours; you can adjust the strength yourself.

  • Berries – 2 kg.
  • Sugar – 450 gr.
  • Alcohol 96% – 200 ml.
  • Mint sprigs - optional.
  1. Divide the unblemished fruits into parts and remove the seeds.
  2. Grind into a puree using any method (blender, masher, sieve, food processor). Remove the skin of the fruit immediately.
  3. Let the pulp sit for an hour or two, add sugar, alcohol, mint, whatever you like.
  4. Close the jar tightly with a lid, hide it in a cold place and forget for 2 months.
  5. After waiting until the end of the term, filter the plum a couple of times and pour it into beautiful bottles.

Recipe for slivyanka with seeds in vodka

Plums of any variety, yellowish or blue, can be used for the tincture. The result will be a superbly savory liqueur.

  • Plums – 2 kg.
  • Sweet sand – 300 gr.
  • Vodka – 1.5 liters.
  • Ginger root – 20 gr.
  • Cinnamon stick.

Step-by-step production of homemade liqueur:

  1. Rinse the fruits and let them dry, spreading them out on a napkin.
  2. Fill a 3 liter bottle up to the hanger and add sugar. Immediately throw in the cinnamon stick and ginger (you can swap for a ground version of the spices).
  3. Pour in the vodka, leaving 2 fingers of space at the top. Close tightly, hide in a hidden space and leave for a month or two. Strain and start tasting.

Slivyanka without vodka - a regular recipe at home

A savory liqueur can be prepared without adding alcohol, using yeast. The degree in slivyanka is created by fermentation.

  • Dark plums – 2 kg.
  • Water – 2 liters.
  • Yeast, dry – 15 gr.
  • Sugar - kilogram.
  • Lemon.

How to make plum:

  1. Remove the seeds from the washed fruits, cut them and pour boiled water over them without cooling.
  2. Press down with a press (cover with a plate and place pressure on top). Leave it for 3 days.
  3. Next, transfer the plum mass into a jar, add sugar, yeast and lemon juice. Stir.
  4. Place a rubber glove over the neck. The jar can be thrown in room conditions. The contents will begin to ferment, the glove will begin to unfold and rise.
  5. When the glove moves to the “hello, friend” position and rises one hundred percent, the process is considered complete.
  6. All that remains is to strain the liqueur and take the first sample.

How to make Slivyanka wine without vodka

A very weak drink with low alcohol content. The recipe is universally applicable; it can be used to make wine from any berry.

  • You will need:
  • Plums – 4 kg.
  • Water - half a liter.
  • Sugar – 500 gr.
  1. Separate the seeds from unblemished berries. Mince the pulp slightly, then put it in a large jar or bottle.
  2. Fill with boiled water and keep warm for 5 days.
  3. After the expiration date, drain the infusion, add sugar, and stir.
  4. Send the container to a black but warm place. The drink will begin to ferment. After 1-1.5 months, fermentation should end. Pour the tincture and place it in a cold space. Let it sit for an extra month or two and try.

Prepare all the ingredients for making cream.

How to create slivyanka at home:

Rinse the ripe plums thoroughly and remove the seeds.

Cut the plums into small pieces (each plum half into 4 parts). Place the plums in a three-liter jar or any other container.

Add vodka so that it completely covers the plums.

Place the lid on the jar of plums and shake the contents. Place the jar in a cold, black space for 30 days (in my apartment it’s a pantry).

After a month, discard the plums in a sieve, straining out the acquired infusion.
Pour it into a clean container, close it tightly and put it in the refrigerator. Add sugar to a jar with pieces of alcoholized plums, close the lid, and shake gently. Place in a cold, dark space for 7 days so that the sugar turns into syrup.

After a week the plums look like this.

Drain the syrup, squeeze out the remaining syrup through cheesecloth.

Mix the purchased syrup with the tincture of vodka drained earlier, pour it into bottles and leave the slivyanka to age for another 25-30 days.

After this time, the sediment will settle to the bottom and the drink will become a transparent dark burgundy color.
You can strain it through cotton wool, the plum will become lighter in color. Serve as a dessert liqueur with fruit and coffee with desserts.

Plum liqueur, slivyanka, is basically a folk drink than plum liqueurs - no rums, gins or aristocratic brandies for you. Almost all recipes for this common, but at the same time unique drink, use ordinary vodka or food alcohol. So preparing such a drink at home is not only simple, but also affordable.

Do not confuse slivyanka with slivovitz - the first is liqueur, and slivovitz is rakia or plum brandy, a distillate from plum mash, which has been made in the Balkan countries for a long time. The recipe for slivovitz is presented in this article. By the way, it would be correct to prepare all plum liqueurs specifically with slivovitz, so that the drink comes out very “plumy,” excuse the joke. Such a drink will be soft, without foreign tastes and odors. The same should be done with plum liqueurs.

Any plum recipe can be made better - add cinnamon, cloves, vanilla, citrus zest and other ingredients.

To make our slivyanka we will use ordinary vodka and the same ordinary alcohol. Double-distilled homemade moonshine would work great here, but it would be better if it was fruity and not sweet. Plum liqueurs are best prepared from slightly overripe, fragrant fruits. Not spoiled, not wormy. This is very important, just like high-quality alcohol. The drink comes out sweet and sour, of moderate strength, with a beautiful reddish color.

Traditional slivyanka with vodka

  • 1 kg ripe plums
  • 0.5-0.7 l vodka
  • 300 g sugar

Rinse the plums, dry them and remove the stones. If the fruits are large, you can cut them into small slices. Place the plums in a jar of a suitable size and pour in vodka, making sure that it completely covers the fruits - add vodka as needed. You need to infuse the plum liqueur for at least 30 days, after which you carefully pour the infusion through a sieve, and at the same time throw the plums untouched. Next, add sugar, shake the jar slightly and leave it alone for another week. During this period of time, the sugar will completely dissolve, turn into syrup, and absorb the remaining alcohol and juice.

Next, strain the syrup through several layers of gauze and squeeze well. Mix the syrup with the infusion and pour the plum into bottles. It is better to keep the liqueur for a month, or better yet, two or three, after which it can be filtered and served. It is recommended to drink it in its pure form at room temperature - the cold completely kills the smell and catchy plum taste. Vodka is not noticeable in the drink.

Homemade plum liqueur with honey

  • 3 kg ripe plums
  • 20-30 plum seeds
  • 1.5 l alcohol 95.6%
  • 1 liter of vodka or moonshine 40%
  • 0.75 kg honey (or sugar)

Rinse the plums well, break them in half and remove the pits. Wrap 20-30 seeds in gauze and place at the bottom of a suitable sized jar. Add plum halves and pour alcohol into the contents. Close the jar tightly and leave it in a dark, cool place for 4-6 weeks. Then carefully pour the infusion through a sieve, carefully remove the seeds wrapped in gauze, and pour the halves of plums remaining in the jar with honey or sprinkle with sugar. Wait another 2 weeks, remembering to shake the jar from time to time.

After 2 weeks, honey, like sugar, should draw out the remaining alcohol from the pulp and turn into a fragrant syrup. The syrup must be carefully drained through a sieve, and the plums must be filled with vodka, this time for three weeks. After three weeks, drain the vodka and combine it with the first tincture and syrup. Wait a couple of weeks until a cloudy sediment appears on the day. Drain the liqueur from the sediment, filter and bottle. The drink must be stored in a cool place. It is recommended to wait at least one year before tasting this masterpiece.

Slivyanka with mint alcohol

A very gentle, fresh drink. The strength is not low, but the liqueur is easy to drink.

  • 2 kg ripe plums
  • 200 ml food alcohol
  • 450 g sweet sand
  • 5 small sprigs of mint or lemon balm

Slivyanka was also prepared in the USSR (Union of Soviet Socialist Republics, also the Soviet Union - a state that existed from 1922 to 1991 in Europe and Asia)

Wash the plums, dry them, break them into two parts and remove the pits. Grind the pulp into puree and leave for a couple of hours in a cold place. Then the puree must be strained through a sieve or squeezed through several layers of gauze. This way we will get juice with pulp without skins. Next, add alcohol, sugar and mint/melis to the juice (you can only take the leaves).

Pour everything into a jar, close it and leave it to infuse in a black, cool place for 2 months. Next, the plum liqueur is strained through a sieve, filtered through a cotton filter and bottled. Leave for at least 2 weeks before tasting.

You can also prepare plum liqueur without vodka, using only natural fermentation. But it’s better to make plum wine - the development there is deliberate and the drink comes out of the highest quality.

If you don’t like sweets, and plum liqueurs and liqueurs are just like that, prepare a regular tincture: 1 kg of plums with a stone (the fruit must be cut or pierced with a toothpick), pour 2 liters of vodka and leave for 6 weeks. The result should be a very pleasant, moderately sweet drink. If you don’t like it or find it too strong, you can add sugar at the rate of, for example, 200 g of sugar per 1 liter of drink.
