  1. Place 120 g of butter, honey, sugar in one pan and place on the stove over low heat.
  2. While the butter is melting, break 3 eggs into a bowl and lightly beat with a whisk.
  3. When the butter has melted, we begin to pour the eggs into it evenly, but do not forget to stir constantly so that they do not curl. Cook this entire mixture over low heat for 5-7 minutes until a snow-white foam forms.
  4. Then add soda and leave for another minute. Our mixture will increase in volume thanks to the soda.
  5. Remove the mixture from the heat and add flour to it. Knead the dough, divide it into eight equal pieces and leave to rest for 15 minutes.
  6. Meanwhile, preheat the oven to 200 degrees
  7. Then we take our dough and roll out eight equal cake layers. You can create them evenly by cutting off any excess using a pan lid and a knife.
  8. Next, cover a baking sheet with parchment paper and place the shortcakes on it one by one. Bake any shortbread for 3-4 minutes. Remove and let cool.

Preparing the cream

  1. Place the milk in a saucepan on the stove to heat, but do not bring to a boil.
  2. Meanwhile, beat the eggs with starch. And when the milk is warmed up, pour it into the egg mixture and beat again.
  3. Put it all on the stove and cook over low heat for 5-6 minutes until thickened, stirring constantly.
  4. Transfer the mixture into a deep bowl, add honey and condensed milk and mix.
  5. Add very softened butter and beat again.
  6. At the very end, add rich sour cream and mix without whisking.

I rarely spoil my family with “Honey Cake” because I don’t like rolling out shortcakes, but from time to time inspiration arises and I cook them. One of our favorite options is “Medovik” with boiled condensed milk. Naturally, such a cake is a real paradise for those with a sweet tooth, because it turns out quite sweet. Well, that’s what a cake is for, to be sweet. After all, we don’t eat cake every day, but from time to time we can treat ourselves, right?! In general, let's make a “Honey cake” with boiled condensed milk!

Cut the butter into several pieces and place in a bowl, add sugar and honey.

Place the mixture in a water bath, stirring with a spoon or whisk until the entire mass becomes homogeneous. Add soda to the mass given to us, and stirring, cook for another minute.

Remove the bowl of dough from the water bath and let cool until slightly warm. After this, break the eggs into a bowl one at a time and beat well until the mass is homogeneous.

Sift flour into the dough in parts, mix well. When it becomes difficult to mix with a spoon, continue kneading with your hands.

This is how the dough comes out.

Divide the dough into 9 parts. Naturally, you can do more, depending on the diameter of your cake.

I have a small size on the backing - 22 cm, so I stuck to it. Cut a square out of parchment and roll out one piece of dough using a rolling pin. Cut the circle according to the template.

Remove excess dough and carefully prick the crust with a fork. Using the same principle, roll out all the shortcakes. I advise you to immediately roll out at least half of the cakes, because they bake quickly and it is necessary that they are already ready for baking.

Preheat the oven to 200 degrees and bake any shortbread for 4-5 minutes. Also collect the scraps of dough together, roll them out arbitrarily and bake them at the very end; they will be useful for sprinkling the “Honey cake”. Place all baked shortcakes in a stack on parchment.

For sprinkling, break a random shortbread into pieces and place it in a blender. It seemed to me that this would not be enough crumbs, so I broke another shortbread and added a handful of walnuts. Grind all the pieces into crumbs.

  1. Break the eggs, add sugar. Beat with a mixer until light foam appears.
  2. Add softened butter in advance (remove from the refrigerator half an hour before baking). Mash the mass well.
  3. Quench the baking soda with lemon juice and add to the mixture. Add flour in several additions, carefully kneading each portion. The dough will resemble thick sour cream.
  4. Bake the shortcakes. Divide the dough mixture into 6 parts. Grease the bottom of the springform pan. Pour one part of the batch. Place in the oven, preheated to 180 o C. After 10 minutes, the base is ready. Bake all the shortcakes.
  5. While the cake base is cooling, beat the cream from soft butter and condensed milk.
  6. Assemble the Honey Cake by coating the shortcakes with cream and placing them on top of each other. If desired, decorate the cake with crushed nuts.

Tender, moderately sweet, superbly savory homemade honey cake. If I had to choose, I would bet on him.

  • Butter – 100 gr.

Break the eggs into a bowl and scramble them with a fork.

Pour sugar into a separate deep bowl, add butter and honey. Remove the butter from the refrigerator in advance and let it melt a little.

Place the bowl with the listed products in a water bath. To do this, pour hot water into a saucepan and place the bowl as in the photo. Heat over high heat. Soon the butter will begin to rapidly melt and the candied honey will dissolve. Stir the mixture until smooth using a spoon.

Then use the mixer until the mixture is completely mixed (the main thing is to separate the sweet sand crystals).

Add baking soda.

Fold in the beaten eggs. Run the mixer vigorously again.

Add a couple of glasses of flour and continue kneading.

When the lumps disappear, add the next portion of flour, and so on until the product is complete. First, mix with a mixer.

Then, when the dough becomes the stiffest, move to the table, dusting it with flour. Gather the mass into a lump and knead it well with your hands. Roll into a long sausage, as in the photo. Cut the dough into 1 size pieces, dividing by the number of cakes. In total you should get 10-12 balls.

Roll out any ball into a narrow flat cake. Then cut out cake blanks of similar diameter. Take a flat plate as a guide.

Place baking paper on a baking sheet, lay out the crust, and place the dough scraps nearby - we will need them for the crumbs. Bake in an oven heated to 200 o C. Baking time for the cakes is 5-7 minutes.

In front of you is a ready-made shortbread. At first it will be soft, then it will harden evenly. Prepare all the base layers for the cake in the same way.

Prepare the cream by mixing condensed milk with sour cream. Beat it vigorously with a mixer.

Assemble the cake by placing the cakes one on top of the other and generously coating with sour cream and condensed milk.

  6. Place soft butter in a bowl and beat with a mixer to a high foam.
  7. Slowly, in several additions, pour in the condensed milk, vigorously whisking each time with a mixer.
  8. Assemble the Honey Cake as described in previous recipes. Generously coat the top and sides with cream. Crumble the cake scraps and sprinkle over the cake. Crush the nuts and decorate the top of the dessert.
  9. Place in the cold to soak for 2-4 hours.

Mix everything well and put in a water bath until the mass doubles. While doing this, stir vigorously.

Then sift half the flour and leave the dough to rest. Leave for 20 minutes until the dough has cooled to room temperature.

When the dough has rested, add the remaining flour little by little and knead the dough. It must be elastic and not stick to your hands. It’s better to dump the flour evenly and see how much the dough takes in.

We begin to roll out the shortcakes. Sprinkle the table with flour and, pinching off a piece of dough, roll out the cake to approximately 5 mm wide. Place in the oven for 2-3 minutes.

Mix sour cream (550 g), honey and boiled condensed milk.

Divide the cream into two parts. One large part is for greasing the cakes, the other is for decoration.

In 50 grams of the remaining sour cream, soak the gelatin for 15 minutes. When it swells, put it on gas and keep it until completely dissolved. (!) Do not boil.

Let the gelatin cool slightly and pour it in a narrow stream into the smallest part of the cream, stirring vigorously. Cool until slightly frozen.
