How to properly boil pork tongue
In order for the tongue to come out savory and tender, it is important to cook it correctly. If a frozen product is consumed, it must be thawed before production. Like any meat, it is better to defrost the tongue evenly. To do this, it should be placed on the bottom shelf of the refrigerator and left overnight (that is, in the dark) or during the day (depending on the size). If you don’t have this ability, you can use the quickest method - put the product in cool water for a couple of hours.
Then you need to carefully wash your tongue, place it in a pan of hot water and bring to a boil. 15 minutes after boiling, the water must be drained and replaced with fresh water. You need to cook the tongue for 1.5-3.5 hours. The cooking time also depends on the size of the product.
Half an hour before the end of production, you can add carrots, onions, bay leaves and celery root for flavor . It is recommended to salt the broth at the end of production. When the tongue is cooked, you need to immediately put it in very cool water and hold for a couple of minutes. After this it will be easy to clean the skin.

The tongue is rich in easily digestible proteins, which is important for people suffering from anemia. It is also recommended to eat pork tongue for certain kidney diseases, upper respiratory tract infections and burns. Among all the necessary substances contained in this by-product, it is especially necessary to note the significant supplies of lecithin, B vitamins, phosphorus, zinc and sodium.
Pork tongue is also widely used in cooking. Although, in order to process it for future use, you will have to work hard. So, the process of cooking this offal takes about 1.5-2 hours. In this case, you need to skim off the foam and change the cooking water from time to time (any 30 minutes). Boiled pork tongue is one hundred percent ready for consumption only after the dermatological film can be removed from it.
After processing, pork tongue can be used in various dishes, replacing the usual ingredients. Almost all Old Russian dishes are prepared on the basis of this by-product. But they are quite difficult to make, so we won’t focus on them, but rather turn our attention to pork tongue salads, which are unusually tasty and nutritious.

Boil the tongue in salted water with spices until tender. Let it cool, then remove the skin and cut into strips. Cut the cucumbers into thin slices.
Finely chop hard-boiled eggs. Place the ingredients in a salad bowl in layers. Place cucumbers and tongue on the very bottom, then eggs and grated cheese. Between each layer, be sure to create a layer of mayonnaise. Garnish the salad with fresh herbs and serve.
Salad with pot
Ingredients needed to make:

- canned green peas
- salted cucumbers
- loaf
- provencal mayonnaise
- sunflower oil
- hard cheese
- leaf lettuce
- bell pepper
Boil the tongue in advance. Then let it cool, and after a while chop the pork tongue into small strips. Cut the loaf into pieces and fry in oil.
Remove the bell pepper from seeds and other entrails and cut into half circles. Cut the cucumbers into cubes.
Combine all ingredients, adding canned green peas. Pour mayonnaise over Provençal. Mix the salad properly. Garnish with fresh lettuce leaves and sprinkle with grated cheese.
Unique salad
Ingredients needed to make:
- pork tongue – 325 g
- white mushrooms – 160 g
- onions – 1 pc.
- pickled cucumber – 1 pc.
- eggs – 3 pcs
- cheese – 100 g
- olive mayonnaise – 90 g
- sunflower oil
- sea salt
Chop the boiled pork tongue. Peel the mushrooms, cut into individual slices and fry in sunflower oil until golden brown.
Finely chop the onion and add to the mushrooms to fry. Boil hard-boiled eggs, let cool and chop (yolk separately, white separately). Cut the pickled cucumbers into cubes of approximately the same size. Rub the cheese on a large grater or cut into cubes.
Mix all the salad ingredients in a spacious salad bowl and season with mayonnaise. Stir vigorously. Leave the salad for half an hour so that it infuses properly. Garnish with remaining egg white and yolk.
Ceremonial salad
Ingredients needed to make:
- pork tongue - 1 pc.
- pickled mushrooms – 180 g
- chicken eggs – 3 pcs.
- reddish onions – 2 pcs.
- Adyghe cheese – 150 g
- sunflower oil
- pitted olives
- mayonnaise
- spices
Boil the pork tongue and cut it into thin strips. Cut Adyghe cheese into cubes. Cut mushrooms (preferably champignons) into slices. Cut the onion into half rings and lightly fry.
Boil the eggs and chop finely. As a dressing, mix mayonnaise with spices. Combine all ingredients. Drizzle dressing mixture over salad. Mix well. Decorate the festive salad with pitted olives.
Salad – “Homemade”
Ingredients needed to make:
- ready pork tongue – 1 pc.
- tomatoes – 3 pcs.
- green peas – 1 small jar
- cucumbers – 1 pc.
- green onion
- dry dill
- cheese
- vegetable oil
- salt spices
Boil the tongue and cut into strips. Cut the tomatoes into cubes. Cut the cucumbers into long cubes. Chop the green onion. Connect everything. Add green peas to taste.
Sprinkle grated cheese on top of the salad and pour in sunflower oil. Do not stir the salad. The maximum that can be done is to cover the salad bowl with a lid and shake everything in the salad bowl well for 20 seconds. Finally, sprinkle with dry dill as decoration.
Salad with pine nuts
Ingredients needed to make:
- pork tongue – 3 pcs.
- cucumber – 3 pcs.
- eggs – 4 pcs.
- cheese – 320 g
- pine nuts – 220 g
- mayonnaise,
- salt
- cilantro
- leaf salad
Boil the pork tongue and cut into cubes. Roast the pine nuts. Combine cucumbers and eggs in a food processor and quickly chop. Grate the cheese on a medium grater.
Lay out the salad in layers in a serious sequence: cucumber - pork tongue - cheese - eggs - nuts - chopped greens. You need to create a mayonnaise layer between each layer. Garnish the salad with the freshest leaves and sprigs of dill and cilantro.
