Pie . A pie is a product made from dough with insides. The word “pie” comes from the Old Russian “pir”. In those days, not a single feast was complete without pies. The dough for making a pie can be anything: puff pastry, shortbread, yeast (it also depends on the inside, whether it will be sweet or salty).

There are different types of pies. They can be open (for example, cheesecakes), closed (for example, kulebyaka), half-open (for example, pies) and in the form of various rolls. In addition, any state kitchen has its own unique recipes for making pies.

The insides can also be very different. There are two groups of entrails: sweet and salty. Sweets include jam, cottage cheese, apples, berries and fruits, etc.

The dough for unsweetened pies is made dense, but not stiff; according to the mixture, it must be loose. Before wrapping the filling in it, the dough is rolled out thinly. But for pies with sweet interiors, on the contrary, the dough is kneaded stiff and rolled out into a thick layer. This is done so that later the inside (sugar, jam, etc.) does not penetrate onto the baking sheet or into the mold.

The filling in the pie is placed completely ready (boiled, fried, stewed), not hot.
This is especially true for savory pies, for example, with minced meat or cabbage. The time it takes to make pies depends on the shape and size. Huge pies, for example, kulebyaki, must be baked for an hour. Small in size - about 30 minutes. It’s not difficult to check the readiness of the pie - just pierce it with a wooden stick (match or toothpick) and see if there is any dough left on it. If the stick is dry, the cake is ready.

Ingredients

  • Testicles - 4 pcs.
  • Sugar - 200 g
  • Butter - 200 g
  • Sour cream – 200 g
  • Wheat flour - 250 g
  • Apples - 5 pcs.

1. Separate egg whites from yolks.

12. Divide the third part of the dough into several pieces and roll them out into long “sticks”.

13. Place the “sticks” on the pie and brush them with egg yolk.

14. Place the pie in an oven preheated to 180°C for 40 minutes.

Plum pie

Ingredients:

  • Wheat flour - 300 g
  • Blue plums – 500 g
  • Sugar - 100 g
  • Butter - 100 g
  • Baking powder for dough - 1 tsp.
  • Juice and zest of ½ lemon
  • Savoyardi cookies or any biscuit - 4 pcs.
  • Sweet powder
  • Salt

1. Mix flour with baking powder, 50 g of sugar and a pinch of salt in a bowl. Add the cooled diced butter and rub the mixture with your hands into a mixture of bread crumbs. Add about 100 g of cool water and knead the dough. Form it into a ball, wrap it in cling film and put it in the refrigerator for 30 minutes.

2. Cut the plums into halves, remove the pits. Mix with remaining sugar, lemon juice and zest.

3. Grease a 10 x 24 cm pan with butter and place ⅔ of the dough in it, lifting it up at the edges. Break the cookies into pieces and place them on the bottom (it will absorb the juice from the plums and prevent the dough from getting soggy), place the plums and syrup on top. Cover the filling with the remaining dough, carefully bringing the edges together. Make several parallel cuts on the dough. Bake the pie for about 40 minutes in an oven preheated to 180°C. Cool the cake slightly without removing it from the mold, and then remove it and sprinkle with sweet powder.

Curd and pear casserole in a slow cooker

Ingredients:

2 pcs.
(small) Soft cottage cheese

200 g
Egg whites

2 pcs.
Cocoa powder

2 tsp.
Brown sugar

2 tbsp.
l. Vegetable oil

1 tbsp.
l. Semolina or wheat bran

2 tbsp.
l. Lemon juice

1. Cut the pears into pieces, sprinkle with lemon juice.

2. Beat the egg whites with sugar, add cottage cheese, stir.

3. Sift cocoa into the curd mass, add semolina (bran), stir.

4. Lightly grease the molds with oil, place the pears in them, and spread the curd mass on top. Place the molds in a steamer container. Cook for 25 minutes.

Apple Quiche

Ingredients

  • Apples – 900 g
  • Sugar - 110 g
  • Cloves - 2–3 buds

For shortbread dough

  • Butter – 110 g
  • Sugar - 30 g
  • Egg - 1 pc.
  • Egg white - 1 pc.
  • Flour - 175 g

For the custard

  • Egg - 1 pc.
  • Sugar - 1 tbsp. l.
  • Cream (fat content 10%) – 150 ml
  • Vanilla extract - ½ tsp.

1. For the dough, cream softened butter with sugar (by hand or in a food processor) until the mixture turns white. Add the egg and beat for a couple more minutes. Reduce beating speed and add flour. Stir until smooth. Wrap the dough in film and put it in the refrigerator for 1 hour.

2. Peel and core the apples and cut into pieces. Place in a baking dish, sprinkle with sugar and add cloves.

3. Roll out the dough into a layer 3 mm wide and cut out several strips from it to tightly stick them to the sides of the mold that were previously moistened with water. Cut out a circle of dough slightly larger in diameter than the mold, moisten the edges of the circle with water and cover the mold. Press firmly onto the sides. Trim off any excess dough and use a fork to press the dough into a circle.

4. Brush the surface of the dough with egg white. Make decorations from the remaining dough and place on the surface of the pie. Cut a small hole in the center. Brush the surface again with egg white.

5. Bake the pie for 30 minutes in an oven preheated to 180°C.

6. For the cream, mix sugar and eggs in a jug, add cream and vanilla. Pour the custard into the hole in the pie and bake for another 25-30 minutes until the custard is set.

7. Sprinkle the slightly cooled pie with sweet powder.

Pear pie with frangipane

  • Wheat flour - 250 g
  • Butter - 125 g
  • Sugar - 50 g
  • Salt - 1 pinch
  • Ground cinnamon - 1 pinch

For the inside

  • Pears - 4 pcs.
  • Brown sugar - 3 tbsp. l.
  • Butter - 50 g
  • Almond flakes - 1 tbsp. l.

For the frangipane:

  • Butter - 75 g
  • Sugar - 75 g
  • Egg - 1 pc.
  • Wheat flour - 20 g
  • Ground almonds 75 g
  • Vanilla extract

1. For the dough, mix the flour with cool butter, cut into pieces, in a bowl, grind the mixture with your hands (you can also use a food processor) until a mixture of bread crumbs. Add sugar, salt and cinnamon. Pour in a little (about 50 ml) water and knead the dough.

2. Make a ball out of the dough, wrap it in cling film and put it in the refrigerator for 30 minutes.

3. For the inside, cut the unpeeled pears into quarters, remove the seeds, and cut each quarter in half. Heat 2 tbsp in a frying pan. l. sugar with butter, when the mass starts to bubble, add the pears. Cook over medium heat for a couple of minutes until the pears soften and the sauce thickens slightly.

4. Remove the pears and put the sauce in the refrigerator.

5. For frangipane, beat softened butter and sugar until fluffy, add lightly beaten egg, flour, almonds and vanilla. Beat well again.

6. Grease the baking sheet with butter or cover with a cooking mat (you can use baking paper).

7. Roll out the dough into a layer no thicker than 4 mm and place on a baking sheet. Spread the frangipane over the dough, leaving 2cm from the edges. Place the pears and sprinkle them with the remaining brown sugar and flaked almonds. Bake for 20 minutes in an oven preheated to 200°C until the edges of the dough are lightly browned.

8. Let the cake cool for 10-15 minutes. Serve pie with chilled sauce. You can add a scoop of ice cream.

  • 6 cups chopped apples (5 medium apples)
  • 1½ cups sugar
  • 1 tbsp. l. cinnamon
  • ½ tsp. nutmeg, grate
  • 1 cup apple cinnamon sauce
  • ¾ cup butter, melt and cool, plus extra for greasing pan
  • 2 tsp. vanilla sugar
  • 3 testicles
  • 1½ cups whole wheat flour
  • 1½ cups bread flour, plus extra for dusting pan
  • 2 tsp. baking powder
  • 1 tsp. baking soda
  • 1 tsp. salt
  • Sweet powder or caramel sauce (optional)

1. Preheat the oven to 180°C. Grease and flour two ring molds (about 20cm across and 6 cup capacity).

2. In a large bowl, combine apples, sugar, cinnamon and nutmeg. Add apple sauce, butter, vanilla and eggs and stir well. Add flour, baking powder, baking soda and salt and stir, but not very vigorously.

3. Pour the dough into the prepared pans and bake for 40–45 minutes or until done (inspect with a toothpick: stick it in the center and pull it out there; there shouldn’t be any traces of dough on it).

4. Let the cupcakes cool for 10 minutes, then transfer to a wire rack. Sprinkle with powdered sugar or caramel sauce (optional). The cupcake is great served warm with a scoop of vanilla ice cream.

Baked fruit crumble

Ingredients

  • 4–6 apples (pears, peaches, apricots or all together);
  • ¼ cup (35 g) raisins;
  • 1 tablespoon (15 ml) lemon juice.
  • ¼ cup (20 g) instant oatmeal;
  • 2 tablespoons (30 g) coffee sugar;
  • ¼ cup (32 g) whole wheat flour;
  • ¼ cup (35 g) chopped almonds or pecans;
  • 3 tablespoons (42 g) cool butter or margarine.

1. Preheat the oven to 190°C. Slice the apples, then add the raisins and lemon juice and stir to combine.

2. Place on a greased baking sheet, filling it approximately ⅔-¾ of the way up.

Load all the ingredients into the bread machine bucket. Set the “dough” mode. At the end of kneading, the dough rises very well.

Let the dough rest slightly, covered with a towel. Next we divide it into 2 parts.

Roll out each part into a circle about 0.5 cm wide. Place pieces of butter throughout the dough and sprinkle with sugar.

Roll into rolls (we get 2 rolls). We cut any roll into pieces 2-3 cm wide.

Meanwhile, prepare the fudge - mix the sweet powder with water.

Let the finished pie cool until warm, then pour in the fondant. When the pie has cooled completely, you can serve it!
