Dumplings with strawberries and dumplings with cherries compete in popularity. This is an old debate in which a favorite will never be chosen. It is believed that the taste of cherry dumplings is more expressive, more beautiful and brighter. But with strawberries, dumplings are sweeter, more tender and more aromatic.

The dough, the cooking method, the aspects of making and serving the two dishes are indistinguishable, and there is no point in associating and arguing, if only because the strawberry season comes earlier. Every dish has its own turn, and the wisest thing is to get pleasure from one first, and later from the other.

What you should know about “strawberry” dumplings:

  1. The dough can be anything: with kefir, cool water, boiling water, without eggs, with eggs, with or without sugar, even with soda! Perhaps the most popular is water with eggs. Let's stop there.
  2. You need to roll out the dough deftly: quite thin to highlight the tenderness of the berries, and quite thick so as not to tear and retain the strawberries and juice.
  3. To seal the strawberry juice inside and prevent it from leaking out, the filling is lightly powdered with starch.
  4. But first, the strawberries are freed from excess juiciness: they are covered with sugar and after half an hour the juice is drained. You will need juice - mix with sour cream and pour over the dumplings - it’s very tasty!

  • water - about ¾ cup
  • testicle – 2 medium or 3 small
  • salt - a couple of pinches
  • sugar for strawberry juice - 1 tbsp. l.
  • strawberries – 0.5 kg
  • sugar for filling - to taste
  • starch - 2-3 tablespoons

Manufacturing

Peel the strawberries from the stalks, cut each berry into 2-4 parts depending on the size, add sugar and set aside for half an hour. After half an hour, drain the juice.

Sift the flour, make a hole in it and add eggs one at a time, followed by salted water.

Knead the dough with a spoon, gently scraping it from the sides of the bowl so that it forms a shape. Then transfer to a board sprinkled with flour and carefully knead the soft, elastic dough with your hands.

Leave the dough to rest for half an hour, covered with a towel.

Roll the resulting dough into a sausage, cut into small pieces, form them into balls and roll out any ball with a rolling pin. Thin, but not too thin, so that the dumplings don’t tear.

You can also mold it in another way: first roll out a large piece of dough into a “sheet”, and later cut out blanks for dumplings from it with a glass.

Place several pieces of strawberries in the center of each piece, powder the berries with sugar, then starch.

Twist and pinch the ends with a braid or fork. In my opinion, a braid looks more attractive, and a fork is faster.

If you do not plan to cook the dumplings immediately, put them in the freezer to freeze.

Cook in boiling salted water for 3-4 minutes until the dumplings float, and then for a few more minutes.

Remove the finished dumplings with a slotted spoon into a bowl.

And serve with sour cream, sprinkle with strawberry juice or jam, sprinkle with sweet powder or season with fresh berries.

Let's prepare the ingredients needed to make Dumplings with strawberries. Any berries are suitable, but it is more convenient to make dumplings from small berries. If the strawberry is very large, then it can be cut into two or three parts.

To make the dough, first dissolve one teaspoon of salt in warm water.

Step 3:

Beat an egg into the sifted flour and pour in salted water in a narrow stream. Knead a soft dough that does not stick to your hands.
