To do this, first cut the onion into thin half rings and grind the coriander grains in a mortar. Then put mustard, sugar, salt in a bowl and grind well. Continuing to grind the mustard, add vegetable oil to it in small portions, and when the oil is completely added, pour in vinegar. The sauce should become lighter and fluffier at this step. At the end of production, pour crushed coriander grains into the sauce and stir everything well.

Since I was a teenager, herring has been served this way at home, and for a long time I thought that this was the usual serving. Not long ago I realized that 99% of the population of Moscow (I don’t understand how other regions) make herring, put it on the table and store it in a completely different way, and see/hear/try my filling (sauce) for the first time. Recipe for “Herring in mustard sauce”:

Peel the herring from skin and entrails, cut off the head, remove from the backbone, remove all the bones, cut into slices and put in any container you like. I put it in a container with a wide bottom, but you can also put it in a jar.

Peel the onion, cut into half rings and add water to remove excess bitterness.

Place two teaspoons of mustard in a bowl or mug (I put it right heaped as it was scooped) and dilute the mustard with lukewarm water. Add water evenly so that no lumps are created. Sprinkle sugar, add vinegar and sunflower oil (if you like, you can use it with flavor). Stir everything until the sugar dissolves and try. Basically, I do everything by eye, so proportions are a relative thing here. If you add mustard, you will have to add water; if you don’t add it, the sauce will be “empty”. Well, vinegar and sugar according to your taste, some like it sweeter and some don’t.

Drain the water from the onion and add the onion to the herring. I make a lot of onions, so I have a lot of sauce.

Pour mustard sauce over everything. You can eat it right away. You can create not one, but, say, two herrings and, closing the lid, put them in the refrigerator. It doesn’t become any more terrible, on the contrary, everything is soaked in the filling and eaten with a bang.

Salted herring in all its forms is my small weakness. It is good on its own with rings of the freshest crispy onions and hot boiled potatoes or a slice of fragrant Borodinsky. But now I propose to try a very exciting version of a cool snack - let's prepare the most delicious herring in mustard sauce. The recipe is very simple and everything is done quickly, it’s just better to wait a few hours for the dish to marinate.

For this appetizer, I advise you to take the salted herring as a whole carcass (preferably barrel-salted), and not cut up in vacuum packaging. In the first case, the fish comes out even tastier and more fragrant. Onions can be used not only white, but also reddish (even better) - they are sweeter and more tender. If you don’t have grain mustard on hand, don’t worry - replace it with the one you have in the refrigerator.

Making a dish step by step:

The recipe for this simple and tasty cool snack includes salted herring (from lightly to strongly salted - whichever you like best), onions, vegetable oil (I like it specifically with refined sunflower), lemon juice, mustard seeds and a little sugar. Absolutely, the proportions of the ingredients used in this recipe are not so important, so you can safely add more or less of this or that product.

We fillet the salted herring, in other words, remove the skin, intestines and bones. Pay special attention to small bones, which most often remain in the fish pulp.

Cut the herring fillet crosswise into portions.

Now let’s quickly make the sauce by mixing mustard, sugar, lemon juice and vegetable oil in a suitable sized container.

Add pieces of salted herring to the mustard sauce and mix everything thoroughly.

We clean and cut the onion into fairly thin rings and add it to the rest of the ingredients.

Mix everything, close the bowl with a lid and send our fish to exchange tastes and smells in the refrigerator for at least a couple of hours.

That's all, the herring in mustard sauce is ready - it's time to taste it.
