Pink salmon in the oven with cheese and sour cream under a vegetable coat. A very juicy recipe!

Have a nice day, dear readers! Now I will share with you one of my favorite fish recipes. Specifically, we will cook pink salmon. As is clear, this is a fairly dry representative of salmon. And I'll tell you how to make it super juicy.

We won't fry it, but bake it in the oven. To prevent the fillet from drying out, we will cover it with a “fur coat”. And this fur coat will be very tasty in itself. In a word, I highly recommend making it!

Now we will bake the fillet, and not the whole fish. And this will reduce production time. After all, the thinner the layer, the faster it gets there. 20 minutes in the oven will be enough and you can enjoy the result.

Recipe for juicy pink salmon fillet in the oven with vegetables and cheese

The vegetable component will now be small: onions and carrots. In the summer season, you can add a little bell pepper, it will also be very tasty. So, take these products:

  • pink salmon - 1 pc.
  • carrots - 1 pc.
  • onions - 1 pc.
  • sour cream - 200 gr.
  • semi-hard cheese (I use Russian) - 100 gr.
  • garlic - 4 cloves
  • oregano - 0.5 tsp.
  • salt, pepper - to taste
  • sunflower oil - 2 tbsp.

The fish must still be frozen so that it can be easily cut into fillets.

1. We start by making a vegetable coat. Everything here is simple and familiar. Cut the onion into small cubes. Heat a couple of tablespoons of vegetable oil in a frying pan and fry the onion until transparent over medium heat. This will take a couple of minutes.

2. Grate the carrots on a large or medium grater. Add it to the onion, stir and continue cooking for about 4 minutes.

3. At the end of production, salt and pepper the “fur coat”, stir and turn off the heat.

There is no need to cook vegetables until cooked. Fry them lightly and that's enough. They will cook well in the oven.

4. First, peel the pink salmon (it’s small, easy to clean). Cut off the fins and tail. If the carcass is not gutted, then remove the entrails and cut off the head. Wash and pat dry with cardboard towels.

5.Use a knife to make an incision along the ridge to cut the fish into two halves.

6.Cut out the spine. And thinly cut the rib bones with a sharp knife. Use your hands to walk around the halves and remove any remaining bones. You should end up with two fillets.

7.Cut each fillet into portions. There will be about 10 pieces in total.

8. Grease a small baking tray with vegetable oil. Place pink salmon in it in two rows, as shown in the photo below.

9.Salt and pepper the fish to taste. I also added a little oregano for scent. Lightly rub the seasonings with your hand so that they are distributed as sparingly as possible.

10.Spread the fried vegetables on top of the fish in an even layer. Try to cover the sides of the fillet so that it does not dry out during baking.

11.Grate the cheese (take a good one, without adding vegetable fats so that it melts) on a large grater. Grate the garlic to it, but use a small grater.

12.Pour sour cream into a deep plate and add cheese and garlic to it. Stir everything well. You will get a very tasty sauce that you will want to eat right away. But you control yourself, don't do it.

13.Lubricate the pink salmon with the resulting dressing. Apply it with a spoon or silicone spatula, whichever is more convenient for you. Also try to “wrap” the fish with the fur coat given to us both on top and on the side, covering the vegetables.

14. Turn on the oven to warm up in advance, so as not to wait later. A temperature of 200º is required. Place the baking sheet with the product to bake for 20 minutes. You shouldn't keep pink salmon in the oven for a long time; it can dry out. This fillet cooks quickly. Despite all this, it remains juicy.

Select top and bottom heating mode. Place the baking sheet on the middle rack of the oven.

15.Take out the finished dish and serve it hot. By this time the cheese will have time to melt perfectly, but will not harden, it will be pleasant to stretch. I'm sure you'll like it!

16. Vegetables go great with baked pink salmon, for example, pickled cabbage with beets. By the way, it is also in the photo below: colorful and tasty. From time to time you can pamper your family with such a snack.

I wish everyone a good time while making food! Let everything turn out delicious. Also watch the video where I show how to create this delicious, juicy and tender pink salmon:
