Trout with oranges baked in foil

To make it you will need:

  • two trout weighing no more than 350-400 g;
  • 1 orange;
  • a mixture of herbs to taste (definitely rosemary and oregano);
  • salt pepper.

Clean the fish, remove the insides, wash thoroughly under running cool water and dry with kitchen cardboard towels. Rub the trout on all sides with a mixture of pepper, salt and herbs. Leave it like this for 10 minutes. At this time, cut the orange into half rings.

Place the fish on the foil, place orange slices in a row on top (you can put a few inside). Wrap the fish in foil and bake in the oven at about 200 degrees for 20-30 minutes.

Tip: serve the fish by placing it on a leaf of lettuce, garnishing with cherry tomatoes and any other vegetables of your choice; steamed vegetables sprinkled with a mixture of lemon juice and olive oil would also be a good side dish.

Chicken in sweet pepper sauce

To make it you will need:

  • 800 g chicken fillet or other part of chicken as desired;
  • 250 g reddish or orange sweet pepper;
  • 2 medium tomatoes;
  • small onion;
  • 2 cloves of garlic;
  • 3 tbsp. l. sifted flour;
  • vegetable oil for frying;
  • salt, pepper, ground nutmeg.

Rinse the chicken, dry with a cardboard towel, add a little salt and roll in flour. The chicken fillet can be cut into pieces if desired, but the legs can be cooked whole. Fry the chicken in vegetable oil until golden brown (but not until cooked) and transfer to a thick-bottomed saucepan or casserole.

Make a small cross-shaped cut on the tomatoes, dip them in boiling water for a few minutes and simply remove the skin. In a food processor or blender bowl with a blade, grind the chopped peppers, tomatoes, onions and garlic until pureed. Pour this sauce over the fried chicken, add salt and pepper, add a small pinch of nutmeg, add 160 ml of hot boiled water and cover with a lid.

First simmer the chicken over medium heat until the sauce boils, then reduce the heat to low and simmer the chicken until cooked.

Mussels in creamy curry sauce

To make it you will need:

  • 450-500 g mussels;
  • 1 onion;
  • 5 tbsp. l olive oil;
  • 250 ml cream (at least 20% fat);
  • 4 cloves of garlic;
  • salt, pepper, curry.

If the mussels are frozen, they must be thawed in advance, but not in water or in the microwave, but simply at room temperature. Then carefully drain off the excess liquid. Peel the onion and garlic and chop finely.

In a frying pan with heated olive oil, lightly fry the onions and garlic for a few minutes, and when the onions are browned, add the mussels. Fry the mussels for a couple of minutes, and at this time, in a separate bowl, mix the cream with a small pinch of curry powder. The cream will acquire a wonderful yellowish color and a narrow taste.

Pour cream over mussels, salt and pepper the dish. When the cream boils, cook the mussels for about 5-7 minutes over medium heat.

Tip: mussels can be served separately or with a small amount of rice.

Chicken soufflé with broccoli

To make it you will need:

  • OK. 800 g chicken fillet;
  • 300 g broccoli;
  • 1 slice of lemon;
  • 2 testicles;
  • 100-150 g sour cream;
  • salt, pepper, butter.

Wash the chicken fillet under running water, dry with a cardboard towel and cut into small pieces. Divide the broccoli into small florets, wash and place in a pan of bubbling water, adding one slice of fresh lemon. Cook the broccoli for about 5-7 minutes, then discard in a colander.

Separate the yolks from the whites. In a food processor or blender, grind the chicken fillet, yolks and sour cream until smooth. Separately beat the whites with salt and pepper to stiff peaks. Gently add the egg whites to the chicken mixture, stirring only from bottom to top, and not slamming or stirring clockwise to create an airy mass.

If you have a small heart-shaped baking pan, this is an ideal option; you can use medium muffin pans to make a portioned soufflé right away. Grease the pan with butter, first lay out a layer of chicken mixture, then broccoli florets, cover with chicken mixture on top. Bake in the oven at 200 degrees for 30-35 minutes.
