Melt the butter, mix with honey and yolks, beat lightly. Beat the egg whites with sugar until stiff peaks form. Mix the whites into the butter mixture. Add flour, sifted with soda, stir until smooth. Divide the dough into 3 parts, place in molds (I baked in rings and a springform pan), greased with oil, bake for about 20 minutes in an oven preheated to 170*C.

Check readiness with a toothpick.

Wash the prunes well, pour boiling water over them and leave for 20 minutes. Chop the nuts with a knife.

Whisk the sour cream. Beat the butter with sweet powder until white, add curd cheese, beat again and carefully stir in the sour cream.

Cut the prunes into small pieces. Dissolve sugar and honey in the prune infusion.

If the shortcakes rise unevenly during baking, cut off the tops.

Soak the shortcakes generously in syrup. Layer with cream, sprinkle with nuts and prunes.

Let the cake soak for 12 hours.

With all this, dessert for tea drinking is not only tasty, but also very healthy. I suggest baking a cake with prunes and walnuts. The recipe for this homemade sweet has many variations, but I offer only three, the most tested and successful.

Cake with prunes and walnuts - a recipe for the usual

Despite the fact that this walnut cake with walnuts is a common recipe, it turns out to be a wonderful confectionery masterpiece. Thin shortcakes are soaked in tender cream, and the dessert simply melts in your mouth.

In order for such a cake to appear on your table, you will need the following ingredients for the dough:

  • • flour – about 1.5 cups;
  • • butter – 100 g;
  • • a tablespoon of sour cream and cocoa powder;
  • • sweet sand – a glass;
  • • egg yolks – 4 pcs.;
  • • baking soda – half a teaspoon.

The cream will come in handy:

  • • half a liter of sour cream;
  • • a glass of sugar and walnuts;
  • • prunes – half a kilogram;
  • • butter – 300g.

  1. The method of making the dough is very simple. Before all this, you will need to take care of the butter: you need to take it out of the refrigerator in advance so that it becomes soft. Using a spoon or fork (whichever is more convenient), you need to grind it with raw yolks and sugar. The result will be a light creamy mass. You need to add soda to it. There is no need to extinguish soda in the classic way with vinegar; for this you will need that spoon of sour cream. Pour flour into the mixture and knead the dough. When the dough is ready, it must be divided into three pieces. In one of them - stir in cocoa.
  2. We preheat the oven ahead of time so that we can place the shortbreads in it to bake while it is already hot. It should be baked in a round shape, the best diameter is 25 cm. To moderately distribute the dough over the shape, you just need to moisten a spoon in cool water and “spread” it as necessary.
  3. The shortbreads are baked quite quickly: at 180 degrees - about 8 minutes. We give the cooled cakes an even round shape, cutting off the excess, but there is no need to dispose of the trimmings: they will serve to decorate the finished cake.
  4. Working with cream is a bit more painstaking. If the prunes have pits, they must be removed. Seedless, quickly soak dried fruit in water to soften, let the water drain and grind it with a blender or meat grinder.
  5. It is better to crush the nuts with a knife, then they will not turn into small dust, but will be of a suitable size - both small and rather large crispy pieces.
  6. Beat half a glass of sugar with butter, and in another container, beat the remaining sugar with sour cream. Two creams come out. And from them we make one, combining sour cream and butter, adding nuts and prune pulp. Few nuts are worth throwing in to decorate a cake. Quite a lot of cream comes out. But you will need all of it.
  7. Use the bottom crust to make a light crust, place a third of the cream on it, spreading it evenly with a spoon. The average shortbread is black, the one with the addition of cocoa. Place another third of the cream on the black crust and cover with the top light crust.
  8. Coat the top and sides of the cake with the remaining cream. After chopping the biscuit scraps, mix these crumbs with the reserved nuts and decorate the cake. That's all, all that remains is to put this beauty in the refrigerator for 3-4 hours. Then you can start drinking tea.

Another variation of nut cake with prunes is a recipe with condensed milk. We select the ingredients separately for the dough and for the cream.

So, the dough will require the following products:

  • • a glass of sugar;
  • • testicles – 3 pcs.;
  • • flour – 250 g;
  • • sour cream – a glass;
  • • vanillin – sachet;
  • • baking powder for dough – a tablespoon.

The cream is prepared from:

  • • butter – 200g;
  • • condensed milk – 2 containers (500 ml);
  • • vanillin – 10 g;
  • • a glass of pitted prunes;
  • • walnuts – 2/3 cup.

In addition, you will need: butter for greasing the mold, half a glass of nuts for sprinkling the finished cake.

  1. To create biscuit dough, beat eggs, vanillin and sugar with a mixer into foam, add sour cream into it, mix. Mix flour and baking powder and add to the watery egg-sour cream mixture. The dough comes out watery. Pour it into a baking dish, greased with oil and place it in the oven preheated in advance. Baking lasts about half an hour at 180 degrees. The readiness of the shortbread can be determined using a toothpick.
  2. While the cake is preparing, it’s time to create the cream. The prunes must be soaked in hot water for half an hour beforehand, and at the time of production, they must be thrown into a sieve to drain the water. Then the prunes need to be crushed in a blender into a homogeneous paste.
  3. The butter must be thoroughly beaten with vanilla. When these ingredients form a light, soft mass, add condensed milk, but do it evenly, without stopping whisking. A snow-white light cream comes out. Approximately a third of it must be put into a separate bowl, and the remaining cream should be brought to readiness, adding prunes and chopped nuts.
  4. Cut the finished cooled shortcake into 2 round shortcakes of similar thickness. The assembly of the cake begins.
  5. Place one shortbread on a plate. Coat with nut-prune cream. We spread all the cream without sparing. Cover the top with the second crust. We return to the deferred snow-white cream: we coat the cake with it along the edges and on top. And then sprinkle with the reserved nuts, crushed into crumbs. the finished cake in the refrigerator overnight (that is, in the dark) . The next morning he is ready!
