Now I would like to offer you a recipe for mushroom pizza - at least some of my own. The smell of fried wild mushrooms will leave few people phlegmantic, and their taste is simply impossible to resist. We will prepare mushroom pizza on the basis of Italian yeast dough, which not only works unsurpassedly (it simply stretches), but also turns out incredibly tasty.

Of course, instead of wild mushrooms, you can make pizza with champignons or oyster mushrooms, but I can assure you that with wild mushrooms it will turn out even tastier and more aromatic. Choose any hard cheese to suit your taste - I use Parmesan (made in Belarus - it costs several times less than overseas, but is not inferior in taste).

I wrote the number of servings (8 pieces) conditionally: for some people a whole pizza won’t be much, but for others even 1 piece is enough. Mushroom pizza comes out in regular size - 30 cm in diameter.

To make mushroom pizza, we need the following products: pizza dough, wild mushrooms (I used boiled ones), tomato sauce, onions, hard cheese and unflavoured vegetable oil.

Let's prepare the filling. To do this, pour refined vegetable oil into a frying pan, add boiled wild mushrooms, diced peeled onion and fry everything over medium heat until golden brown.

In the meantime, grate the cheese - on a grater in any holes, it will still melt.

The mushrooms and onions are fried and simply fragrant. Let it cool down a little.

In the meantime, let's make the dough and turn on the oven to heat up (190 degrees). Sprinkle the table with a little flour and place the dough on it.

We also dust our hands with flour and begin to stretch the dough into a narrow round layer. Naturally, you can roll out the dough, but I prefer to stretch it - it is so soft, tender and flexible. First, we run our fingers along the entire perimeter of the dough, pressing it to the table. Then we take the dough in our hands and, turning it clockwise (or vice versa - whichever is more convenient), we seem to make it thinner by weight. Quite difficult to describe, to be honest. Then we stretch the dough, rotating it, on the table.

We transfer the workpiece (thickness no more than 3-5 mm) onto a baking sheet covered with pegrament and lightly sprinkled with flour.

Lubricate with tomato sauce. Spread the mushrooms and onions sparingly.

Sprinkle everything with grated cheese and place in the oven for 15 minutes.

Our dough is thin, but the inside is ready. This is why mushroom pizza is prepared very quickly. Not like in an oven, of course, but still.

Serve the mushroom pizza hot. You can also sprinkle some cheese on top – it will melt instantly. Fragrant, with melted cheese, delicious fried mushrooms and a narrow crispy base.

The taste of a pizza is determined by its innards, and mushroom pizza is no exception. Pizza often has a complex composition, with a huge amount of ingredients inside, and has a very rich, and therefore not always unique, smell. Therefore, if you are preparing a pizza with any “special” ingredient in its interior, you should not drown out this smell with many other ingredients. But highlighting it by adding a little not very fragrant, but hot or spicy ingredient to the filling is very useful.

Compared to most of the main ingredients of the innards, which have a neutral taste and smell (mozzarella, Parmesan, olives), most of the main innards have a pronounced and noticeable taste. In fact, the taste of the finished pizza is determined by the taste of the main ingredient. For example, pizza with eggplant is difficult to confuse with anything else, and pizza with seafood has its own incomparable special taste.

It’s hardly worth combining eggplants and seafood, because... Probably the taste of fried eggplant will interrupt, rather than complement, the taste of seafood. Chicken with mushrooms and potatoes, pizza with mushrooms, risotto with mushrooms, potatoes with mushrooms, roast with mushrooms - everything with mushrooms. And everything is very tasty. Mushrooms usually have a slight odor that is easily perceptible and should not be drowned out.

But the taste of new white mushrooms, picked just yesterday, will give the pizza a very typical taste and smell. Mushroom pizza does not need any additions, special spices or preparations. You can simply highlight the taste of snow-white mushrooms by adding a few small pieces of fried hot pepper. The pepper will not be distributed moderately throughout the interior, so the white mushrooms will be the main component of the interior, providing the flavor of the mushroom pizza.

How nice it is to pick up new snow-white mushrooms and use them to make amazing mushroom pizza according to an Italian recipe. Mushroom pizza is consistently incomparable.

Mushroom pizza is easy to prepare, all ingredients are available. If it’s not mushroom season, you can always use homemade mushroom preparation – boiled and frozen mushrooms. A little tomato sauce, mozzarella, optional pieces of pickled hot pepper and the pizza will turn out very tasty.

How to make mushroom pizza

  1. Prepare yeast pizza dough according to the usual recipe.

After the dough has risen, stretch it into a flat cake 5-7 mm wide and place it on the pan, having previously lightly greased it with olive oil. Be sure to prick the dough with a fork in several places. Let the dough rest, covering it with a napkin, so that it rises slightly.

  4. While the dough is resting, start working on the inside. Peel the onion, cut it into small cubes and fry in a frying pan until translucent.
  5. Cut the mushrooms into small slices and add them to the onions. Fry the ingredients for 10 minutes. Add seasonings to taste.

First prepare the dough according to the above recipe. For the largest and thickest pizza, divide the dough into two, and for the narrowest and smallest pastries - into three. Cut the mushrooms into small thin pieces, maybe cubes or long slices. Fry them in oil without stirring for long, about 2 minutes. Cut the onion into thin half rings, combine with the mushrooms, stir and remove the pan from the heat. Next, roll out the dough into a thin layer, approximately 0.5 cm. Place on a baking sheet, greased with oil beforehand, preferably on a round shape, apply ketchup and spread over the surface. Lay out the contents of the pan in an even layer, add chopped bell peppers, thinly sliced ​​tomatoes and sprinkle with grated cheese. Add olives on top, having previously chopped them. Place in a preheated oven. Bake at 180 degrees for 20 minutes.

When ready, transfer and let sit for 5 minutes.
