Layered upside-down pie with apples
Another version of apple pie made from puff pastry is an upside-down pie. The pastry got its name for a reason: when served, the former bottom part of the pie becomes a wonderful top. The combination of sour apples combined with sticky sweet caramel can be called a win-win without exaggeration. Prepare this treat at least once, and your family will never stop asking you to create it again and again.
- Puff pastry – 1 package;
- Sour apples – 1.5 kg;
- Sugar – 150 g;
- Butter – 20 g;
- Cinnamon – 1 tsp.
- Honey – 2 tbsp.
Upside-down pie with apples is made from puff pastry without yeast. For baking, an ancient frying pan without a handle is suitable, which can be safely placed both on the stove and in the oven.
- Wash the apples, peel them, remove the seeds, cut into thin slices. Sprinkle with lemon juice to prevent them from darkening.
- Mix 2 tablespoons of sugar with cinnamon, sprinkle the apples with this consistency.
- Melt butter in a frying pan. Add the remaining sugar and honey. The sugar will begin to melt, acquiring a golden caramel color. To prevent the caramel from burning, you need to stir it with a spatula.
- Carefully place the apple slices on the bottom of the frying pan, possibly overlapping them. When heated over low heat, they will release juice, which will mix with the caramel. Cook the apples for about 15 minutes. Remove the dishes from the heat.
- Roll out the thawed puff pastry across the width of the pan and carefully cover the apple slices with it, being careful not to push them into a pile. Tuck the dough into the sides, seemingly enveloping the filling.
- Using a fork, make moderate punctures across the entire surface of the dough so that it does not rise too much during baking.
- Place the pie in the oven. Bake at 180°C for 30-35 minutes.
Remove the finished pie from the oven, let stand for 5 minutes, then turn the pan over onto a large platter. If you leave the pie in a frying pan, the caramel will harden very much and removing the dessert will not be so easy.
An open-faced puff pastry pie with apples and caramel is equally delicious served warm or cool. You can serve the pastries with a scoop of creamy ice cream. It's insanely delicious!
Useful tips
Lingonberries for baking can be consumed either fresh or frozen (they are available in any supermarket). The freshest lingonberries are washed well, spoiled berries are thrown away, and the good ones are dried, spread out on a cardboard or fabric towel.
- Taking into account that lingonberries are a sour berry, you can achieve greater sweetness inside without adding excess sugar, but by using sweet varieties of apples.
- The berry-fruit interior will become even more fragrant if you sprinkle it with cinnamon, nutmeg or vanilla.
- It is possible to avoid excessive release of juice when baking apple-lingonberry pie by adding a little starch to the filling.
- It is recommended to bake a puff pastry pie with apples and lingonberries on the middle level of the oven. With all this, it is better to preheat the electronic oven to 200°C, and the gas oven to 180°C.
You see, the recipe for puff pastry apple pie is so simple that you can prepare it even on a weekday. Fragrant pastries will brighten up a gloomy autumn evening and fill the house with warmth and comfort.

Puff pastry is an ideal solution for those who want to cook something quickly and tasty, because it is very easy to work with. You can buy it in almost all stores, put it in the freezer, remember it and remember about it 5 minutes before cooking. The dough defrosts quickly at room temperature (in about 45 minutes) or in the microwave in 5 minutes at the lowest power. Dough defrosted in the microwave loses its elasticity a little, but this does not interfere with cooking at all. Some housewives prefer to defrost it by placing it wrapped in cellophane in warm water.
In the summer, when apple picking is ripe, puff pastry will come to the aid of the housewife, because it mixes perfectly with any inside, both sweet and sour, and there is very little hassle with it, there is no need to be afraid that the dough will not fit either At the last moment it turns out that some ingredient is missing. The apple pie recipe can be easily varied. By adding ingredients such as raisins or cinnamon, which mix perfectly with apples, you can get two different pies prepared according to the same recipe.
Pie with apples and raisins
- Puff pastry – 500 g
- Large apples – 5 pcs.
- Small raisins – 100 g
- Butter – 20 g
- Sugar – 2 tbsp.
Remove the core from the apples, cut them into medium-sized pieces, approximately 1.5x1.5x1.5 cm. You don’t have to remove the skin, it will soften perfectly in the frying pan. Heat a frying pan over medium heat, melt the butter and throw in the apples. Sprinkle sweet sand on top so that they give juice.
If the apples are sweet, 2 tablespoons of sugar will be enough; if they are sour, then you can take a little more if you wish. Stir occasionally, after 2 minutes add the raisins and leave in the pan until the apples soften. If you don’t have raisins at home, don’t worry, the pie will turn out delicious without them. Cinnamon lovers can add one tablespoon of this delicious spice.
Roll out the dough into two layers, place the filling between them, pinch the edges well and put in the oven for 25 minutes at 180 degrees. You can also make pies with these insides, but they must be closed.
Apple and Cinnamon Pie
- Puff pastry – 500 g
- Large apples (preferably not sour) – 3 pcs.
- Sugar 50 g
- Cinnamon – 10 g
- Egg yolk – 1 pc.
This is probably the most common recipe for apple pie with puff pastry. Remove the core from the apples and cut them into thin slices. Roll out the dough into 2 layers, carefully lay the apples on the first layer with an overlap. Mix sugar with cinnamon and sprinkle the apples sparingly, cover the top with a second layer of dough and pinch the ends well. You can create cuts on top for beauty and so that the dough does not inflate.
We take an egg, separate the yolk from the white, we won’t need the outer one. Beat the yolk slightly and brush the pie. Place the pie in a previously preheated oven for 15-20 minutes at 200 degrees.
Almond Pie
- Puff pastry – 500 g
- Dried almonds – 100 g
- Sweet powder – 5 tbsp. l.
- Large apples – 5 pcs.
Remove the core from the apples and cut them into thin slices. Cut the almonds into small pieces. A blender can come to the aid of lazy housewives, but you shouldn’t grind the nuts very finely.
Roll out the puff pastry and divide it into two parts.
Place chopped apples on the first one, sprinkle nuts on top, and sprinkle with sweet powder. The apples will certainly give juice, but not very much, so this pie can be made partially open. To do this, cut the second layer of dough into strips and cover the pie with them. Place the pie in an oven preheated to 200 degrees for 20 minutes.
Apple strudel
- Puff pastry – 250 g
- Large apples – 3 pcs.
- Raisins – 100 g
- Sugar – 2 tbsp. l.
- Testicle - 1 piece
- Cinnamon – 1 tsp. (optional)
Peel the apples, remove the middle, cut into slices or small cubes 1.5x1.5x1.5 cm. Roll out the dough, place on special baking paper or a silicone mat. It is better not to use paper or a mat for future convenience, because with them it will be easier to wrap the dough. Place apples in the middle of the dough, leaving the edges free. If desired, you can sprinkle the apples with cinnamon. Place raisins on top and sprinkle with sugar. Lightly beat the eggs separately.
We begin to wrap the roll: take one edge of the puff pastry and cover it with the apples. We grease this edge with an egg on top so that the second one sticks to it better. Next, cover the second edge and grease the entire strudel with the remaining egg for decoration.
To make the pie look like a traditional strudel, we make long, oblique cuts on top, approximately 2 centimeters apart. Place in a previously preheated oven for 25 minutes at 180 degrees.
Open pie with apples in the shape of a rose
- Puff pastry 250 g
- Medium apples - 5
- Sugar – 2 -3 tbsp.
- Butter 30 g + 10 g for greasing the mold
- Lemon juice – 1 tbsp.
Peel the apples, remove the core, cut into slices approximately 3 mm wide. Since the pie will be open, moisten the slices with lemon juice so that they do not darken.
Roll out the puff pastry and place it in a previously greased round pan so that the edges are folded up 2-3 centimeters. Lovers of beauty can skip the mold and cut out a round base from the dough, and weave the edges in the form of braids from 2 strips of puff pastry.
Melt the remaining butter. Brush the inside of the puff pastry with about ½ of the melted butter and sprinkle with half the sugar. We begin to overlap the apples in circles from the edge to the center, forming a beautiful sketch reminiscent of a rose. Grease the apples with the remaining butter and sprinkle with sugar. If the apples are sour, you can use a little more sugar. Place in the oven for 20-25 minutes at 180 degrees.
Pie with apples and bananas
- Puff pastry 500 g
- Medium-sized sweet apples – 4 pcs.
- Banana – 2 pcs.
- Egg – 1 piece
- Jam – 2 tbsp.
- Sweet powder (optional) – 2 tbsp.
Peel the apples, remove the core, cut into slices approximately 4 mm wide. Peel the banana and also cut into slices. Roll out the dough and divide into two parts, one of which is slightly larger. First put apples on this part, bananas on top. Cut the remaining dough into strips and place them on top of the pie.
Bake the pie in a previously preheated oven for 20-25 minutes at 180 degrees. Because this recipe does not use sugar, the pie is not very sweet. If desired, the finished pie can be sprinkled with sweet powder on top.
Apple pie made from puff pastry - the best baking recipes from ready-made dough
Packing ready-made dough in the freezer is a strategic supply for almost all occasions. For example, at any moment you can quickly bake an apple pie with a crispy crust and tender sweet interior. The preparation of the dessert is so simple that even the laziest will dare to work a little.
At first glance, it seems that there is only one recipe for apple pie. Even those that I understand do not mean that the others do not exist. Our housewives are brilliant with their thoughts, and have come up with so many different options that it’s impossible to count. There are also open, aspic, and upside-down pies. But the most delicious are baked goods with caramel. A step-by-step recipe is just an example of such a successful dessert.
Apple pie made from ready-made puff pastry - regular recipe
It's an open-faced upside-down pie with a sweet apple interior. Take any kind of dough - yeast or without it, there is no fundamental difference.
- Large apples – 3 pcs.
- Sweet sand – 100 gr.
- Puff pastry – pack (500 g).
- Cinnamon - small spoon.
- Butter – 25 gr.
Rinse and clean the fruit. Be sure to remove the skin if the apples are late and hard. Cut into slices.
Heat a dry frying pan on the stove and add sweet sand. Heat it over medium heat until the crystals begin to melt. No need to stir. Don't wait for them to start caramelizing and darkening; move on to the next step.
Place a piece of butter on the frying pan. Help it bloom by stirring it with sugar.
The butter should melt completely and the smell of butterscotch will appear.
Place apple tenderloin. Continue frying the filling until the juices release and the sugar crystals have completely melted.
Add cinnamon to a spoon and stir well. Turn off the burner, transfer the filling to a plate, and leave to cool.
Flatten out the sheet of dough. If you got square layers folded in half, leave it that way. Unfold the rolled sheet and fold it in half, or even in thirds, as in the photo.
Roll out the layer, trying to give it an oval shape. The diameter of the workpiece should be equal to the size of the surface of the apple pie pan.
Take a one-piece mold, lay out the apples, spread over the entire surface.
Cover the filling with dough, tuck the edges inward, as in the photo. When the pie is baked, you should have sides and an apple inside.
Place the pie on the middle rack of the oven, preheated to 180 o C. Turn on the timer for 25 minutes. The time is relative and depends on the size of the baked goods and the power of your oven.
Let the baked goods cool slightly, then cover it with a wide plate of the same size. With a deft movement, turn the pie over so that the inside is on top. Garnish with whipped cream if desired.

- Cream 35% fat - 2 huge spoons.
- Sugar – ¼ cup.
- Salt – ¼ small spoon.
- Butter – 2 huge spoons.
- Thaw the package of puff pastry.

- Sprinkle apple slices with sugar. Cut the butter into tiny pieces and scatter over the pie.
- Bake at 200°C for 30 minutes.
- Make the caramel right away. To do this, pour sugar into a saucepan and place on full heat.

- Add butter to the melted sweetness, add salt and stir. Then pour in the cream. Stir the caramel again quickly.
- Remove the finished pie from the oven and generously brush the apple surface. Return to oven for another 5 minutes. Gourmets serve dessert with a scoop of ice cream.
