In all versions we will prepare the dough with kefir, but we will experiment with the insides and the method of forming the pie. You can cook it from minced meat, chopped meat, with potatoes, carrots. The pie is made either using the usual method, or filled in layers and baked. The filling can either be left raw and later baked or fried in a pan. We will look at the best options.
Ingredients for the dough:
- 320 g tbsp flour;
- 1 tbsp kefir;
- 20 ml sunflower oil;
- 6 grams of salt large;
- 1 chicken egg;
- a pinch of soda.
Interior:
- four hundred grams of pork;
- 2 heads of onion;
- 1 clove of garlic;
- 75 grams of chopped greens;
- 3 tbsp milk;
- spices;
- sesame.
Step-by-step recipe for meat pie with kefir
The savory pie dough will begin to cook in the bowl. Break the egg, add salt and whisk.
Pour in the drink, oil, soda and whisk again.
The amount of flour indicated is approximate. See how much the dough takes. Add until you get a soft and slightly sticky texture.
Cover it with a towel and leave for 20 minutes.
Rinse the pork pulp, chop it coarsely with a knife and put it in a food processor with a clove of garlic and half an onion. You will definitely end up with minced meat.
Add the remaining onion, cut into thin quarters, to the filling. Let's not forget about chopped herbs, milk and spices.
Stir the filling until smooth.
Roll out the dough into one huge flat cake or divide it into two parts and roll them into a circle.
Place the filling in the center, bring the edges together and pinch. Roll out a little, make a hole in the center and pierce the surface with a fork.
Or we put one tortilla, fill it with entrails and close the second one. Blind the edges and wrap them well. We also make holes and punctures.
Brush with egg and sprinkle with sesame seeds. Bake for half an hour at 180 C.
When the pie is ready, transfer it to a cutting board and cover with a towel for a quarter of an hour. Then we serve it to the table.
Option 2: Frisky recipe for meat pie with kefir
Let's not waste time making minced meat, but use ready-made ones. Add onions and spices to it - the inside is ready. We'll make the dough ourselves, but it will be tough.
Ingredients:
- two chicken eggs;
- 1 tbsp kefir;
- 130 g flour;
- 6 grams of salt large;
- 6 grams of baking soda.
Interior:
- three hundred grams of minced meat;
- 150 grams of onion;
- spices.
How to quickly cook a meat pie with kefir
First, pour the drink into a bowl, add soda to it and stir. Leave for 10 minutes so that the soda reacts with kefir. In this test there is no need to quench the soda with vinegar, the drink will do everything.
Add the other ingredients for the dough and bring it until smooth. The dough comes out watery - the pie will be jellied.
Take a baking dish, grease it with oil, sprinkle with flour. Then pour in half of the prepared dough.
Mix the minced meat with finely chopped onion, sprinkle with salt, pepper and mix. Fill the pie with the insides and fill with the remaining dough.
Cook at 180 C for 40 minutes. Focus on the power of your oven - the cooking time can be increased. The main thing is that the dough is baked, the inside will be ready quickly.
We transfer the finished baked goods to a wire rack, let them cool slightly, cut them and treat them to our relatives.
Option 3: Kefir meat pie with fried entrails
We use minced meat, but we will fill the pie not with raw innards, but with pan-fried ones. Let's simmer the minced meat with onions, then fill the dough and close the pie. Then we bake it in the oven.
Ingredients:
- 0.5 l of kefir;
- 150 g oil drain;
- three testicles;
- 260 grams of wheat flour;
- 50 grams of sugar;
- 11 grams of baking soda;
- 0.5 kg minced meat;
- 80 grams of onion;
- spices.
Step by step recipe
Let's talk about which minced meat is best to use. Do not use beef - the pie will be dry. Add a little pork to add juiciness. You can take homemade or prefabricated.
Break the eggs into a bowl, add salt and sugar and whisk with a whisk.
Stir the baking soda into the kefir, let it bubble, and then pour it into the egg mixture.
Add sifted flour, kneading into a homogeneous dough.
Bring the butter until soft, add to the dough and knead until smooth.
Peel the onions and finely chop with a knife.
We put a frying pan on the fire, heat the oil and put the onion in first and bring it to a transparent color. Now you can add the minced meat. Immediately stir it with the onion and fry until half cooked. Chop huge lumps of minced meat with a spatula all the time.
Finally add salt and pepper, mix and remove from heat. The inside must be completely cool.
Take a baking sheet or a large baking dish. Pour half the dough and level it with a clean spatula.
Distribute all the filling sparingly and cover with dough.
We prepare the pie at normal temperature - 180 C. We focus on the golden brown crust and turn off the oven. The main thing is to bake for no more than forty-five minutes.
We cut the pie and treat the family.
Option 4: Fragrant meat pie with kefir
We will prepare the pie in such a way that the dough comes out crispy and the inside is juicy and fragrant. Before baking, brush the pie with sour cream and sprinkle with sesame seeds.
Ingredients:
- two hundred ml of kefir;
- 320 g flour;
- 1 chicken egg;
- 3 grams of baking soda;
- 30 ml sunflower oil;
- 6 grams of large salt.
Interior:
- half a kg of minced meat;
- 150 grams of onion;
- 2 cloves of garlic;
- half a bunch of dill;
- 3 tbsp milk;
- 6 grams of salt large;
- a pinch of ground pepper.
Additionally:
- 2 tbsp sour cream;
- 2 tbsp sesame seeds.
How to cook
To create the most airy kefir dough, add a little soda. This is a good candidate for yeast, which not every housewife likes to tinker with.
Pour the drink into a bowl, beat in an egg, add salt, soda and add oil. Stir until smooth.
Sift the flour and add in small portions to know when there is enough flour. At the end, a soft and flexible bun comes out that does not stick to your hands.
Cover it with film and put it in the refrigerator for half an hour.
Place the minced meat in another bowl. Add chopped herbs and spices to it. Then finely chop the onion and add it to the filling. Stir and pour in milk. It can be replaced with cream or sour cream at your discretion. So, the inside comes out juicy and very tasty.
Divide the dough into two equal parts. Cover the baking sheet with parchment. Roll out the first layer with a rolling pin and place it on a baking sheet. Spread the filling, leaving space on the sides. We lift them up. Roll out the second layer, close the filling and seal the edges. Wrap them in a lovely spiral.
Grease the entire pie with sour cream and make several punctures with a fork. Sprinkle with sesame seeds and bake in the oven for 40 5 minutes at 180 C.
If the pie is very brown, cover it with foil or reduce the temperature to 160-170 C.
Remove from the oven, transfer to a board and cover with a towel for 10 minutes until the dough softens a little. But it remains tasty and crispy as before.
Option 5: Hearty jellied pie with meat on kefir
Add a little potatoes and carrots to the meat filling to vary the filling and make it more satisfying. We will create a pie from watery dough.
Ingredients:
- 0.45 l of kefir;
- 10 g large salt;
- 320 g tbsp flour;
- 3 chicken eggs;
- 20 ml of oil grows;
- 11 grams of baking soda.
Interior:
- 400 grams of any meat;
- 3 onions; turnips;
- 80 g carrots;
- 3 potato tubers;
- 4 tbsp oil grows;
- 75 grams of chopped greens;
- spices.
Step by step recipe
Rinse the meat and grind in a meat grinder. Then fry it for about seven minutes, stirring constantly. Cook until half done.
Salt, pepper and cool. Then we pass it through the meat grinder again.
Cut the peeled potatoes into very thin slices.
Finely chop the onion, prepare chopped greens.
Peel the carrots and grate them finely.
Boil water, add a little salt and dip the potatoes in it for about three minutes. Then dry it with cardboard towels.
Fry the onion until golden brown. Then add carrots to it, simmer everything together for a few more minutes.
Mix one part of the roast with minced meat, the other with potatoes. Sprinkle both pieces with herbs.
Pour the drink into a large bowl, add baking soda, stir and leave for 10 minutes. Then add other ingredients and bring the dough until smooth. We get thick sour cream.
Heat the baking dish slightly and grease with oil. Sprinkle the bottom with a little flour. Pour out one third of the dough and level it out. Lay out the fried potato mugs, leaving half. Pour in a little more dough, add minced meat and fry. Fill with the rest of the dough and distribute the potato mugs on top.
Preheat the oven to 180 C and bake for 40 5 minutes. Bake for the last seven minutes on the top level of the oven.
Remove the cake, let it cool slightly, then transfer it to a serving board.

I found this recipe in my mother's old recipe notebook. Well, remember when everything was written down from books or from the words of friends and relatives in beautiful handwriting and carefully stored. The manufacturing process is very fast and the products for it are very ordinary, just like 30 years ago.
Ingredients for our pie
For the test
- drink – 1 glass
- soda - half a teaspoon

The process of making jellied meat pie
Step 1. Jellied pie dough
The dough for our pie is prepared very quickly and simply.
- First, mix the drink and soda so that the soda quenches in an acidic environment. And leave it for some time, 15-20 minutes.
- Meanwhile, beat the eggs with salt and sugar. To do this, you can use a mixer or just a whisk, as you like.
- Then we combine the drink and beaten eggs, mix everything well.
- Add flour evenly and knead into a homogeneous, lump-free dough. The mixture of our dough should be like thick sour cream.

Step 2: Pie Inner
And the filling is even easier to prepare than the dough.
- First, let's cook the rice. It’s better to take long-grain so that it doesn’t fall apart into mush in the pie. We do not boil it completely, leaving it a little damp.
- While the rice is cooking, finely chop the onion, heat the frying pan and fry it in sunflower oil until golden brown.
- Add defrosted minced beef and pork to the onion. I usually make minced meat myself, but you can also use store-bought stuff at your own risk and horror. Simmer the minced meat until cooked, mashing it with a fork until it becomes crumbly. Salt, pepper and season during the process.

Step 3. Connecting the inside and dough
Is the dough ready? Is the rice boiled and the minced meat stewed? It's time to put everything together into a tasty ensemble!
- Grease a baking dish with oil and pour 1/3 of the dough into it. You can use parchment paper for baking, it will be easier to remove later and you won’t have to scrape the pan.
- Using a spoon, carefully place the minced meat onto the dough, and add rice on top as a second layer.
- Pour the rest of the dough sparingly over the filling. You need to create everything neatly and carefully so that the dough and the inside do not mix too much.

Step 4: Baking and Decorating
- Preheat the oven and place our jellied pie. Bake for about 40 in the oven. It is better not to open the oven door for the first 30 minutes so that the cool air does not prevent the cake from rising.
- You can check readiness the old fashioned way – with a wooden stick. Pierce it and if the stick is dry, then the pie is ready!
- When the pie has cooled slightly, it is easier to remove it from the mold, and later you can decorate it with herbs and serve with fresh vegetables or a vegetable salad.

Kefir-based pie dough is the most common option for baking quick aspic pies with any insides.
You need to prepare this dough for about 10 minutes, but the result is simply great.
For the inside, take minced meat; it is consumed both raw and fried.
I have beef and pork, with onions, grated raw potatoes (1 piece), spices and salt.
I fried the minced meat very little, until it was half cooked...
For the dough:
- 2 eggs
- 0.5 teaspoons of salt
- 1 cup of flour
- 1 cup of kefir (sour cream 200 g, if thick, plus water 50 g)
- 1 teaspoon of soda
(the dough should turn out a little thicker than for pancakes)
For the inside
- 300 grams of minced meat
- 2-3 pcs. onions
1 raw potato
- salt, pepper.
- Dried dill!
So:
Pour the drink into a bowl, add soda to it and wait 5 minutes. Then add other ingredients for a watery dough: salt, eggs, flour, and stir the resulting mass.
Grease a baking dish with vegetable oil, (I have a 22x22 pan), sprinkle with flour, pour half of the watery kefir dough into it. Spread the filling over the dough. Sprinkle with onion rings (it is better to take smaller onions). This can be raw or fried minced meat and chopped onions, or very finely chopped pieces of meat. Fill the minced meat with the second part of the watery dough. If you doubt whether the pieces of meat will be baked, fry them in a frying pan ahead of time.
Place the baking sheet in an oven preheated to 160-170 degrees and bake the jellied pie with minced meat for 40 minutes.

- Add egg, salt, baking powder, vegetable oil to the drink and mix everything well in a deep bowl using a whisk. The drink and eggs for the dough should be at room temperature.
- Then sift the flour into the drink and add soda or baking powder. Knead the dough well, it should be loose and slightly sticky. Cover with a towel and let it lie for 15 minutes.
The dough for such a pie can be created as a pourable dough . The beauty of mince pie is that it just cooks and comes out consistently. And if you don’t have a lot of time, you can make a pie from puff pastry, prepared in advance or purchased at the store.
Making the inside of the pie
- While the dough is resting, prepare the minced meat. Grind the meat in a blender or grind in a meat grinder with 1 onion and a clove of garlic. To save time, you can add chopped onion and garlic to the prepared minced meat, if you have it.
You can also add fried cabbage, boiled potatoes or fried mushrooms to this minced meat . A pie with entrails made from rice and canned fish or meat and cabbage turns out to be very tasty.
Assembling and baking the pie
- Place the dough on a floured surface and roll out thinly. The thickness must be at least 8 mm.
- Place the filling in the center and smooth it over the entire surface, avoiding the edges. Gathering the edges towards the middle and expelling the air, pinch the dough.
