Fried yeast dough donuts

Now I would like to share a proven recipe for airy and delicious fried donuts. I prefer the traditional version of making them, from yeast dough. This way the donuts turn out to be very fluffy, and besides, they have a taste that is very familiar from youth. Mind-blowingly delicious golden brown rings with a crispy crust - your family will be in ecstasy!

I prepare the dough without eggs, using dry yeast and milk, and for a lean version of donuts, you can replace the milk with warm drinking water.

Ingredients

  • 4 cups flour
  • 1 tbsp. spoon of dry instant yeast or 1 sachet (11 g)
  • 2 tbsp. spoons of sugar
  • 0.5 tsp salt
  • 1 sachet (1.5 g) vanillin
  • 0.5 cups vegetable oil (in dough)
  • 1.5 glasses of warm water or milk (you can use a mixture of water and milk)
  • sweet powder for sprinkling
  • frying oil

Manufacturing

Note: Most often I use fast-acting dry instant yeast; it is recommended to add it specifically to flour. There is no need to activate them separately in warm water. Be sure to check the label on the package of the yeast you are using!

First, mix all the bulk ingredients in a bowl: flour, yeast, vanillin, salt and sugar. I recommend sifting the flour to get rid of unnecessary debris. In addition, this way the flour will become more loose, so that the dough rises better and is more homogeneous and airy.

  • Pour in warm milk or water (or a mixture of both).
  • Then add vegetable oil.
  • Mix the dough. First, mix the ingredients with a spoon, and then move on to kneading with your hands or a mixer. The finished dough should not stick to your hands or utensils.
  • After kneading, the bowl of dough must be covered with cling film or covered with a clean towel and placed in a warm space where there are no drafts. After about 1.5 hours, the dough should have doubled in size.
  • It is necessary to knead it and put it on the rise again.
  • Now the dough should rise faster.
  • Place the finished yeast dough on a table sprinkled with flour, knead a little and start cutting the donuts. I like ring-shaped donuts better, and they cook even better this way. With round donuts, there is a greater chance that the dough in the middle will not cook through. Although, if you follow the frying tips, this doesn't have to happen. So, be guided by your preferences and choose the form option that you like best.
  • Roll out a layer approximately 1.5 cm wide. Using a round mold or glass, cut out circles and in the middle of each circle cut out another small circle. We collect the dough scraps together and roll them out again.
  • Leave the cut rings for 10 minutes to rise.
  • Meanwhile, heat the oil for frying. Choose a fairly deep frying pan, pour vegetable oil into approximately 1/3 of the frying pan and place it on the stove.
  • After our rings have risen a little, carefully place them in heated oil and fry on one side first. It is necessary to fry over medium heat so that the donuts are moderately fried. Over very high heat, the crust will quickly set, but the dough inside will remain raw.
  • Then turn it over and fry the other side until golden brown. The easiest way to twist donut rings is with two forks.
  • First place the finished donuts on a paper napkin so that it absorbs excess oil. And only then transfer them to a dish and sprinkle with sweet powder through a strainer. You can also serve condensed milk, chocolate spread, or your favorite jam or marmalade with the donuts.

    • 0.5 l of milk with a fat content of 3%;
    • 2 testicles;
    • 3 tbsp. l. granulated sugar;
    • 2 full tsp. dry yeast;
    • 0.5 tsp. salt;
    • 100 g butter or margarine for baking;
    • a pinch of vanillin;
    • 900-950 g of premium wheat flour;
    • 400 ml vegetable oil without aroma for deep frying.

    Manufacturing

    Heat the milk to a temperature of 40 degrees. Pour 100 ml of milk into the cup where the dough will be kneaded, add yeast and sugar, mix, and place in a warm space.

    Within 10 minutes the yeast will begin to act - foam will appear on the surface. Even if the bag of yeast says that it can be combined directly with flour, it is better to follow the recipe and use such a dough.

    Pour the remaining warm milk into a cup of dough, break the eggs, add melted butter, vanillin, and salt. Beat the mixture a little with a whisk.

    Add flour to the dough approximately 300 g at a time. Usually, 900 g of flour is enough for the dough, but since in different regions the flour has different properties, it is better to focus on the thickness of the dough.

    As soon as it stops sticking to your hands during kneading, the dough is ready.

    Now you need to give the test a “fit”. Cover the cup with the dough with a lid or film, put it in a warm space, and if there is no such place, then simply in a container with warm water. The yeast dough for donuts will “rise” for 1.5 hours. Every 30 minutes the dough must be inspected, because it rises very well, it can simply “escape” from the pan, to prevent this from happening, you need to knead it a little with your hands.

    After an hour and a half, separate half the dough, place it on a floured work surface and roll out to a thickness of 1 cm.

    Next, you will need a glass (mug) and a cap from a plastic bottle. Using a glass, cut out circles from the dough, and make a hole in the middle of each circle using a cork. Roll out the dough scraps again and form into rings. Do the same with the second half of the dough.

    Place the resulting rings on a separate surface; they should still rise slightly. You don’t need a lot of time for this, because once all the donuts are cut out, you can start heating the oil in a small saucepan or a very deep frying pan. The oil must be brought to almost a boil.

    Place dough rings into the bubbling oil, one at a time or several if the size of the container allows it.

    Deep fry on both sides until golden brown, twist the yeast donuts comfortably using, for example, two forks. Yeast donuts fry very quickly, and you should never leave the stove during frying!

    Place the deep-fried donuts on kitchen napkins to absorb excess fat. Usually, there is no need to add oil when frying.

    Yeast donuts - traditional recipes for fluffy donuts

    Fluffy donuts mixed with yeast are one of the most popular confectionery products in the world.     Yeast donuts - a traditional recipe made with milk

    Here is a traditional method for making delicious homemade donuts using milk.

    • Flour – 600 gr.
    • Milk – 250 ml.
    • Water – 100 ml.
    • Testicle.
    • Dry yeast – 6 gr. (it is allowed to change 18 grams of compressed yeast).
    • Butter – 65 gr.
    • Salt – ½ small spoon.
    • Sugar – 2 tablespoons.
    • Sunflower oil.

    Pour milk and water into a saucepan and place on the stove to heat (not higher than 40 o C).

    Pour into a bowl, add yeast and sweet sand. Shake the mixture, put in a warm place, covered with a towel. After a quarter of an hour, the yeast will start working and will be ready for the next manufacturing step.

    Melt the butter in the microwave.

    Beat the eggs into the dough, add melted butter and salt. Work the mixer well until smooth.

    Add flour and start kneading the dough directly in the bowl. Use a spatula first, then your hands. When the mass becomes almost homogeneous, move to the table. The dough will come out elastic and not stick to your palms.

    Gather the dough into a ball, return to the bowl, and cover. Hide it warm.

    This is what the dough looks like after 1.5-2 hours. It has doubled.

    Roll out the ball on a floured table. The thickness of the cake is 1 centimeter. Cut out the donut blanks.

    Collect the scraps, roll them into a ball again, then make a flat cake and cut the blanks. Let them stand on the table until they double in size. Make holes if desired.

    Pour a generous amount of oil into the pan so that the donuts float freely when frying, without touching the bottom. Heat it up. Fry the products from the bottom side. Then turn over and finish cooking. Keep in mind that the donuts fry very quickly, about 40 seconds. from each side. Therefore, do not move too far from the stove.

    Place the finished donuts on a paper towel and wait for excess oil to be absorbed. Transfer to a plate and run to put the tea on.

    Fluffy homemade donuts made with yeast and kefir

    Be sure to take out the drink in advance so that it has time to warm up; how the dough rises and, as a result, the splendor of the donuts depends on this. The fat content of the drink does not particularly affect the taste of the dessert.

    • Drink – glass.
    • Flour – 3 huge spoons + as much as you need.
    • Testicle.
    • Butter – 25 gr.
    • Dry yeast – 10 gr.
    • Sweet sand - ½ cup.
    • Salt - to taste.
    • Sunflower oil for frying.
    1. Pour the kefir drink into a bowl, add yeast and a huge spoonful of sweetness. Stir, add 3 tablespoons of flour. Knead the dough and place it in a warm place. Soon the yeast will start working and begin to foam.
    2. Beat an egg into the fermented dough, melt the butter, and follow with it. Mix the contents well again.
    3. Start adding flour. It is important that the dough is not very dense, soft, and elastic. It just rolls out. Add in small portions and see when it’s enough.
    4. Roll the dough into a ball and hide it under cling film. Place in a warm place to step up and rise.
    5. Roll out the dough into a sausage shape and cut. Make a thick rope from each piece. Shape into a donut.
    6. Keep the semi-finished products on the table for 10-15 minutes, allowing them to rise again.
    7. Pour oil into a frying pan, heat it, fry the donuts until beautifully browned.

    Lenten yeast donuts on water

    When fasting, you also enjoy baking. This recipe will not violate the canons of fasting, but will allow you to enjoy a delicious dessert.

    • Flour – 2.5 cups.
    • Live yeast – 25 gr.
    • Sugar – 2 tablespoons.
    • Water - a glass.
    • Vegetable oil – 2 huge spoons.
    • Salt – ¼ small spoon.
    1. Crumble the yeast stick, add sugar, and grind. Add water and continue grinding the yeast until it is completely dissolved.
    2. Add a glass of flour and stir. Place the bowl with the dough in a warm place.
    3. After 10 minutes, add another glass of flour and salt. Stir the contents, pour in sunflower oil. Continue kneading the dough, adding the last half cup of flour.
    4. Cover the dough and keep warm until it doubles in size.
    5. Form semi-finished donuts (at least using some method). Keep on the table for 10 minutes.
    6. Fry in plenty of butter until golden, dust with sugar and serve with tea.

    Czech donuts - the most delicious recipe with condensed milk insides

    The inhabitants of the Czech Republic also know a lot about donuts. In small cafes you can often find delicacies prepared with rum. The boiled condensed milk filling can be replaced with any kind of jam.

    • Flour – 2.5-3 cups.
    • Fresh yeast – 40 gr.
    • Milk – 200 ml.
    • Sweet sand – 5 huge spoons.
    • Butter – 3 huge spoons.
    • Yolks – 6 pcs.
    • Zest of 1 lemon.
    • Sweet powder - 5 huge spoons.
    • Rum – 2 huge spoons.
    • Boiled condensed milk – 200 gr.
    • Butter – 50 gr.
    1. Mash the yolks with softened butter and sweet powder.
    2. Warm the milk slightly, add the yeast, stir until dissolved.
    3. Add the butter mixture to the milk and mix thoroughly.
    4. Add lemon zest, add sifted flour. Knead the dough. Place in a warm space for an hour.
    5. Divide the dough ball into two parts, roll into not very thin cakes.
    6. Cut the donut blanks into cups. Place the filling in the center of each circle.
    7. Cover with another flatbread, then cut out a donut using a cup of the smallest diameter.
    8. Deep-fry the pieces first under the lid. then turn it over to the other side, without the lid. Keep the heat on medium so that the donuts have time to bake on the inside. Place the finished treat on a paper napkin to remove excess oil.
