For the inside. Combine 500 gr. cottage cheese, 100 gr. sugar, a pinch of salt, 10 grams of vanilla sugar and 3 eggs. Mix with a blender into a homogeneous mass.
For the baby. K 350 gr. add 130 grams of sifted flour. cool chopped (or grated) butter, 80 gr. sugar and 1 pinch of salt. Mix. Grind into crumbs.
Place a large portion of the crumbs into a 20 cm diameter pan lined with parchment. Compact and form sides. Place the curd filling. Sprinkle the remaining crumbs on top.
Bake in an oven preheated to 180°C for 45-50 minutes.
Release from the mold.

In appearance, the royal (or it is also called royal) cheesecake does not look like an ordinary cheesecake, common to everyone, but is more reminiscent of a grated pie with a tender curd soufflé in the middle. The pie is extremely tasty, and the sweet crispy crumb on top will not leave anyone indifferent. Children especially like this type of baking, even those who are not particularly fond of cottage cheese.
Prepare the necessary products.
To make the dough, mix flour with sugar, soda and margarine. Grind everything with your hands until you get small crumbs. You can grate the margarine ahead of time, or you can just chop it. The margarine should be perfectly frozen.
Pour approximately 2/3 of the shortbread crumbs into the baking dish and smooth it out with your hands so that the cake has a bottom and small sides. You can take any baking form. My form size is 25x35. Can be baked in a frying pan or in a cake pan.
To make the inside, mix cottage cheese with sugar, eggs, salt, soda and vanilla. Stir well.
Pour the curd filling into the baking dish on top of the dough.
Sprinkle the rest of the shortbread crumbs on top of the filling.
Place the pan with the royal cheesecake in a preheated oven and bake for 35-40 minutes at 200 degrees. Then remove the pan from the oven and let the cheesecake cool.

Now for breakfast I was preparing royal cheesecake with cottage cheese, and I decided to definitely share my recipe with you. I don’t understand why this pie was dubbed a cheesecake; it doesn’t look much like it in the ordinary mind.
But it’s royally delicious! Perhaps one of my favorites, right after Charlotte. And it’s just as easy to prepare, just a little longer.
The crumbly shortbread dough and warm curd inside just melt in your mouth! In tandem with morning coffee or fragrant tea and seasonal berries, the royal cheesecake has no equal.
This is an indescribable pleasure and a beautiful start to the day.
Tsar's cheesecake pie with cottage cheese in the oven
- Flour - 300 gr
- Cottage cheese – 400 gr
- Butter - 100 g
- Sugar - 50 g for dough and 100 g for inside
- Salt - 1/2 tsp
- Soda - on the tip of a knife
- Vanilla sugar - 1 tsp
- Testicles - 3 pcs.
- Heavy cream - optional
You see, the ingredients are extremely common and found in every kitchen. There is nothing complicated in the recipe, but you need to strictly follow the proportions to get a good result. In addition, there are some aspects that I will share with you.
First, sift the required amount of flour. This is a must; sifting not only helps remove debris that sometimes gets caught in the flour, but also saturates it with oxygen and makes it more airy.
We add 50 grams of sugar to the flour, half a teaspoon of salt and soda on the tip of a knife.
And it is necessary to thoroughly mix these bulk ingredients with flour so that they are moderately distributed.
The butter must be kept in the freezer for 5-10 minutes so that it hardens perfectly. And quickly, on a large grater, before it has time to start melting, we grate it into our flour.
And then, directly with your hands, rub the butter with flour. This process will take you a couple of minutes, you need to grind thoroughly so that there are no lumps of oil left.
You should have shortbread dough. It's extremely fun and the mixture is similar to children's kinetic sand! 😊
In other words, it seems to be crumbly, not at all viscous, and does not stick to your hands. If you squeeze it in your fist, it holds its shape, but if you press a little, it crumbles again.
This is how the correctness of the test is determined.
The dough is ready! We immediately put it in the refrigerator and move on to making the inside.
Since all this is prepared extremely quickly, I advise you to immediately turn on the oven at this step and let it warm up to 180 degrees.
To make the inside, take a separate bowl, put cottage cheese, sugar, eggs there, add vanilla sugar, if you have it.
And we need to blend all this stuff with an immersion blender.
And this is where we come to aspects. Why did I indicate cream as an option in the product description? It's all about the cottage cheese, it's different for everyone. It can be extremely dry, grainy, it can be extremely wet, it drips, it can just be in briquettes (like mine), it is also quite wet.
To prevent the inside from coming out too watery, you need to pay attention to the moisture content of the cottage cheese. If the cottage cheese is wet, then we do not add cream. With them, naturally, it’s even tastier than usual, but then it will turn out very liquid.
We use cream in the recipe only if the cottage cheese is extremely dry, to give the curd mass greater plasticity. The quantity is “by eye” and it is extremely important not to overdo it with this matter.
The result should be something like this, a homogeneous curd mass, not thick, rather sluggishly fluid, like medium-thick sour cream.
When you fill your hand, you will immediately create the correct thickness and you won’t be mistaken.
And now the most exciting part - we will sculpt from our shortbread dough! This is my favorite part.
Take half the dough and scatter it onto the bottom of the mold. It’s better to take a glass one, it doesn’t need to be lubricated. Or you can take a round sponge cake pan, but then you need to line it with greased parchment paper.
And press the dough with your hands or a spoon, creating a bottom with sides. I have a mold 24 x 20 cm. Since the shortbread dough holds its shape unsurpassed, it’s all extremely simple and quick to create, we just try to distribute it moderately so that the thickness of the dough layer is approximately uniform everywhere - 0.5-0.8 cm.
Pour all our filling into the resulting sandy bottom with sides.
And now our task is to moderately distribute the rest of the dough over the surface. It’s better to create this with your hands, rubbing and sprinkling on top so that there are no lumps left.
And very carefully, without pressing too much, smooth it over the surface with a spoon. We smooth out the protruding sides.
It turned out unsurpassed! Now we put the future royal cheesecake in an oven preheated to 180 degrees for 40-50 minutes. Be guided by your own oven, maybe more or less time will be useful for you.
It took me about 45 minutes, on the middle level of the oven, I turned on the convection for the last 10 minutes so that my cottage cheese pie was perfectly browned.
During baking, you will see the “roof” of the cheesecake unevenly inflating, this will mean that it is almost ready. There don’t have to be any hills or uneven spots, you just need to wait until it levels out and you can turn it off.
This is how the cheesecake browns, becomes more fluffy, and its surface resembles sand in the desert after a long drought. 😄
We need to let it cool slightly. Royal cheesecake is simply cut with a spatula.
Look how thick the layer of curd cream is inside! It is extremely soft, sweet, the cheesecake itself is so fragrant that sleepy relatives begin to crawl behind its smell. 😄
