Okroshka is one of the Russian state dishes. Most often this is a cool summer soup.
Boiled vegetables that do not have a pronounced taste, such as carrots, potatoes, turnips, and rutabaga, are placed in okroshka. When fresh, dill, cucumbers, celery, and green onions are added to okroshka. In addition to vegetables, boiled eggs are also added to okroshka.
The indicated vegetable mixture must be seasoned with a special dressing. Most often, kvass, or a drink, plays this role. If you are not preparing lean okroshka according to one of the recipes, then you can use chicken broth as a dressing.
Lenten okroshka recipe
Ingredients (for 8 servings):
- Mustard – 200 g;
- Boiled potatoes – 6 pcs.;
- Bread kvass – 2.5 l;
- Green onion – 100 g;
- Fresh cucumber – 8 pcs.;
- Radishes – 2 bunches;
- Salt;
- Dill – 100 g.
Method for making Lenten okroshka :
Boil unspotted potatoes in previously salted water in their skins; when cool, peel off the skins, then cut into small cubes.
Cut washed fresh cucumbers and radishes in the same way.
Chop the greens, add mustard and mix well.
Mix vegetables in a saucepan, add salt and pour homemade kvass.
Place the finished okroshka in the refrigerator for 15-20 minutes, or serve with ice.
Lenten okroshka with kefir
- Green onions – 1 bunch;
- Parsley, dill, spinach;
- Low-fat drink or 1% – 0.5 l;
- Fresh cucumber – 1 pc.;
- Radish – 150 g;
- Salt;
- Apple – 2 pcs.;
- Chicken eggs – 2-3 pcs.
Method for making lean okroshka using kefir :
Wash the apples, peel the skin, cut out the core with the seeds, then cut into small cubes. Give preference to varieties that are sour, greenish in color, or slightly sweet.
Wash the radishes, remove damaged areas, finely cut into strips or cubes.
Cut the fresh cucumber in the same way - into small cubes. If you prepare Lenten okroshka with kefir in the summer using ground cucumbers, try to taste it beforehand. If the cucumber is bitter, it needs to be peeled.
Hard-boil the eggs; when cool, chop them.
Wash and chop all available greens. Dill, celery, parsley, spinach, cilantro, and lettuce are perfect for okroshka.
Chop the green onion along with the white part. Transfer to a separate bowl, add salt, and grind with salt until juice appears. Add other ingredients to the same bowl, mix everything well and pour in kefir.
Stir the okroshka, adding cool water to bring it to a suitable thickness.
Place the finished okroshka in the refrigerator for half an hour.

Manufacturing

- Cook the beets until they become completely soft, then strain the broth, add 9% vinegar, a little sugar and salt to taste. Leave to cool.
- Let's start preparing the other ingredients: peel and finely chop the cooled potatoes, chop the cucumber, grate or chop the radish (radish) with a knife. Chop green onions.
- We combine everything, salt, mix and only then cut the tomatoes into slices and add them to the rest of the vegetables. If you create this earlier, they will wrinkle and look ugly.
- If desired, add all 1 tbsp. lean mayonnaise or pour 100 ml of low-fat kefir.
- And now, when everything is ready, fill our okroshka with beetroot broth. Add it a little at a time so as not to make it too watery.
We put everything in the refrigerator and serve after half an hour. Okroshka will come out with pink broth and a tender, unusual taste. Try it!

- Take 200 g of rye bread, ideally Borodino bread or any other bread with a rich taste. We cut off the crust from it, we will only need the crumb.

- Cut 250 g of Chinese cabbage into cubes.
