Ingredients:
- 180 g soft cottage cheese
- 2 tsp edible gelatin
- 4 tbsp. sour cream
- 2 tbsp. Sahara
- jam or syrup for decoration (optional)
How to cook:
- First, soak the gelatin in water, following the directions on the package. Let it swell well.
- Meanwhile, mix cottage cheese with sugar. Beat the sweet mass until smooth in a blender bowl.
- Beat the sour cream separately, mix with cottage cheese and sugar.
- Heat the swollen gelatin until the granules are completely dissolved. This can be created in a water bath or in the microwave. After this, combine with the curd mass.
- Pour the resulting mixture into prepared molds. It’s best to use silicone ones for this, if you have them on hand. Place in the refrigerator until completely frozen.
- After about 30-40 minutes (or better after 1-2 hours), remove the mold and carefully remove the jelly from it. To do this, you just need to turn the mold over onto a flat plate and slowly remove it from the curd mass.
Curd jelly with strawberries
Ingredients:
- 350 g soft cottage cheese
- 400 grams of fresh strawberries
- 150 g 10% sour cream
- 150 ml milk
- 2 tbsp. gelatin
- 50 g honey
How to cook:
- Place cottage cheese, sour cream and honey in a blender. Beat until creamy.
- Pour the gelatin into a separate container. Pour in milk and leave until completely swollen for half an hour.
- After this, put the milk on medium heat. Heat, but do not bring to a boil. Once the gelatin granules have dissolved one hundred percent, remove the saucepan from the heat and let the mixture cool.
- Pour the milk and gelatin into the curd mixture and mix thoroughly.
- Cut several strawberries into thin slices or just halves - they will form the side of the jelly.
- Grind the remaining berries into the smallest pieces.
- Place a little cottage cheese on the bottom of each mold or bowl. Place strawberry borders around it immediately.
- Then pour pieces of strawberries into the center of the mold and fill it with curd mass.
- Place the bowls in the refrigerator for 2-3 hours so that the dessert is completely frozen.
- Before serving, transfer to a flat plate. If desired, sprinkle with grated chocolate or nuts.
Curd jelly with cocoa and cookies
Ingredients:
- 350 g cottage cheese
- 200 g crumbly cookies
- 400 ml 25% sour cream
- 100 ml milk
- 3 tbsp. l. cocoa
- 1 cup of sugar
- 20 g gelatin
How to cook:
- Pour gelatin into a saucepan. Fill with water and let stand for 10 minutes.
- Pour milk into the gelatin, put the container on gas and heat the mixture well until the gelatin granules are completely dissolved (but under no circumstances boil!).
- In one container, mix sour cream, swollen gelatin and grated cottage cheese. Divide the resulting mass into three even parts.
- Add cocoa powder to one of them, crushed cookies into crumbs to another, and leave the third as is.
- Place a chocolate layer of curd mass on the bottom of the silicone mold, a traditional layer on top of it and then with cookies (if desired, the layers can be swapped).
- Place the dessert in the refrigerator for several hours. It should thicken one hundred percent.
- Remove, turn over onto a flat plate and serve. If desired, you can sprinkle it with a thin layer of sweet powder and garnish with a mint leaf.

How to make curd jelly with berry sauce - a recipe with gelatin at home with step-by-step photos
INGREDIENTS:
- 200 g cottage cheese 0 – 9%
- 140 g natural yogurt
- 150 ml milk
- 4 tbsp. l. sugar (80 g)
- 10 g vanilla sugar
- 10 g gelatin
- 300 – 400 g raspberries or strawberries
- 1 tbsp. l. Sahara
COOKING METHOD:
1. In order to prepare a very light and low-calorie curd jelly, first of all you need to make gelatin - this powder needs to be soaked in cool milk and thrown on the table so that it swells, having previously checked the information indicated on its packaging. Ordinary gelatin should stand for 40 to 60 minutes in order to absorb the liquid and swell properly, but if the gelatin is instant, then you can not waste time and immediately move on to the next step.
2. Gelatin swollen in milk must be dissolved in a water bath, in the microwave or on the stove, heating it evenly over low heat (or at low power of the device) and stirring frequently.
Once all the gelatin granules have dissolved, it must be immediately removed from the heat so as to prevent the water from boiling under any circumstances. If undissolved lumps and specks are visible in the gelatin solution, which happens in the case of a not very high-quality thickener, then it is better to filter it through a fine sieve before adding it. 3. Now you should take natural high-quality cottage cheese and rub it through a sieve or process it with a blender. This step is inevitable even in this case, if you purchased homogeneous cottage cheese in a soft package, as in my photo, since even in such a product there are tangible grains, and we need to get a completely smooth and delicate thickness of the curd dessert.
4. Add natural yogurt, refined and vanilla sugar to the cottage cheese.
Yogurt can be any mixture and fat content - the most ordinary, Greek, drinking or thermostat. Instead of vanilla sugar, it is better to use the seeds of 1 vanilla pod or 1 tsp. vanilla extract. 5. Beat all the ingredients with a mixer, or for this purpose you can use a blender, especially in this case if you used it to grind the cottage cheese until smooth.
The result should be a homogeneous thick mass with a soft, creamy mixture. 6. At the last step, pour in the milk with the gelatin dissolved in it and beat again so that the most watery and fluid mixture comes out, which, after hardening, turns into a delicate curd jelly.
7. Pour the prepared curd mass into molds and place in the refrigerator to harden for approximately 1.5 - 2 hours.
8. I am sure that lovers of cottage cheese will like this jelly with a rich creamy taste and a slight smell of vanilla {in itself}, but those who prefer the most complex flavor compositions can be advised to pour syrup, jam, melted chocolate or caramel over the curd jelly sauce and decorate with berries, nuts, dried fruits or colorful sweet balls.
I prefer to serve this dessert with a light sweet and sour sauce made from fresh or thawed berries, which contrasts curiously and piquantly with the sweet curd mass.
To make such a sauce, the best berries are strawberries and raspberries, which need to be washed, mixed with a small amount of sugar and crushed using a blender. 9. Strawberry puree can be used immediately to serve this dessert, but since I had raspberry puree, I first rubbed it through a sieve to remove countless annoying seeds.
To serve this curd dessert beautifully and appetizingly to the table, you need to pour a little berry sauce onto a portioned plate, after which you carefully remove the curd jelly from the mold and put the curd jelly in the sauce, and, of course, you can decorate the top of the dish at your own discretion, for example, with berries or fragrant greenish leaves of fresh mint.

Once in the latest cookbook I saw a photo of a wonderful striped dessert: jelly from cottage cheese and sour cream with cocoa. Ever since I tried to create it myself, I cook this dish quite often. Apart from the fact that virtually all the healthy ingredients are used here, besides, the excellent presentation in bowls brings aesthetic pleasure.
Now I’ll tell you how to create such jelly, I’ll have a detailed step-by-step recipe and I’ll also make a video. This dish is very useful, by the way, for people over 50, because cottage cheese is a valuable source of calcium, we need gelatin, which is also in the composition, for joints, and chocolate or cocoa for the brain.
Recipe for jelly from cottage cheese and sour cream with chocolate or cocoa
I would like to see that cocoa can be exchanged for chocolate.
Most often I make it with cocoa, but I like it better with chocolate: both the color and taste are the most saturated. And this time I used it specifically.
Sour cream and gelatin make excellent friends, don’t be surprised. I also made another three-layer dessert from them, although it was a long time ago, I’ll have to remember.
You also cannot do without a blender; I hope you have one.
Well, now specifically the recipe itself.
For three to four servings of jelly you will need:
- 250-300 grams of cottage cheese, any kind of cottage cheese will do, naturally, homemade is preferable
- 1 cup sour cream of any fat content
- 1 tablespoon gelatin
- 100 ml water
- 2 spoons of sugar
- 2 tablespoons of cocoa or a bar of bitter chocolate.
Add sugar according to your own taste.
How to create jelly from cottage cheese and sour cream with gelatin
Step 1. I pour gelatin into a saucepan and fill it with cool boiled water. I leave it for half an hour until the gelatin swells.
Step 2. Melt the gelatin over low heat, it is better to do this in a water bath. But I just put it on gas and always stir it. The main thing is not to bring it to a boil, we need all the lumps to simply dissolve.
Step 3. Place cottage cheese, sour cream and sugar in a saucepan with melted gelatin, at first I just mix everything with a spoon.
Step 4. Beat the mixture with a blender until smooth, you should get a white mixture without a single crumb.
Step 5. I break the chocolate into pieces, put it in a mug, pour a couple of tablespoons of water and melt it in a water bath. If you use cocoa, you don’t need to prepare it in advance.
Step 6. I separate approximately half of the curd mass or even less into another bowl and add melted chocolate (cocoa) to one part. I stir with a spoon. If you use cocoa, it is better to use a blender.
Step 7. Spread the mixture into the bowls with a spoon, one by one: first snow-white, then chocolate.
Step 8. Place the bowl with the jelly in the refrigerator for at least an hour.
Jelly made from cottage cheese and sour cream turns out very tasty, with fascinating chocolate stains.
To create it in even stripes, you will have to freeze the jelly in parts: first put the snow-white one in the refrigerator, then pour in the brown one and put it in the refrigerator, again the snow-white one and so on, this process will take more time.
I am sure that children will like this cottage cheese dessert, so if your kids don’t like cottage cheese, there is a solution.
